Happy 4th of July to everyone out there, have a fun and safe one! Sunny and a bit humid here, chance
of a passing shower but not bad. Had to get rid of a couple of hornet nests I found outside. It seems our neighborhood is having problems with those pesky brown ants again. All of our neighbors are all fighting them, including us. Sprayed some vinegar and sprinkled ground black pepper around the kitchen, ants hate both. Did a couple of loads of laundry for Mom and just cleaned up around the house. I was going to grill out burgers and brats for everyone but Mom and Dad met with some friends for dinner. So tonight I prepared Banquet Homestyle Bakes Pizza Pasta w/ Sliced Wheat Bread.



This is one of my favorite boxed foods,Banquet Homestyle Bakes Pizza Pasta. Nothing like a quick,
easy and delicious comfort food like the Banquet Homestyle Bakes Pizza Pasta.But here’s another product I love and it’s getting harder and harder to find, I can only find it online now! Anyway it’s got two of my favorites in it pasta and pizza! The box contains 1 can of Pizza Sauce w/ Pepperoni and Sausage and 1 Pouch of Rotini Pasta. I also added a few slices of Turkey Pepperoni and sliced Portabello Mushrooms to the mix. For the preparation you can bake it or prepare it on the stove top, which is how I prepared it. Add 1 cup of water, stir and mix, and simmer and you have your dinner! This came out fantastic! Really had a good Pizza flavor to it. The Sauce with the Mushrooms, Sausage, and Pepperoni provides the great flavoring. Easily prepared and makes a hearty and delicious meal.

Along with the Pizza Pasta I had a slice of Klosterman Wheat Bread, topped with I Can’t Believe It’s Not Butter. Then for dessert later Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Stove Top:

1. Stir Together Can of Sauce and 1 Cup Hot Water In Medium Skillet.
2. Stir In Pasta Until Well Coated. Heat to Boiling.
3. Reduce Heat. Cover and Simmer About 15 Minutes, Or Until Pasta Is Tender, Stirring Occasionally.

Dinner Tonight: Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes








It makes for such a long day when you spend it at the hospital. Visited my Dad most of the afternoon at the hospital. He's doing a lot better today. He got a full nights sleep and ate a good breakfast and lunch. His speech is better and had good coloring to his face, yesterday the speech was slurred and he was pale white. He's a trooper! Mom had dinner with Dad at the hospital. So for my dinner I wanted a hot meal but I wanted one that was easy to prepare. So for dinner tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.









Nothing easier and more delicious than Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. Chicken is served! As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.








For one side I heated up a small can of Del Monte Cut green Beans. Then I also prepared some  Betty Crocker Loaded Mashed Potatoes. It comes in a microwavable cup, another heat and serve item. I also had a slice of Healthy Life Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Cumin Spiced Pork Tenderloin w/ Tri Color Roasted Potatoes and Boiled Baby Carrots

Dinner Tonight: Cumin Spiced Pork Tenderloin w/ Tri Color Roasted Potatoes and Boiled Baby Carrots








The heat and humidity returned today with a vengeance! By about 10:30 this morning it was very uncomfortable out, more of the same over the weekend. Not a lot going on, went to bank and stopped by the post office and back home to the central air! For dinner tonight,  Cumin Spiced Pork Tenderloin w/ Tri Color Roasted Potatoes and Boiled Baby Carrots.

I had came across the Cumin Spiced Pork Tenderloin recipe a while back on-line, there is several variations of it. To prepare it I’ll need; 1/2 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. Bake at 350° for 15 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which made one incredible Crust on the Pork with the inside being tender and moist!








Then for one side dish I prepared Tri Color Roasted Potatoes. I had picked up a small bag of Tri Colored Potatoes (Red, White, and Purple) while at Jungle Jim's Market the other morning with serving it with the Pork in mind. Simple dish to prepare; Preheat the oven at 400 degrees. I quartered the Potatoes, putting them in a large bowl. Added 1 tablespoon of Extra Virgin Olive Oil, McCormick Sea Salt and Black Peppercorn, Dried Rosemary, Dried Thyme, and Rubbed Sage.  Mixed good until the Potatoes were well coated and added them to a Cast Iron Skillet. Heated them on the stove top on medium high for 5 minutes. Moved the Cast Iron Skillet to the oven and Roasted until fork tender, about 20 - 30 minutes. Ready to serve!  no reason I chose the Tri Colored Potatoes, something different. Then I also boiled some Baby Carrots, seasoned them with Sea Salt and Parsley. For dessert later a Healthy Choice Dark Fudge Frozen Yogurt.

More heavy rain overnight but a sunny afternoon, more rain coming this evening though. Finally drying out tomorrow and 70 degrees by Thursday! Took Dad for a follow up check-up at his doctors. He's still having more and more problems with breathing, a lot congestion. For dinner tonight I prepared a Roasted Mesquite Marinated Pork Sirloin w/ Mashed Potatoes and Cut Green Beans.








I used a Smithfield  Mesquite  Marinated Pork Sirloin. First time I believe I used that. It wasn't a very big one, only 1.39 lbs. But more than enough for me, Mom and Dad went out to eat. The instructions said to roast it 20 minutes for every lb. at 425 degrees. Preheated the oven and put the Sirloin in a small baking pan that i sprayed with Pam Cooking Spray. I also added just a bit of McCormick Grinder Sea salt and Black Peppercorn. Then I Brushed it with JB's Fat Boy Haug Waush BBQ Sauce. Put in the oven and let it roast! Checked the temperature after about 24 minutes, wasn't quite done so roasted it an additional 3 minutes. Rechecked it and it was 148 degrees, removed it from the oven and let it rest and finish cooking. It came out beautiful and delicious, very tender. The Mesquite Marinade with the JB's BBQ Glaze worked perfect.








I also prepared some Bob Evans Mashed Potatoes, microwave a total of 6 minutes and their done and just as good as anyone’s homemade Mashed Potatoes. Then I also heated up a small can of Del Monte Cut Green Beans and had a slice of Klosterman Wheat Bread. To drink an ice-cold Diet Dr. Pepper that I had let set in the freezer for about 15 minutes. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
