One of America's Favorites - Fried Chicken

Fried Chicken - A chicken breast, wing, leg and thigh fried
Fried chicken (also referred to as Southern fried chicken for the variant in the United States) is a dish consisting of chicken pieces usually from broiler chickens which have been floured or battered and then pan-fried, deep fried, or pressure fried. The breading adds a crisp coating or crust to the exterior of the chicken. What separates fried chicken from other fried forms of chicken is that generally the chicken is cut at the joints, and the bones and skin are left intact. Crisp well-seasoned skin, rendered of excess fat, is a hallmark of well made fried chicken.

The first dish known to have been deep fried was fritters, which were popular in the European Middle Ages. However, it was the Scottish who were the first Europeans to deep fry their chicken in fat (though without seasoning). Meanwhile, a number of West African peoples had traditions of seasoned fried chicken (though battering and cooking the chicken in palm oil). Scottish frying techniques and West African seasoning techniques were combined by enslaved Africans and African-Americans in the American South.

When being cooked, fried chicken is often divided into smaller pieces. The chicken is then generally covered in a batter, often consisting of ingredients such as eggs or milk, and a thickener such as flour. This is used to create a crust on the exterior of the meat. In addition, seasoning is often added at this stage. Once the chicken is ready to be cooked, it is placed in a deep fryer, frying pan or pressure cooker (depending on the method used) and fried in lard or a type of oil.

Fried chicken has been described as being "crunchy" and "juicy", as well as "crispy". In addition, the
Paschal's fried chicken, Atlanta, Georgia
dish has also been called "spicy" and "salty". Occasionally, fried chicken is also topped with a chili like paprika, or hot sauce to give it a spicy taste. This is especially common in fast food restaurants and chains such as KFC. The dish is traditionally served with mashed potato, gravy, macaroni and cheese, coleslaw and biscuits.

The dish is renowned for being greasy, especially when coming from fast food outlets. It has even been reported that some of those who enjoy eating the food limit themselves to eating it only a certain number of times a year, to keep their fat intake reasonably low. Out of the various parts of the animal used in fried chicken, the wings generally tend to contain the most fat, with almost 40 grams (0.088 lb) of fat for every 100 grams (0.22 lb). However, the average whole fried chicken contains only around 12% fat, or 12 grams (0.026 lb) per every 100 grams (0.22 lb). As well as this, 100 grams (0.22 lb) grams of fried chicken generally contains around 240 calories of energy.

One of the main causes of the large amounts of fat which can be found in fried chicken is the oil which is used to cook it.

Generally, chickens are not fried whole; instead, the chicken is divided into its constituent pieces. The two white meat sections are the breast and the wing from the front of the chicken, while the dark meat sections are the thigh and leg or "drumstick" from the rear of the chicken. These pieces are usually subdivided into the wings, the breasts (the wishbone is often cut out first in home cooking), the legs, and the thighs. The ribs are sometimes left on the breast, but commercially they and the back are usually discarded. Chicken fingers, which are boneless pieces of chicken breast cut into long strips, are also commonly used.

To prepare the chicken pieces for frying, they may be coated in a batter of flour and liquid (and seasonings) mixed together. The batter can contain ingredients like eggs, milk, and leavening. Alternatively, they may be dredged in flour or a similar dry substance, to coat the meat and to develop a crust. Seasonings such as salt, pepper, cayenne pepper, paprika, garlic powder, onion powder, or ranch dressing mix can be mixed in with the flour. Either process may be preceded by marination or by dipping in buttermilk, the acidity of which acts as a eat tenderizer. As the pieces of chicken cook, some of the moisture that exudes from the chicken is absorbed by the coating of flour and browns along with the flour, creating a flavorful crust. According to Nathan Bailey's 1736 cookbook, Dictionarium Domesticum, for example, the chicken can be covered in a marinade that consists of the juice of two large fresh lemons, malt vinegar, bay leaves, salt, pepper, ground cloves, and green onions; it then must be settled in the marinade for three hours before being dipped in the batter that consists of all-purpose flour, white wine, three egg yolks and salt, and then slowly submerged in a deep pot of either oil, lard, or clarified butter over an open fire. It can then be topped with fresh, dried parsley dipped in the same frying oil.

Traditionally, lard is used to fry the chicken, but corn oil, peanut oil, canola oil, or vegetable oil are
Frying chicken upper wings in corn oil
also frequently used (although clarified butter may be used as well like in colonial times. The flavor of olive oil is generally considered too strong to be used for traditional fried chicken, and its low smoke point makes it unsuitable for use. There are three main techniques for frying chickens: pan frying, deep frying and broasting.

Pan frying (or shallow frying) requires a frying pan of sturdy construction and a source of fat that does not fully immerse the chicken. The chicken pieces are prepared as above, then fried. Generally the fat is heated to a temperature hot enough to seal (without browning, at this point) the outside of the chicken pieces. Once the pieces have been added to the hot fat and sealed, the temperature is reduced. There is debate as to how often to turn the chicken pieces, with one camp arguing for often turning and even browning, and the other camp pushing for letting the pieces render skin side down and only turning when absolutely necessary. Once the chicken pieces are close to being done the temperature is raised and the pieces are browned to the desired color (some cooks add small amounts of butter at this point to enhance browning). The moisture from the chicken that sticks and browns on the bottom of the pan become the fonds required to make gravy.

Deep frying requires a deep fryer or other device in which the chicken pieces can be completely submerged in hot fat. The process of deep frying is basically placing food fully in oil and then cooking it at a very high temperature. The pieces are prepared as described above. The fat is heated in the deep fryer to the desired temperature. The pieces are added to the fat and a constant temperature is maintained throughout the cooking process.

Broasting uses a pressure cooker to accelerate the process. The moisture inside the chicken becomes steam and increases the pressure in the cooker, lowering the cooking temperature needed. The steam also cooks the chicken through, but still allows the pieces to be moist and tender while maintaining a crisp coating. Fat is heated in a pressure cooker. Chicken pieces are prepared as described above and then placed in the hot fat. The lid is placed on the pressure cooker, and the chicken pieces are thus fried under pressure.

The derivative phrases "country fried" and "chicken fried" often refer to other foods prepared in the manner of fried chicken. Usually, this means a boneless, tenderized piece of meat that has been floured or battered and cooked in any of the methods described. Chicken fried steak is a common dish of that variety. Such dishes are often served with gravy.

Variants
* Barberton chicken, also known as Serbian Fried Chicken, is a version created by Serbian
Fried chicken
immigrants in Barberton, Ohio, that has been popularized throughout that state.
* Chicken Maryland, a form of pan-fried chicken, often marinated in buttermilk, served with cream gravy and native to the state of Maryland. The recipe spread beyond the United States to the haute cuisine of Auguste Escoffier and, after heavy modification, found a place in the cuisines of Britain and Australia. The dish is made when a pan of chicken pieces and fat, as for pan frying, is placed in the oven to cook, for a majority of the overall cooking time, basically "fried in the oven".
* Popcorn chicken, also known as chicken bites or other similar terms, are small morsels of boneless chicken, battered and fried, resulting in small pieces that resemble popcorn.
* Chicken and waffles, a combination platter of foods traditionally served at breakfast and dinner in one meal, common to soul food restaurants in the American South and beyond.
* Hot chicken: common in the Nashville, Tennessee area, a pan-fried variant of fried chicken coated with lard and cayenne pepper paste.
* Fried chicken sandwiches: a bun, biscuit or doughnut which is filled with fried chicken and assorted toppings, popular in Washington, D.C.

Kitchen Hint of the Day!

Love those Wings..........

Making Wings for your next get together - Serving wing sauces on the side allows your family or guests to make the choice, plus it removes one more step for you to do and it keeps the wings crispier longer. Mini Carb Cakes, Wings, and Oven-Roasted Fingerling Potato Fries

Dinner Tonight: Mini Carb Cakes, Wings, and Oven-Roasted Fingerling Potato Fries

For Breakfast this morning I Scrambled an Egg and toasted a couple of slices of Aunt Millie's Light Whole Grain Bread. Also, as usual, I had my morning cup of Bigelow Decaf Green Tea. Cold morning starting off but it was sunny and 53 degrees out for the day. After Breakfast I straightened up the pantry, checking the expiration dates on everything. Then did the same in the freezer. After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. That was about it for my day. For Dinner tonight it's an oven menu. I prepared Mini Carb Cakes, Wings, and Oven-Roasted Fingerling Potato Fries.

Trying a couple of new items tonight; that I purchased here at our local Kroger, Dockside Classics Mini Crab Cakes and Kroger Dry Rub BBQ Chicken Wings. I also purchased some Fingerling Potatoes while at Jungle Jim's Market a couple of days ago that I'm slicing up and baking.

The Dockside Classics Mini Crab Cakes come fresh in a package, 24 to a package. To prepare them preheat the oven to 400 degrees. Place the Mini Cakes on a baking sheet and bake for 18 minutes or until they hit an internal temperature of 160 degrees. I love these little Crab Cakes. Nice flavor and real easy to prepare. Served it with some Heinz Cocktail Sauce for dipping.

Then I also prepared some Kroger Dry Rub BBQ Chicken Wings. Like the Mini Crab Cakes I'll be
baking these also. After baking the Crab Cakes I turned the temperature up to 425 degrees. Used a baking sheet, lined it with foil and sprayed it with Pam Cooking Spray. I lined the Wings up on the foil and seasoned them with BBQ Dry Rub that came with the Wings. I then baked them for 17 minutes, flipping them over after 8 minutes. These turned out to be a very good Wing! Excellent BBQ Dry Rub. Served these with a side of Litehouse Light Blue Cheese Dressing.

Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large
bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area, only 1 store around here locally that sells them (Thank you Jungle Jim’s).

The Dockside Classics Mini Crab Cakes
Premium Crab Cakes – Four hand made lump crab cakes with just the right amount of seasonings and spices. Comes with our own delicious recipe of cocktail sauce.

Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:
1.) Thoroughly clean and scrub the potatoes.
2.) Cut the potatoes in half and add to a large mixing bowl.
3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

Jungle Jim's Weekend of Fire October 1 & 2, 2016

Friday, September 30, 2016 from 6pm – 10pm
Saturday, October 1, 2016 from 11am – 7pm
Sunday, October 2, 2016 from 11am – 4pm

The Oscar Event Center at Jungle Jim’s International Market
5440 Dixie Highway, Fairfield, OH 45014, 513-674-6055

Here’s one wild weekend with hot food and cool entertainment! Lots of great ‘hot’ people (hot food makers, bloggers and chiliheads) come out for samples, fun, contests, prizes, and great crowds to fill The Oscar Event Center at Jungle Jim’s on October 1st and 2nd.

For this weekend only, you can sample and purchase foods from all over the country at our Fiery Food Show! Hot and fiery or mild and meek; you choose your favorites and can buy enough to last. Hot Sauces, BBQ sauces, salsas, rubs and all sorts of spicy foods will be available – and there’s more! In The Arena of Fire, we’ll have wild and wacky contests beginning on Saturday and running hourly until the show ends on Sunday.

Now a 3-day event - that’s right, we’ve added a special Vendor Appreciation Night! - this year’s Weekend of Fire is going to be exceptionally spicy as we look back over 10 years of flavor, sweat, and smiles. Fiery food favorites from the last 10 years will be set up throughout the festival, as vendors from our already storied past come to set up shop so you can try their wickedly hot wares. From hot sauce to BBQ sauce, to rubs, marinades, and everything in between, we’re packing the Oscar Event Center with as much heat as it can handle (and then some).

Feelin’ brave? The Arena of Fire is going to be smokin’ hot as we introduce new contests, bring back a few favorites, and truly turn the heat up as we challenge those who dare to enter the arena with the spiciest creations we can come up with.

The Taste Test of Two New Items!

I've been seeing the commercials advertising the new McDonald's Mighty Wings and Arby's Smokehouse Brisket Sandwich and both looked soooo good I had to sample them! So for lunch today my Mom and Dad wanted to try them so I went out and bought Mom the Arby's Smokehouse Brisket Sandwich and Dad the McDonald's Mighty Wings, and I got a small sample of both.

Start with the McDonald's Mighty Wings; McD's got their self a winner with these wings! Nice breading and a great spicy taste. The wings were nice size and very meaty and you have a choice of a variety of dipping sauces.

Nutritional Info - McDonald's Mighty Wings - 3-piece - 3.3 oz (94g)
Calories - 290 (from Fat - 170)
Fat - 19g (Saturated Fat - 4g)
Sodium - 870mg
Carbs - 12g (Sugar - 0g)
Protein - 18g

Next the Arby's Smokehouse Brisket Sandwich; and another winner! Not only does this one look mouth-watering on TV but looks even better when buy one. The brisket is smoked for 13 hours making it nice and tender. Arby’s Smokehouse Brisket is piled high with slow-smoked beef brisket, topped with smoked Gouda cheese, crispy onions, BBQ sauce and mayo, and served on a toasted, bakery-style bun. I couldn’t believe how good it was! It was tender and went great with the BBQ sauce and Gouda which just melted in your mouth, and I love Gouda Cheese! But the bad part about it is the calories and carbs. It's high in both with 610 calories and 42 carbs. It is one good sandwich though.

Nutritional Info – Arby’s Smokehouse Brisket sandwich (203g)
Calories – 610 (from Fat – 320)
Fat – 35g (Saturated Fat – 12g)
Sodium – 1230mg
Carbs – 42g (Sugar – 7g)
Protein – 35g

So both new items I sampled were winners!

NOT JUST HOT SAUCE

Yes, the Weekend of Fire is an amazing place for hot sauce lovers, but there is much more. As you go booth to booth you will try many hot sauces (from mild to wild), but you will also find BBQ sauces, salsas, rubs, mustard, spices and even more. If the food can be hot there is a good chance you’ll find it here.

TAKE HOME YOUR FAVORITES FROM THE SHOW

You can purchase your favorite products right from the manufacturers! Each booth will have plenty of product on hand so sample all you please and be sure to take some home for later. You can find some of the best deals of the year at the booths during the show.

HOT CONTESTS FOR THE WHOLE FAMILY!

Every hour on the hour the Arena of Fire will be packed full with brave competitors and cheering spectators. The competitors will take the stage in front of the mob of on looking fans while they attempt to eat some of the hottest items from throughout the show. Twice a day, the arena will cool down to give the kids their time in the spotlight as they eat through some non-spicy foods.

BLOGGING FOR SAUCES

The Bloggers are here! The hot sauce community includes an important group of Bloggers. This integral communication element will once again complement us with their expertise and choose two important awards, The Bloggers’ Best and Bloggers’ Favorite New Item. The Blogger community will have a show booth and will be broadcasting from the show floor, so look for them and stop by to say hi. Feel free to ask questions there about anything ‘heat’ related, they have a wealth of information.
