Sunday’s Chicken Dinner Recipe – JILL'S ROAST HERITAGE CHICKEN

This week’s Sunday’s Chicken Dinner Recipe is – JILL'S ROAST HERITAGE CHICKEN. The recipe is from the Wild Idea Buffalo website, that’s right Chicken not Buffalo! Wild Idea also sells Heritage Chicken from Emmer and Co. And they have one delicious and healthy Chicken Recipe for Chicken! This is a Dutch Oven Recipe, so how easy is that to prepare! You can find this recipe and purchase the Emmer & Co. Heritage Chicken along with all the other Wild Idea Products at the Wild Idea Buffalo website. Enjoy and Make 2019 a Healthy One!  https://wildideabuffalo.com/

JILL'S ROAST HERITAGE CHICKEN
After testing a few methods of roasting a Heritage Chicken, this method was hands down the winner. Although the flavor was always very good with other methods, I was looking for the method that would keep the meat juicy, but also get it close to fall off the bone tender.

Ingredients:

1 - 3# Emmer & Co. Heritage Chicken

1 - tablespoon + 1 teaspoon salt

1 - tablespoon baking powder (a tip from Emmer & Co.)

4 - tablespoons salted butter

1 - teaspoon black pepper

1 - teaspoon thyme leaves

1 - onion, orange, apple, or other sweet or savory food to fill the cavity

4 - stalks celery, halved

1 - onion, sliced

salt and pepper

1½ - cups water

Enameled Dutch Oven

Preparation:

1 - Rinse chicken and remove neck from cavity. (Reserve neck, adding to the pot for additional flavor or give to your favorite pet!) Blot the chicken dry with paper towels.
2 - Mix salt and baking powder together and gently rub all over the chicken. Refrigerate uncovered for 4 to 24 hours.
3 - Position top oven rack in the middle of the oven and preheat to 500°.
4 - Remove chicken from the refrigerator. Melt butter and add pepper, thyme and remaining teaspoon salt. Rub seasoned butter into the chicken skin and cavity. *The butter will adhere to the cold chicken without running off.
5 - Fill the cavity of the chicken with coarse chopped onion or orange halves, or other savory or
sweet foods. This adds additional flavor and helps chicken cook more evenly.
6 - Place celery and onions in the bottom of the Dutch oven and place chicken breast side up on top of vegetables. Place the chicken in the oven and roast for 15 minutes.
7 - Add the water to the pot and cover and continue to cook at 500° for another 10 minutes.
*Optional: Before continuing with this step you can also turn your chicken over after initial roasting, so the breast is facing down. For the best browning, pile your vegetables to the center or add a few more to keep the breast out of the liquid.
8 - After 10 minutes, shut your oven off and leave the chicken in the oven for two hours. Do not open the door during this time.
9 - Remove chicken from the oven and transfer to a platter or cutting board. Chicken segments will release fairly easily or carve as desired. Season with a little salt and pepper.
10 - Strain juices from the pot and serve with the chicken or thicken to your liking for gravy.

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast this morning I poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. Big change in the weather out there. 24 degrees, snow flurries, and windy, which makes it feel a lot colder out there! Had a high of 40 degrees but it sure felt colder. Had a good nights sleep last night, no Phantom Pains! Did some house cleaning and that was about it. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies). Comfort Food tonight!

Been a while since I've prepared Sausage and Beans. So tonight it’s Beans and Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush’s Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients
except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let it simmer. Another set it and forget recipe! After I got the Beans started I fried up 1 1/2 Butterball Hardwood Smoked Turkey Sausages. I first sliced them up into bite size pieces then fried them on medium until they started to brown and removed them from the heat and put them in a small bowl and set aside.

Then using the same skillet I fried the Sausage in I fried 3 slices of Applegate No Sugar Added Uncured Bacon, actually I fried 5 slices.  Always remember when preparing Bacon to always add 2 extra slices. Because you know you’ll grab a couple of slices, it’s called the Bacon Factor or Bacon Math. First time I've tried the Applegate Bacon. I normaly use Turkey or Chicken Bacon but this looked like an excellent Bacon. It fried up perfect and very good flavor to it. Plus it's only 60 calories for 2 slices. As I said it fried up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

I love dishes that you can set and let them simmer, to me it seems to give food a much richer and deeper flavor. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages to
the Beans. Kept the heat on low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food favorite! Another plus is the cleanup, just one dutch Oven and 1 skillet to clean. Also reheated the leftover Bakehouse Multigrain Bread. For Dessert later a So Delicious Coconut Milk Ice Cream Sandwich.

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast this morning I had a another of the delicious SayersBrook Bison Ranch Filet Mignon! I love these they're so tender and fry up so easy. So I had Steak and Egg. I had Bison Filet Mignon in
the freezer, I laid it in the fridge overnight to thaw. I fried it like last time. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. And like last time it came out a perfect medium rare! It was so tender and juicy. Then I also fried up a Sunny Side Egg and toasted a couple of slices of Aunt Millie's Light Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast Combo! Also had my morning cup of Bigelow Decaf Green Tea.

We had snow showers on and off all night, none of it stuck to the ground though. Another cool day out, a high of 33 degrees and sunny out. After I had Breakfast I prepared Breakfast for Mom and Dad. I prepared Scrambled Eggs, sausage Patties, Buttery Grits, Toast, and made a pot of Coffee. Gave Mom a hand with a couple of loads of laundry. Then cleaned the house, dusted and vacuumed. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies). Comfort Food tonight!

I’ve been wanting some more of the Sausage and Beans for a while now. So tonight it’s Beans and Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast I toasted a couple of slices of Healthy Life Whole Grain Bread that I lightly buttered
with I Can't Believe Its Not Butter. Then I fried up a couple of Jennie - O Turkey Breakfast Sausage Links and prepared the morning cup of Bigelow Decaf Green Tea. After Breakfast i went up the road to the local Kroger to pick up a few items for Mom and myself. Back home, put everything away and went over to Rehab to see Dad, I was lucky to find this place, they are so nice and Dad is real happy with it! So Monday starts the therapy and building his strength back up. Back home I did some laundry and some light cleaning. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies). Comfort Food!

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast this morning i had some Simply Potatoes Hash Browns and a couple of Jennie - O
Breakfast Turkey Sausage Links. Right after Breakfast I had to take my car to the shop and have a new battery put in. Back home I grabbed my grocery list and Mom's list and I went to the Kroger up the road from us. I didn't need much but Mom needed quite a few things. Stopped by an ATM Machine on the way back. Did some light house cleaning and that was about my day. The grass is really growing and we have flowers up and buds on the trees. We are going to have to have the lawn mowed real soon already. For dinner tonight I prepared a Comfort Food Classic, Beans and Smoked Turkey Sausage (Beans and Weenies) and a baked  loaf of Kroger Multigrain Batard Bread.

While growing up I would live on Campbell’s Beans and Weenies!

Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. Myself love dishes that you can set low and let them simmer. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages and added it to the Beans. I just love all the flavors, a real comfort food favorite of mine! Another plus is the cleanup, just one dutch Oven and 1 skillet to clean. I also baked a loaf Kroger Multigrain Batard Bread. Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast I made a packet of Pioneer White Peppered Gravy, 2 Jennie - O Turkey
Breakfast sausage Links, a Toasted Slice of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Love Breakfast! So after Breakfast it was house cleaning day; dusting, vacuum, and did a load of laundry for Mom. It wasn't quite as cold this morning, 7 degrees with a wind chill of minus 3. They say we have that dreaded 4 letter word moving in tomorrow, S-N-O-W! Knowing this are like I do the grocery stores will be packed all day! Just to mention the word snow sends this are into a panic, it's so funny! They say Friday could be our big snow day though, 5-7 inches if it comes in right. But life will go on somehow in this area (LOL). For dinner tonight I prepared Beans and Smoked Turkey Sausage (Beans and Weenies). Love this dish!

While growing up I would live on Campbell’s Beans and Weenies! So tonight it’s Beans and
Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush's Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

Not only is it a delicious dish but it's a one pot meal. I used a small size Dutch Oven that I
had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed.

Then using the same skillet I fried the Sausage in I fried 3 slices of Jennie – O Turkey Bacon,
actually I fried 5 slices actually. Always remember when preparing Bacon to always add 2 extra slices. Because you know you’ll grab a couple of slices, it’s called the Bacon Factor or Bacon Math. I fried it up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

You could make this in a crock pot on low and let it go all day or by using a medium size
sauce pan and get done even quicker. I love dishes that you can set low and let them simmer. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages and added it to the Beans. I just love all the flavors, a real comfort food favorite of mine! Another plus is the cleanup, just one dutch Oven to clean. I also baked a loaf of Pillsbury French Bread. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Dinner Tonight: Turkey Chili Mac and Cheese w/ Baked Harvest Grain Bread.

Getting sort of chilly around here, it was about 33 degrees with a wind chill of 24 degrees. Cloudy all day but we've been lucky none of the snow that some places have been getting. Took Mom and Dad to their Family Doctor, Dad had to have a checkup and they wrote a prescription for a lift chair. He's been having problems getting out of a chair so this lift chair should help. For dinner tonight I prepared Turkey Chili Mac and Cheese w/ Baked Harvest Grain Bread.

Made some Turkey Chili Mac and Cheese to warm the day up a little. I used 2 Cans of Hormel Turkey Chili with Beans, Barilla Whole Grain Elbow Pasta (4 servings), Dried Cilantro, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and fresh grated Dutch Gouda Cheese. For some reason, not sure why, it's getting harder to find Whole Grain Pasta Products around this area. You can find Spaghetti, most of the time, but all other varieties are hard to find anymore.

I prepared the Elbow Pasta in a large sauce pan, according to the package directions. When the Pasta was done I drained the water and put the Pasta in a small Dutch Oven. I then added the Turkey Chili to the Pasta and mixed well. Added a 1/2 cup of the Sargento Cheese and Cilantro, mixed and put the lid on the Dutch Oven. Heated it on medium low until I was ready to serve it. Another tasty comfort food dish! The Pasta came out just right and as always the Hormel Turkey Chili with Beans was delicious. Served it in a bowl and topped it with a sprinkle of The Sargento Cheese and the fresh grated Dutch Gouda. Love using Dutch Gouda, it melts good and gives dishy a creamy taste. I also baked a loaf of Kroger Bakery Harvest Grain Bread, which goes great with Chili, Soups, and Stews. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Barilla Whole Grain Elbows

Try Barilla's Whole Grain Elbow pasta. Made with 51% whole wheat, Barilla Whole Grain had 3 times the fiber of regular pasta while still tasting great!

Elbows is named for its twisted tubular shape that can vary in size, and be either smooth or ridged. Pasta elbows originated from Northern and Central Italy, where they are traditionally used in soups. The Barilla version is ridged with an extra twist, giving it a more sophisticated shape that also helps to hold the sauce. With Barilla twisted Elbows, you can take this fun shape beyond the expected in any number of traditional Italian meals, in soups, baked pasta dishes, or tossed with vegetable or cheese sauces.

1. Bring 4-6 quarts of water to a rolling boil. Add salt to taste, if desired.
2. Add contents of package to boiling water. Stir gently.
3. Return to a boil. For authentic "al dente" pasta, boil uncovered, stirring occasionally for 7 minutes. For more tender pasta, boil an additional minute.
4. Remove from heat. Drain well and serve as desired.

Whole grain pasta is best paired with tomato or cream sauces. Pesto sauces also go well with whole grain pasta. Meat and game sauces pair well too. Green vegetables in general taste very good with whole grain pasta. Pine nuts, walnuts, chestnuts, pistachios, and dried fruit such as raisins and apples pair very well with this whole grain pasta. Cheese sauces made with Parmigiano, Grana, Asiago, Pecorino, Ricotta, Provolone, or Fontina cheese work well with whole grain pasta in terms of flavor profiles.
