Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries

Dinner Tonight: Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries

For Breakfast this morning I scrambled 1 Egg, cooked up 2 Glier's Turkey Goetta Patties, toasted 1
slice of Healthy Life Whole Grain Bread (lightly buttered), and had my morning cup of Bigelow Decaf Green Tea. After Breakfast I took Mom's car and had it washed and the inside cleaned. It's already so humid out here that it almost feels you can push the air out of the way, terrible humidity again! Here in West Chester today they have an annual Food Truck Rally but it's just too miserable out to go.You walk out here in our neighborhood all you hear are the hums of air conditioners, the Energy Company's are making a fortune. Went to Costco at 10:00 when they opened. They only have 5 electric carts for the store, which is pathetic! So if you don't get there early you won't get a cart, or at least one that is charged up (they never recharge them at that store). Anyway I was running low on my Nature Made Vitamins, picked up a Shrimp Cocktail Ring, 5 cases of canned goods for our Church Meal Center, and a couple of items Mon needed. That was about my day! For Dinner tonight its Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries.

I used the Butterball Hardwood Smoked Turkey Sausage. I cut one the Sausage Links into Bun length pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Healthy Life Whole Grain Hot Dog Bun and topped with French’s Spicy Brown Mustard.

To go with the Sausage Dog I baked up some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fries! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. I had a Snapple Diet Peach to drink. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight:Shrimp and Smoked Turkey Sausage Gumbo w/ Baked Rustic French Bread

For Breakfast I had Gravy and Toast. I used Pioneer Peppered White Gravy and a couple of toasted
slices of Healthy Life Whole Grain Bread. Went out to get the morning papers this morning and it was a bit nippy, about 19 degrees with cold wind. The day was sunny but cold. Can't complain though we've had a very mild Winter so far. Helped Mom make Breakfast for her and Dad. After that it was house cleaning, vacuum, dusted, and cleaned the stove and oven also. Had to repair a shelf in the pantry that was loose. For dinner tonight I prepared a Shrimp and Smoked Turkey Sausage Gumbo.

I have a lot of favorite meals but this one is near or at the top, love the combinations of Gumbo,  Shrimp, and Smoked Turkey Sausage. To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp (that I precooked before adding to the Gumbo), and Frank’s Red Hot Sauce.

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. Very easy to prepare, takes
about 25-30 minutes. I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added Extra Large Shrimp and simmered another 3-6 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a loaf of Pillsbury French Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Shrimp and Smoked Turkey Sausage Jambalaya

Dinner Tonight: Shrimp and Smoked Turkey Sausage Jambalaya

Beautiful day out today, cold but mostly sunny. Had an early light Breakfast of a couple of Eggo's. Then it was off to Walmart and then on to Kroger to finish up, and stopped by the Bank. The stores were quite busy to be that early. Back home then  worked out and then helped Mom do a few chores around the house. For dinner tonight it's a Shrimp and Smoked Turkey Sausage Jambalaya with a Baked Sour Dough Mini Boule.

I used Zatarain’s New Orleans Style Jambalaya Mix (Reduced Sodium) for my base for the Jambalaya. I use Zatarain’s Products whenever I can, love the flavor and seasoning of all their products. To prepare it I just followed the easy instructions on the box. Mixed 2 1/2 cups of Water and 2 tablespoons of Extra Virgin Olive Oil, and brought it to a boil. Added the Zatarain’s Jambalaya Mix and my Butterball Hardwood Smoked Turkey Sausage, I had sliced the Sausage into smaller pieces before adding. Returned it to a boil, and then reduced the heat to low. Covered and simmered for about 25 minutes till most of the moisture had been absorbed. With 10 minutes left I added my Jumbo Shrimp, till fully cooked and turned pink. Removed it from the heat and let it rest for about 5 minutes before I served it. The Smoked Turkey Sausage and Jumbo Shrimp made a fantastic pairing with the Jambalaya Mix! I added a couple of shakes of Frank’s Red Hot Sauce to the mix also, nothing like a little heat to liven things up! This makes one delicious dish.

Then while at Kroger I picked up a Sour Dough Mini Boule that I baked. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

(Leftovers) Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears

Dinner Tonight: (Leftovers) Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears

Beautiful morning out today. Started the day off by making Pancakes and Turkey Bacon! I used the Bisquick Heart Smart. It’s a Low Fat and 0 Cholesterol pancake mix. There are 190 calories and 32 net carbs per serving, 3 Pancakes per serving. I used Egg Beater’s instead of 1 Egg to prepare the mix with. To top the Pancakes I used Maple Grove Farms Sugar Free Maple Flavor Syrup. Then I also had some Jennie – O Turkey Bacon. Spent most of the afternoon with Dad at the rehab center, today is his Birthday. He turned 93 today. We had a Birthday Cake and 11 people showed up, he was really surprised. Hopefully he’ll be home soon. Thank goodness for leftovers! Because I really didn’t feel like cooking and besides that the dinner last night was fantastic! So tonight I warmed up the Leftover Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears.

To make last night’s dinner and turn it into tonight’s dinner I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base. First time used this with the Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet, Jalapeno Slices, sliced Butterball Hardwood Smoked Turkey Sausage, and a few shakes of the Frank’s Red Hot Sauce for 15 minutes. Then I added Extra Large Shrimp and simmered another 10 minutes. Said and done the Gumbo is ready to serve and It turned out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one nice hearty and delicious dinner.

I also made some Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Beans and Smoked Turkey Sausage (Beans and Weenies) w/ Cheddar Corn Bread Muffins

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies) w/ Cheddar Corn Bread Muffins

Downright miserable out again, hot and humid. Late afternoon/evening is our community Picnic and Swim Party, a bit too humid for me to go though. For dinner tonight a classic, (Beans and Weenies) Beans and Smoked Turkey Sausage w/ Cheddar Corn Bread Muffins.

Growing up I always loved those little cans of of Campbell’s Beans and Weenies, that and Spaghetti-O’s! Well I wanted some Beans and Weenies but I jazzed it up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), a handful of Oscar Mayer Turkey Bacon Bits, 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush’s Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium-sized Red Onion (Chopped), 1/2  teaspoon Ground Cinnamon, 1 tablespoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, a couple of shakes (or more) of Frank’s Red Hot Sauce, and a 3/4 cup of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

To prepare everything, it can’t be much easier. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I love dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausage and added it to the Beans. I then increased the heat to medium for about another hour and then reduced it back down to medium low until it was time for dinner.

Then to go with my "Beans and Weenies" I baked some Cheddar Corn Bread Muffins. First time I made these and they are delicious! The recipe comes from the Taste of Home web site. I lightened the recipe up by using 2% Milk, Sargento reduced Fat Shredded Cheddar Cheese, and Fat Free Greek Yogurt. The original recipe also had it as a bread that you cut into squares but I baked as Muffins instead. Fantastic side to the "Beans and Weenies"! I left the full recipe along with a link to the original recipe at the end of the post. A good Hearty Meal tonight. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Shrimp and Smoked Turkey Sausage Jambalaya w/ Baked Sour Dough Bread

Dinner Tonight: Shrimp and Smoked Turkey Sausage Jambalaya w/ Baked Sour Dough Bread

It's amazing how you take things for granted until it's taken away from you. Early this morning there was a water main leak here in the park. We had no water from around 7:00 this morning till about 3:00 this afternoon. Which wasn't a long time but if you weren't prepared or warned about it, it was forever! Had an eye appointment, no changes which is a good thing. For dinner  one hearty dish, Shrimp and Smoked Turkey Sausage Jambalaya w/ Baked Sour Dough Bread! I'll be making sure there's extra boxes of this in the pantry, everyone loved it.

I used Zatarain's New Orleans Style Jambalaya Mix (Reduced Sodium) for my base for the Jambalaya. I use Zatarain's Products whenever I can, love the flavor and seasoning of all their products. Smoked Turkey Sausage w/ Italian Pasta Salad

Dinner tonight: Smoked Turkey Sausage w/ Italian Pasta Salad

Oh as they say the "The Dog Days of Summer" are here! Rolled out to get the paper about 6:30 this morning and it was 73 degrees and humid! Along with the heat this time of year comes the Cicadas. I had read this year for this part of Ohio we are going to be invaded! They were at full force and really loud this morning.  For my dinner I prepared a Turkey Sausage (On Bun) w/ Italian Pasta Salad.

I used my favorite Smoked Turkey Sausage Butterball Hardwood Smoked Turkey Sausage. The Butterball Hardwood Smoked Turkey Sausage has an incredible taste! I'll put this up against any of the rest. I've grilled it many times but this time I prepared it in a skillet. I just cooked it on medium heat about 12 minutes, turning it quite often. I served it on a Healthy Life Whole Grain Hot Dog Bun and topped with some French's Spicy Brown Mustard, a perfect topping for any Sausage or Frank.

For a side dish I kept it light by making an Italian Pasta Salad. A Light and tasty dish that included Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, fresh Shredded Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, and McCormick Grinder Italian Seasoning. Boiled the Pasta according to the box and add all the ingredients and refrigerated. Too Good! For dessert later tonight a bowl of Breyer's Carb Smart Ice Cream topped with a bit of Smucker's Sugar Free Hot Fudge Topping.
