Cast Iron Skillets...
I love my Cast Iron Skillet! You can prepare a dish on the stove in it and move it right into the oven! Versatile and Easy to clean. Below are just a few reasons to have one.
* You can use a cast iron skillet in the oven, at any temperature. Most cookware comes with heat warnings. Even most stainless steel cookware isn’t supposed to go over 450/500 degrees in an oven. Cast iron? comes in handy for making corn bread, frittatas, and flat bread.
* Cast iron is easy to clean up. Not only does food easily lift off from cast iron cookware, soap is not needed or recommended, since it erodes the seasoning. The soap will break up the tiny oil molecules that are embedded on the pan that help make it nonstick. If you need to scrub your cast iron pan, use salt!
* Boost your iron intake from eating food cooked in cast iron cookware. This vital mineral is crucial for maintaining energy levels, and it helps strengthen immune systems.
* Because cast iron cookware is made from the same base material that builds engine blocks, they are guaranteed to last a very, very long time. In fact, the more you cook with it, the better (and more seasoned) it gets.
* Cooks looking to replace non-stick cookware often investigate stainless steel. However, a high-end, 12-inch stainless skillet runs well over $100, while a similar-sized cast iron one costs less than $30.

Prime Rib w/ Savory Herb Potatoes, Cut Green Beans, and Whole Baby Carrots
Dinner Tonight: Prime Rib w/ Savory Herb Potatoes, Cut Green Beans, and Whole Baby Carrots

For Breakfast on this Christmas Morning I toasted a Healthy Life Whole Grain English Muffin and added a few slices of Boar's Head Sweet Slice Ham, for a light Breakfast Sandwich. After we were done with Breakfast we opened gifts and afterwards mad a few phone calls to friends and relatives wishing them a Merry Christmas! For our Christmas Dinner we are having Prime Rib w/ Savory Herb Potatoes, Cut Green Beans, and Whole Baby Carrots.
We couldn't decide on what to have for Christmas Dinner. While I was at Meijer a few days ago I seen they had some small Prime Ribs so I grabbed one of those. I like Prime Rib but it's so overpriced. This was one that weighed just over 3 ibs., 3.11 lbs. Just the right size for myself and Mom and Dad. As most Prime Rib Roasts it was very easy to prepare.
I preheated the oven on 325 degrees. I took a small roaster pan and sprayed it Pam Cooking Spray and I rubbed a light coat of Extra light Olive Oil on it. Once the oven was heated I put the Roast in the pan and baked it for about 49 minutes. I took the pan out and checked the internal temperature with my meat thermometer and it was right where we wanted at 121 degrees.
I let the Roast sit for 10 minutes before slicing it. The Roast was cooked to a perfect Medium Rare. The Roast came moist and juicy! Cutting in to it was very tender and has an excellent taste. We'll definitely purchase this again from Meijer!
Mom and Dad love multiple side dishes with their meals so i gave them a good variety. For one side I prepared some Little Potato Company Savory Herb Potatoes. Then I prepared a can of Del Monte Cut Green Beans. Then I opened up a can of Kroger Brand Whole Baby Carrots. I also baked some of Mom and Dad's favorite Rolls, Hawaiian Rolls. For my Dessert later a Breyer's 100 Calorie Cup of Chocolate Ice Cream.
Merry Christmas and Happy New Year everyone!

Healthy Harvest Turkey Lasagna and Baked Bread Sticks
Dinner Tonight: Healthy Harvest Turkey Lasagna and Baked Bread Sticks
For Breakfast this morning I fried up a couple of Jennie – O Turkey Breakfast Sausage Links, some
Simply Potatoes Shredded Hash Browns, toasted a Healthy Life Whole Grain English Muffin, and had a cup of Bigelow Decaf Green Tea. Healthy way to start a Christmas Eve Day! It was a rainy night and early morning here in West Chester. Only had a low of 37 degrees and it was about 45 degrees for a high, cloudy and a light shower. Not a lot going on today. Made quite a few phone calls, wishing friends and family Merry Christmas! For Dinner tonight I prepared a family favorite, Healthy Harvest Turkey Lasagna and Baked Bread Sticks. Merry Christmas Everyone!
Just not in the mood for Ham or Turkey and Lasagna sure sounded good! As usual I’m using Jennie – O Extra Lean Ground Turkey Breast, which I had in the freezer so I sat it in the fridge to thaw
overnight. I use the recipe that’s on back of the Ronzoni Healthy Harvest Lasagna Box as a guide. Making changes to some of the ingredients to reduce calories and carbs. I used the following; 1lb Jennie – O Extra Lean Ground Turkey Breast, 3 cups (26 oz jar) Ragu Pasta Sauce, Sliced Mushrooms (optional), 1 cup Water, 1 3/4 cups (15 oz container) Kroger Part Skim Milk Ricotta Cheese, 2 cups (8 oz) or more Sargento Reduced Fat Shredded Mozzarella Cheese (divided), 1/2 cup grated Kraft Parmesan Cheese, 1/2 cup chopped fresh Parsley, 1/2 tsp Sea Salt, 1/4 tsp ground Black Pepper, and 6 pieces Ronzoni Healthy Harvest Lasagna, uncooked. Cutting calories and carbs by using Jennie – O Extra Lean Ground Turkey Breast and the Kroger Part Skim Milk Ricotta Cheese, Ronzoni Healthy Harvest Pasta, and Sargento Reduced Fat Shredded Cheese.
Then to prepare it, Heat oven to 350°F. In a skillet, over medium-high heat, brown Turkey; season to
taste and drain of excess fat. Add the Pasta Sauce, Mushrooms, and Water; simmer about 10 minutes. Pour about 1 cup Sauce on bottom of a 13×9 foil pan. Arrange 3 UNCOOKED pasta pieces lengthwise over sauce; cover with 1 cup sauce. Spread one-half Ricotta Cheese and Mozzarella Cheese over Sauce. Repeat layers of RONZONI HEALTHY HARVEST LASAGNA, Sauce and Ricotta Cheese, Mozzarella. Top with layer of RONZONI HEALTHY HARVEST LASAGNA and remaining Sauce; sprinkle with Mozzarella Cheese. Cover with foil. Bake 45 minutes. Remove foil; bake additional 10 minutes or until hot and bubbly. Let stand 10 minutes before cutting.
The Lasagna comes out perfect, love this recipe! Everything tasted so fresh and as usual the Jennie -
O Turkey was the star bringing everything together to make one delicious dish! Plenty of leftovers for another meal or to freeze for later use. I’ve frozen this several times and it always comes out great after reheating. I left the original recipe at the bottom of the post. With just a few changes I saved on calories, carbs, and fat grams. The original recipe is at the end of the post. I also baked a loaf of Pillsbury Bread Sticks. I really don’t need Bread to go with Lasagna but Mom and Dad wanted some. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.
