Lunch Meat of the Week - Prosciutto

Prosciutto

Prosciutto (/prəˈʃuːtoʊ/, Italian: [proʃˈʃutto]) is an Italian dry-cured ham that is usually thinly sliced and served uncooked; this style is called prosciutto crudo in Italian (or simply crudo) and is distinguished from cooked ham, prosciutto cotto.

A number of regions have their own variations of prosciutto, each with degrees of protected status, but the most prized are the Prosciutto di Parma PDO from the Emilia-Romagna region and the Prosciutto di San Daniele PDO from the Friuli-Venezia Giulia region. Another notable type is Speck Alto Adige PGI from the South Tyrol region.

The names prosciutto and prosciutto crudo are generic, and not protected designations, and may name or describe a variety of hams more or less similar to Italian prosciutto crudo or other dry-cured hams worldwide.

Prosciutto is made from either a pig's or a wild boar's hind leg or thigh, and the base term prosciutto specifically refers to this product. Prosciutto may also be made using the hind leg of other animals, in which case the name of the animal is included in the name of the product, for example "prosciutto cotto d'agnello" ("lamb prosciutto"). The process of making prosciutto can take from nine months to
Prosciutto di Parma
two years, depending on the size of the ham.

A writer on Italian food, Bill Buford, describes talking to an old Italian butcher who says:

When I was young, there was one kind of prosciutto. It was made in the winter, by hand, and aged for two years. It was sweet when you smelled it. A profound perfume. Unmistakable. To age a prosciutto is a subtle business. If it's too warm, the aging process never begins. The meat spoils. If it's too dry, the meat is ruined. It needs to be damp but cool. The summer is too hot. In the winter—that's when you make salumi. Your prosciutto. Your soppressata. Your sausages.

Today, the ham is first cleaned, salted, and left for about two months. During this time, the ham is pressed, gradually and carefully so as to avoid breaking the bone, to drain all blood left in the meat. Next, it is washed several times to remove the salt, and is hung in a dark, well-ventilated environment. The surrounding air is important to the final quality of the ham; the best results are obtained in a cold climate. The ham is then left until dry. The time this takes varies, depending on the local climate and size of the ham. When the ham is completely dry, it is hung to air, either at room temperature or in a controlled environment, for up to 18 months.

Prosciutto is sometimes cured with nitrites (either sodium or potassium), which are generally used in other hams to produce the desired rosy color and unique flavor, but only sea salt is used in Protected Designation of Origin hams. Such rosy pigmentation is produced by a direct chemical reaction of nitric oxide with myoglobin to form nitrosomyoglobin, followed by concentration of the pigments due to drying. Bacteria convert the added nitrite or nitrate to nitric oxide.

Sliced prosciutto crudo in Italian cuisine is often served as an antipasto, wrapped around grissini, or
Antipasto with Prosciutto
accompanied with melon. It is also eaten as accompaniment to cooked spring vegetables, such as asparagus or peas. It may be included in a simple pasta sauce made with cream, or a Tuscan dish of tagliatelle and vegetables. It is used in stuffings for other meats, such as veal, as a wrap around veal or steak, in a filled bread, or as a pizza topping.

Saltimbocca is an Italian veal dish, where escalopes of veal are topped with a sage leaf before being wrapped in prosciutto and then pan-fried. Prosciutto is often served in sandwiches and panini, sometimes in a variation on the Caprese salad, with basil, tomato and fresh mozzarella. A basic sandwich served in some European cafés and bars consists of prosciutto in a croissant.

The Benefits of Wild Boar Meat Surpass Beef, Pork and Even Chicken!

For centuries, wild boar meat has been a delicacy enjoyed by the aristocracy of Europe. It is increasingly sought after by chefs and consumers looking for a unique flavor.

Sayersbrook Wild Boar contains
No added hormones
No antibiotics

from natural foraging animals

Wild boar meat has a strong, nutty, rich flavor that is unique and often not comparable to other meats. The meat is not gamey tasting, it's meat is darker in color with a distinct, with a flavorful taste. It is not prone to illness or disease.

What's the Difference Between Wild Boar and Pig?

It comes down to diet and exercise. Farm raised pigs are fed a homogeneous diet compared to that of wild boars which will give a more complex, deeper flavor. Wild boars are far more physically active than their farm raised counterparts which will alter their muscle/fat composition. Wild Boar are not kept in enclosures as are pigs. They are free to roam and forage for their food.

Although you may expect it to resemble pork, wild boar is a dark red meat. Unlike its domestic cousin, wild boar is also very lean and low in cholesterol. Wild boar is an excellent alternative to beef and pork for those who want food that is good for them without sacrificing taste and quality.

Wild Boar high in protein. They are a good source of monounsaturated fats and zinc.

1 cup chopped onion
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 tablespoon paprika
1 teaspoon salt
1/2teaspoon black pepper
1/4teaspoon dried thyme
1 (28-ounce) can whole tomatoes, undrained, coarsely chopped
3 carrots, peeled and cut into 1-1/2-inch chunks
1 green or red pepper chopped
2 celery stalks (cut off leaves)
3 small potatoes diced
1 bay leaf
1 (8-ounce) container sour cream
parsley to taste
handful of small noodles or rice uncooked
Directions

1 - In a small bowl, combine flour, paprika, salt, pepper, and thyme; mix well. Add to meat mixture, tossing to coat well.
2 - Combine wild boar mixture, onion, and garlic; mix well.
3 - In a 5-quart pot add some oil (corn or canola) and heat,
4 - Add the meat mixture and quickly sauté .
5 - Add tomatoes with liquid, carrots, potatoes, celery, green pepper, parsley and bay leaf.
6 - Add water just until meat and vegetables are covered. If you feel you have added too much water, just simmer uncovered for a little longer so that excess water evaporates.
7 - Cover and cook on MEDIUM HIGH setting until boiling. Lower temperature to a simmer for 2-1/2 hours, or until the meat is fork-tender. Remove and discard bay leaf. Stir in sour cream. During the last 10 minutes add some noodles or rice uncooked to the pot. If it’s too thick add a little water.

Wild Boar Cooking Tips

FOR MOST TENDER CUTS USE DRY HEAT

FOR MEDIUM TENDER CUTS USE A COMBINATION OF DRY AND MOIST HEAT

FOR LESS TENDER CUTS USE MOIST HEAT

USE LOW COOKING TEMPERATURES

COOK SLOWLY

DO NOT COOK PAST MEDIUM DONE STAGE

COOK LESS TENDER CUTS UNTIL FORK GOES IN EASILY

Do not cook or thaw in a microwave because this will toughen the meat. Slowly thaw meat the day before and marinate overnight for best results. Pineapple juice or wine is an effective meat tenderizer.

You can substitute wild boar meat for recipes calling for game meat.

Sayersbrook bison and game meats are all natural, with not additives of any kind. NO added hormones, NO Antibiotics, NO Steroids.

It's so easy to order. We deliver right to your door. Shipping is free for orders over $249.

Meanwhile back on the SayersBrook Bison Ranch....Bison cooking 101

This week from the SayersBrook Bison Ranch website (http://www.sayersbrook.com/) its Bison cooking 101. It's all about the Bison this week with this informative article on preparing Bison! The do's and dont's of roasting, grilling, and cooking your Bison. And speaking of Bison, check out the selection of Bison cuts of meat on the SayersBrook site (http://www.sayersbrook.com/). Bison cooking 101
Bison Cooking and Handling Tips

For best results:You will find that you can interchange buffalo meat for many of your favorite beef recipes, just by following a few simple instructions. The taste is many times indistinguishable from beef, although bison has a richer, fuller flavor. Buffalo is not wild or "gamy" tasting. The main thing to remember when cooking buffalo meat is that because there is less fat content, it will cook faster. Because fat is in insulator, heat must first penetrate this insulation before the cooking process can begin. Marbling, which is fat within the muscle, slows down the cooking process. Because buffalo meat lacks marbling, the meat will cook more rapidly, so extra care must be taken to avoid drying it out through overcooking.

Buffalo/Bison steaks and burgers are at their very best when done rare or medium (with a pink center).

If you oven broil your buffalo/bison, try moving the oven rack a notch lower than you normally would and check on their progress a few minutes sooner than you normally would. You'll be rewarded with a juicier piece of meat.

If you grill your buffalo/bison, we suggest doing so over medium hot coals at a distance of from four to six inches. Again, a little extra care will reward you with a much juicer meal.

When roasting buffalo/bison, we suggest that you follow the creed "lower and slower." Lower your oven temperature to cook the meat more slowly. It will shrink less, thereby retaining more natural juice. To be sure that it is done to your liking, we suggest using a meat thermometer - it's an inexpensive reusable insurance policy.

The rich red color of the buffalo/bison meat is indicative of the higher levels of iron and the lack of marbling (fat). Both of these are GOOD things and are probably among the reasons that you purchased buffalo/bison meat in the first place.

Ground Bison Meat

Most times a recipe using ground meat cautions you to drain it as part of the preparation instructions. This is because of the fat content of the meat. In addition to being unhealthy, what you are draining is uneconomical. You're pouring money down the drain, literally. With Ground Bison Meat from SayersBrook Bison Ranch, you won't have this problem. In fact, we recommend that you spray your fry pan or skillet with a non-stick spray. It's the good old American custom of getting what you pay for. Conveniently packaged in 1 lb units, Ground Bison Meat can be used in any recipe calling for beef. Now, you can make chili, lasagna, or your favorite casserole with a red meat that is over 90% lean. One serving (1/3 lb) of ground bison contains 3.6 g fat, 216 calories, 0 g carbs and 25 g of protein. 4 lbs Ground Bison Meat in 4 (1 lb) packages.
The Secret weapon in your fight against fat. 4 lbs Ground Bison Meat in 4 (1 lb) packages.

2 pounds wild boar stewing meat, cut into 1-inch pieces
1 cup chopped onion
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 tablespoon paprika
1 teaspoon salt
1/2teaspoon black pepper
1/4teaspoon dried thyme
1 (28-ounce) can whole tomatoes, undrained, coarsely chopped
3 carrots, peeled and cut into 1-1/2-inch chunks
1 green or red pepper chopped
2 celery stalks (cut off leaves)
3 small potatoes diced
1 bay leaf
1 (8-ounce) container sour cream
parsley to taste
handful of small noodles or rice uncooked
Directions

In a small bowl, combine flour, paprika, salt, pepper, and thyme; mix well. Add to meat mixture, tossing to coat well.
Combine wild boar mixture, onion, and garlic; mix well.
In a 5-quart pot add some oil (corn or canola) and heat,
Add the meat mixture and quickly sauté .
Add tomatoes with liquid, carrots, potatoes, celery, green pepper, parsley and bay leaf.
Add water just until meat and vegetables are covered. If you feel you have added too much water, just simmer uncovered for a little longer so that excess water evaporates.
Cover and cook on MEDIUM HIGH setting until boiling.

Slowly thaw meat the day
before and marinate overnight for best results. Pineapple juice or wine is an effective meat tenderizer.

You can substitute wild boar meat for recipes calling for game meat.

Wild Ground Boar Cheese Burger w/ Baked Fries

Dinner Tonight: Wild Ground Boar Cheese Burger w/ Baked Fries

In the low 50's this morning, with a passing shower! For Breakfast I heated up the leftover Diced
Potato and Ham Skillet made of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham. After Breakfast cleaned the house, running the vacuum and dusting. Then I had to repot a couple of house plants we have. We had rain on and off and a high in the mid 60's. Got the cart out in between showers for a short ride. Not much else going on today. For Dinner a new one, Ground Wild Boar! I prepared a Wild Ground Boar Cheese Burger w/ Baked Fries.

Well I finally got around to trying the SayersBrook Bison Ranch Wild Ground Boar! Rummaging around the freezer last night I seen the package of Ground Boar and knew there is Wednesday's Dinner! I let the Boar thaw overnight in the fridge.

To prepare it I'll be frying it. I used a Cast Iron Skillet that I lightly sprayed with Pam Cooking Spray and added a tablespoon of Light Olive Oil. Preheated it on medium low heat. The Ground Boar comes in a 1 lb. package. So I made  3 - 1/3 lb patties out of it. Mom and Dad wouldn't try it so I packaged up the other 2 Patties. To start I formed my Patties then seasoned the Burger with McCormick Grinder Sea Salt and Peppercorn Medley, Dried Thyme, a pinch of Dried Sage, and A-1 Hearty and Thick Sauce (for a topping).

Like Buffalo, you want to cook Wild Boar nice and slow and cooked not over medium. I'm cooking
mine to medium rare. So with Burger made and seasoned I added it to the preheated skillet. After 4 minutes I flipped the Burger and continued cooking 4 1/2 minutes. With a minute of cooking time left I added a slice of Kraft Sharp Cheddar. I served the Burger on a Aunt Millie's Reduced Calorie Whole Grain Bun. I also topped it with the A-1 Sauce. The Burger came out a perfect medium rare! As the Wild Boar description said it tasted slightly sweet and nutty. Moist and juicy, just an overall excellent Burger! The Cheese worked well with it.

To go with my Burger I baked some Alexia Organic Yukon Select Fries. I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

SayersBrook Bison Ranch -  Ground Boar

We now offer our wild boar ground meat in 1 lb. packages. Taste this delicious and healthy meat. It's
the wild version of "the other white meat", replacing traditional ground pork with ground wild boar can greatly increase the flavor of almost any dish. Wild Boar meat tastes slightly sweet and nutty due to its diet of foraged nuts and other foods from the forest. It is a hardy animal not prone to illness. Our wild boar is all natural with no added hormones, no antibitiotcs, no steroids, and no additives of any kind.
