Meanwhile back at the SayersBrook Bison Ranch - Elk Sirloin Roast
This week from the SayersBrook Bison Ranch website its a Elk Sirloin Roast. Healthy and Lean Elk Meat! If you've never tried Elk you are in for a treat. I've had several of the Elk Burgers, and its one of the best Burgers I've ever had! Elk is just one of items that you can purchase at the SayersBrook site. You can purchase items like; Bison, Ostrich, Wild Boar, Heat n' Eat, Hams and more! Purchase one of the Roasts in time for Christmas! Enjoy and Eat Healthy! http://www.sayersbrook.com/
Elk Sirloin tip roast. Approximately 4 lbs.
If you've had a successful hunt and your freezer is stuffed full with a few hundred pounds of steaks, roasts, and ground elk. you're in luck, Congratulations! But for those of us who haven't gone hunting we can still enjoy the taste of this healthy, lean meat. Sayersbrook has elk meat with NO hormones, NO antibiotics, NO steroids or any other chemicals added. Just all natural, delicious cuts of lean elk meat.
How to cook an elk roast:
Use a marinade and place all ingredients in a ziplock bag with the roast and marinate for a couple of hours or over night. Remove roast from refrigerator one hour before serving to bring meat to room temperature for more even cooking.
You can use a Marinade (below):
½ cup olive oil
Juice of one lemon
¼ cup low sodium soy sauce
¼ cup Teriyaki sauce
2 T. Worcestershire sauce
2 t. fresh or crushed garlic
Lemon pepper
Salt to taste
Preheat oven to 325°, place roast in pan and place on upper oven rack. Cook for 25 minutes per lb for medium or approximately 50 to 60 minutes. Elk should be cooked to no more than 130-140 degrees Fahrenheit of internal temperature. At 150 degrees the meat starts to dry out because of its lack of fat. The use of a meat thermometer is the best way to determine when the meat has reached the desired degree of doneness.
An elk roast is fine without a marinade as well, just sprinkle with salt and pepper and some garlic and put in the oven.

Now on to the recipe for SPICY WILD BOAR WITH POTATOES AND STINKY CHEESE SAUCE. Enjoy and Eat Healthy! http://www.sayersbrook.com/
SPICY WILD BOAR WITH POTATOES AND STINKY CHEESE SAUCE
This Recipe for Wild Boar Steaks, Potatoes and Cheese is Robust. The Curry Makes it Spicy, the Stinky Cheese Gives Major Flavor. This is a Recipe for the Gourmet. This is a quick recipe if you have all ingredients on hand.
Ingredients
For the dauphinoise sauce
4 tbs of butter
1 tbsp oil
4 potatoes, peeled and sliced
12 oz hard stinky cheese, grated
salt and freshly ground black pepper
For the wild boar
a little oil for cooking
4 wild boar steaks (http://www.sayersbrook.com/wild-boar/wild-boar-steaks/)
2 tsp curry powder
salt and freshly ground black pepper
Preparation
1. Preheat the oven to 400°F Heat an ovenproof pan with the butter and oil.
2. Add the potato slices and sauté for a few minutes until the potatoes are golden brown on both sides.
3. Sprinkle the cheese, salt and pepper over the potatoes and place the pan in the oven for 10-15 minutes.
4. Sprinkle the wild boar steaks with curry powder, salt and pepper.
5. Sear in a hot pan for 3-4 minutes on each side, or until cooked to your liking.
6. Allow to rest for five minutes before slicing diagonally.
7. Turn out the potatoes onto a plate and serve with the slices of wild boar.
if you don’t like the spicy part of this dish, leave out the curry powder and substitute with garlic salt, or go easier on the curry. The curry and the cheese give it a vibrant flavor that is truly unique. If you don’t like stinky cheese then use any non stinky cheese.
This recipe serves 4 people but you can add wild boar steaks and an extra potato for each extra person. It’s a pretty quick recipe if you have all the ingredients on hand.

Elk Strip Loin 8 oz. each
Elk strip loin steaks. (2) 8 oz. package. 1lb total The elk or wapiti as they are called in North
America is one of the largest species of deer in the world and one of the largest land mammals in North America and Eastern Asia. Only the moose rivals it in size. Elk feed on grasses, plants, leaves and bark. The meat is leaner and higher in protein than either beef or chicken. Elk meat is one of the tastiest and healthiest all-natural alternatives to traditional meats. Elk meat is low in fat, cholesterol and calories. Elk meat is a one of those rare foods that is very healthy for you and still tastes great! It's a dark red, dense meat. Very tender and needs no marinating. The taste is similar to beef but with more flavor. It does not taste gamey. Substitute elk meat in any recipe calling for beef. Do not over cook elk meat. Because of it's low fat content, elk cooks quickly and if overdone it will be dry and tough. Burgers, steaks and roasts should be pink in the center.

Bison cooking 101
Bison Cooking and Handling Tips
For best results:You will find that you can interchange buffalo meat for many of your favorite beef recipes, just by following a few simple instructions. The taste is many times indistinguishable from beef, although bison has a richer, fuller flavor. Buffalo is not wild or "gamy" tasting. The main thing to remember when cooking buffalo meat is that because there is less fat content, it will cook faster. Because fat is in insulator, heat must first penetrate this insulation before the cooking process can begin. Marbling, which is fat within the muscle, slows down the cooking process. Because buffalo meat lacks marbling, the meat will cook more rapidly, so extra care must be taken to avoid drying it out through overcooking.
Buffalo/Bison steaks and burgers are at their very best when done rare or medium (with a pink center).
If you oven broil your buffalo/bison, try moving the oven rack a notch lower than you normally would and check on their progress a few minutes sooner than you normally would. You'll be rewarded with a juicier piece of meat.
If you grill your buffalo/bison, we suggest doing so over medium hot coals at a distance of from four to six inches. Again, a little extra care will reward you with a much juicer meal.
When roasting buffalo/bison, we suggest that you follow the creed "lower and slower." Lower your oven temperature to cook the meat more slowly. It will shrink less, thereby retaining more natural juice. To be sure that it is done to your liking, we suggest using a meat thermometer - it's an inexpensive reusable insurance policy.
The rich red color of the buffalo/bison meat is indicative of the higher levels of iron and the lack of marbling (fat). Both of these are GOOD things and are probably among the reasons that you purchased buffalo/bison meat in the first place.

Elk Chuck Roast
Elk is a healthy red meat, naturally low in fat and cholesterol. In fact, according to the USDA, ounce for ounce, lean elk meat is lower in both fat and cholesterol than boneless, skinless chicken breast, but provides an equivalent amount of protein. The flavor is similar and can can be substituted nearly anywhere you would use beef.
Elk chuck roast needs to be cooked as slowly as possible. This is a lean cut. Take the time to cook it right. The easiest way to cook is by throwing all ingredients in a crock pot and come home to delicious, hearty, and healthy meal. No fuss on your part, just great taste!
