Leftovers: Shrimp w/ Fettuccine and Baked Garlic Loaf Bread

Dinner Tonight: Leftovers: Shrimp w/ Fettuccine and Baked Garlic Loaf Bread





For Breakfast this morning I toasted a Thomas 100 Calorie Light Multi Grain English Muffin and
made a Breakfast Sandwich. I also lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, and had a cup of Bigelow Decaf Green Tea. We actually have had a few peeks of the sun today! But still rain on and off and very humid, 87 degrees. Ran the sweeper and dusted. Then did a load of laundry. After Lunch I made some Turkey and Black Bean Burritos and froze them. I used the leftover Turkey and Black Bean Taco Mixture to make the Burritos. Wrapped each one in foil and froze them in a Hefty Zip Lock Bag. They'll be great to grab one out of freezer and have it for Lunch. For Dinner tonight its Leftovers. I had the Shrimp w/ Fettuccine and Baked Garlic Loaf Bread leftover from last night. I've left the post from last night for directions and details. Have a good one!



So for the Shrimp part of the dish I used Meijer Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.



To prepare the Buitoni Fettuccine; I filled a large Sauce Pan with 4 quarts Water and a couple of
shakes of Morton’s Light Salt. Turned it on high heat. When it was a full boil I added the Fettuccine. Reduced the heat for a gentle boil of the Pasta for 2 minutes, stirred frequently. Removed from the heat and drained the water. Seasoned the Pasta with Extra Light Olive Oil,  Blue Bonnet Light Butter, Morton's Light Salt, and Dried Oregano.







To serve, in a bowl, I made a bed of the Fettuccine and topped it with the Shrimp. I love Shrimp and Pasta! The Fettuccine was tender and so delicious. Then with the added Shrimp it just made that much better! I topped it with some Kraft Grated Reduced Fat Parmesan Cheese.













I also heated up some of the RiverRoad Bake House Garlic Oval Loaf Bread I had yesterday for Dinner. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Shrimp w/ Fettuccine and Baked Garlic Loaf Bread

Dinner Tonight: Shrimp w/ Fettuccine and Baked Garlic Loaf Bread




For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in
a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. Another rainy day outside again. Thunderstorms, 85 degrees, and humid out. We have a lot of local flooding through out our area, hope it eases up soon. I had to be back at the Doctor's Office for a follow up check on my leg, which seems to be better but slow healing. They said everything looked better though. Not much to do outside with all the rain so I did a few chores around the house the rest of the afternoon. For Dinner tonight I prepared Shrimp w/ Fettuccine and Baked Garlic Loaf Bread.

Cumin Spiced Pork Chop w/ Mashed Potatoes and Mixed Chili Beans

Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes and Mixed Chili Beans




For Breakfast I prepared a Thin Cut Breakfast Pork Chop. I also prepared some Simply Potatoes
Shredded Hash Browns, toasted a slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Love those Chops. After Breakfast I went to Kroger to pick up a few items for a Church Service later today at our Church. I then stopped at McDonald's and picked up Breakfast for Mom. Mom's Cataract Surgery went good, she has the the left eye done in a week. I dropped off the food at the Church and then did a couple of errands. It cooled down a bit and rain moved in, a high of 82 degrees and still humid. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes and Mixed Chili Beans.


I had picked a Pork Tenderloin Center Cut Pork Chop at Kroger earlier. So to prepare my Chop I’ll
need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in a large Spice Jar I have To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.



For one side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.












For a 2nd side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili
Sauce. These are fairly new and as all the Bush’s Bean Products Delicious! For me you just can’t beat Bush’s Beans. I’ve prepared these a few times now and really love them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! Being fairly new they are sort of hard to find. The only store I have found them is Meijer so far. I had also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Cast Iron Skillet Buffalo Hanging Steak w/ Baked Potato and Cut Green Beans

Dinner Tonight: Cast Iron Skillet Buffalo Hanging Steak w/ Baked Potato and Cut Green Beans




Started my morning off by toasting 2 slices of Aunt Millie’s Light Whole Grain Bread, Fried 2
Johnsonville Turkey Breakfast Sausage Links, prepared a Sunnyside Up Egg, and my morning cup of Bigelow Decaf Green Tea. 83 degrees and sunny out today, another beautiful day out there! After Breakfast I went to Menard's to their Garden Center. I needed a of Peat Moss, Weed Killer Spray, 3 small plant pots, and a bag of Dirt. Later after Lunch I went with Mom to see Dad. So glad we moved him to this new place, so much better! For Dinner tonight I prepared a Cast Iron Skillet Buffalo Hanging Steak w/ Baked Potato and Cut Green Beans.



Wild Idea Buffalo had their 16 oz. Hanging Tender Steaks on sale a weeks ago and I ordered a couple
of them and I’m having one of them for Dinner tonight. I had it in the freezer so I laid it in the fridge overnight to thaw. To season it I’ll need; McCormick Grinder Sea Salt and Grinder Peppercorn Medley, Dried Rosemary, and Extra Light Olive Oil.








For the Steak; I rinsed the Hanger Steak and pat it dry. Then I grabbed a sharp fillet knife and ran the knife along one side of the sinew that runs down the center, creating two fillets. Remove the sinew
from fillet that it remains attached to half of the fillet with knife. When I first found this recipe I didn’t know what the word “sinew” meant. I looked it up and the definition is; sinew – a piece of tough fibrous tissue uniting muscle to bone or bone to bone; a tendon or ligament. Learned something new! Which is why I enjoy cooking so much, you’re always learning something! To continue, next I rubbed the steaks with the Olive Oil, Sea Salt, Pepper, and Rosemary . Cover and allow it to rest at room temperature for 2 hours. I cut the other half of the Steak in half again and I’ll be having them for a couple of Steak and Eggs Breakfasts with them.




To start I got out a Cast Iron Skillet out. Sprayed it with Pam Cooking Spray and added a 1/2
tablespoon of Extra Light Olive Oil. Heated the Skillet on medium heat. Next I preheated the oven to 400 degrees. Then to start I pan fried it, on medium heat about 2 minutes per side. Starting out cooking it on the stove gave it a nice sear to start. Then I put the Skillet in the oven and roasted it until it had internal temperature of 145 degrees for a medium rare, and it came out perfect, love using Cast Iron Skillets; from the stove to the oven! After removing it from the oven I put the Steak on a plate and lest it rest for 5 minutes before serving. These Steaks are so moist and tender and have that distinct Wild idea Buffalo flavor. The juices off the Steak was just incredible! I also prepared some sauteed Mushrooms to go with Steak.



For a side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and
Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter.












Then for another side I prepared a small can of Delmonte Cut Green Beans. Just empty the can into a small sauce pan and heat until heated through. I also baked a loaf of the RiverRoad Bake House Garlic Oval Loaf Bread. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

For Breakfast I just had a cup of Bigelow Decaf Green Tea. Not feeling up to par today. I've been
having continuing problems with Phantom Pains. It's real unusual to have them on consecutive days little alone 3 days in a row. I've really been uncomfortable the last few days. Hope it passes. Didn't do a lot today. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes and Mixed Chili Beans.

Bay Scallop and Shrimp Thin Spaghetti Pasta w/ Baked Multi Grain Bread

Dinner Tonight: Bay Scallop and Shrimp Thin Spaghetti Pasta w/ Baked Multi Grain Bread





For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker's Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea.
Chilly morning out, 27 degrees. But the day wasn't bad, sunny and 49 degrees. After Breakfast I headed out to Meijer to do some grocery shopping, I didn't need a lot just wanted to get out for a while. After Meijer I stopped by Kroger to pick up a few items for Mom. Then on the way home I stopped by McDonald's to pick up Breakfast for Mom and Dad, they love that McDonald's Breakfast. Not much else going on today so I caught up on some shows I had recorded. For Dinner tonight I prepared Bay Scallop and Shrimp Thin Spaghetti Pasta w/ Baked Multi Grain Bread.




I wasn't sure what to have for Dinner tonight so the last night I searched the freezer to see what I could find. I've been using what I can out of the freezer of late and made a huge dent in items that I
had even forgot I had in there! So I got a bag of White Shrimp and a bag of Bay Scallops and laid them in the fridge to thaw overnight. I'll be having Bay Scallop and Shrimp Angel Hair Pasta w/ Baked Multi Grain Bread for Dinner tonight. I'll be using; White Shrimp I had purchased at Kroger, Bay Scallops that I also had purchased at Kroger, Old Bay Seasoning, Lemon Juice, McCormick Grinder Sea Salt, Blue Bonnet Light Butter, Extra Light Olive Oil, Ronzoni Healthy Harvest Whole Grain Thin Spaghetti Pasta, Kraft Reduced Fat Grated Parmesan Cheese, and a Loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread.




I had already cleaned and rinsed both the Bay Scallops and Shrimp. Added both to a bowl and Seasoned them with the Old Bay, Lemon Juice, Sea Salt, and Olive Oil. Mixed everything up so it was all Seasoned. Next I grabbed a large skillet, sprayed it with Pam Non Sick Cooking Spray, added a Pat of the Butter, added a tablespoon of Extra Light Olive Oil, and heated on Low Medium heat.








As the skillet was heating for the Seafood I took a sauce pan filled it 3/4 full of Water and lightly Salted it with the McCormick Grinder Sea Salt, heated it on High heat. Back to the Seafood. With the skillet heated I added the Bay Scallops and Shrimp. The Scallops and Shrimp will not take more than a few minutes to cook. I under cooked both just a bit because I would be adding it to the hot Angel Hair Pasta which will steam it to finish it. Put the Seafood ina bowl and set aside while my Pasta is cooking.







For the Pasta I'm using Ronzoni Healthy Harvest Whole Grain Thin Spaghetti. The Ronzoni Healthy Harvest Whole Grain Pastas are my favorite to use but tough to find in the area so now I have to order it online. Easy to prepare; Boil your water with some added Salt. When boiling add the Spaghetti and, return it to a boil. Stir occasionally, cook for 8 minutes. Drain it and get ready to serve.








I put it into a medium size bowl and seasoned it with a splash of the Olive Oil, a sprinkle of Sea Salt, and the grated Parmesan Cheese. Gave it a stir and added the Bay scallops and Shrimp, stirred and served! Oh what a dish! It combines two of my favorite foods Seafood and Pasta. I topped everything with a bit more of Lemon Juice and grated Parm Cheese. I could have this all the time. I had also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has become the family's favorite Baked Bread. Plus I love having Bread every meal and Crusty Bread with Pasta Dishes. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.






Ronzoni Healthy Harvest Whole Grain Thin Spaghetti

From the Italian word for "strings"; these round thin strands of pasta are our most beloved shape.

Dinner Tonight: Catfish Nuggets w/ Baked Scalloped Potatoes and Baked Multi Grain Bread





For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just
cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald's to get Breakfast for Mom and Dad and I also stopped at Dunkin Donuts and picked up Donuts for them. Lot of rain the last day or so and a lot more on it's way. The news says rain every day next week, and heavy at times. Come on Sunshine! Back home did a couple of loads of laundry and then after Lunch did some house cleaning. For Dinner tonight Catfish Nuggets w/ Baked Scalloped Potatoes and Baked Multi Grain Bread.





I had purchased some Catfish Nuggets from Meijer a while back. So I grabbed a package out of the freezer and let it thaw overnight in the fridge. To prepare them I rinsed the Catfish Nuggets off in
cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.





For a side dish I prepared some Bob Evan’s Oven Baked Scalloped Potatoes. I hadn’t had these in quite a while so I picked up a package while at Meijer. It comes in a microwave package, just heat for 6 minutes and serve, or you can bake it which is how I prepared it. Comes out with plenty of Potatoes with an excellent Cheese Sauce and seasoning. Easy way to have Scalloped Potatoes with no clean up! I also baked a loaf of River Road Bakehouse Multi Grain Bread. I've been buying this from Meijer the last few months and it's our favorite Baked Bread. Mom's a big Bread eater like me! For Dessert later a Dole No Sugar Added Diced Peach Cup.

Fried Yellow Lake Perch w/ Diced New Potatoes, Cut Green Beans, and.........

Dinner Tonight: Fried Yellow Lake Perch w/ Diced New Potatoes, Cut Green Beans, and Baked Multi Grain Bread







For Breakfast this morning I prepared some more of the Turkey Spam. I lightly fried a couple of
slices along with some Simply Potatoes Shredded Hash Browns, 1 Egg Sunnyside Up, and a cup of Bigelow Decaf Green Tea.












Outside a lot colder, 19 degrees this morning and 36 degrees for a high with snow flurries and a mix of snow and rain later in the day. I drove to the Dayton, Ohio Airport to pick a friend of mine that was flying in a couple of days to see his parents. His Mom is in the Hospital with the flu and his Dad isn't much better. The Flu has really hit this are hard. My family has been real lucky so far, none of us has had it. For Dinner tonight I prepared Fried Yellow Lake Perch w/ Diced New Potatoes, Cut Green Beans, and Baked Multi Grain Bread.
 





I purchased the Yellow Lake Perch from Meijer. I rinsed the Fillets in cold water then patted them dry and put them in a Hefty Plastic Bag and on into the freezer. Last night I laid the bag in the fridge to thaw overnight. I love using Lake Perch, fries up a beautiful golden brown and like most fresh water fish has a fantastic taste.











I then seasoned them with Sea Salt and rolled the fillets in my favorite Breading Mix, Zatarain’s
Crispy Southern Fish Fri. Pan fried them in Extra Light Olive Oil, 3 minutes per side. They came out with a golden brown crust and delicious! My Mom has always said that I get my love of Fish from my Great Grandfather. Mom said they always knew he was coming to visit because my Grandmother would always fry up a big batch of Fish and a cast iron skillet of Cornbread, and doesn’t get any better than that!








For one side dish I prepared a can of Del Monte Sliced New Potatoes. I boiled them until heated and seasoned with Sea Salt, Ground Black Pepper, and Parsley Flakes. Then I also heated up a can of Del Monte Cut Green Beans. Finally I baked a loaf of River Road BakeHouse Artisan Multigrain Bread. It's a new Multigrain Loaf Bread that I've had a couple of times now and really like having. I purchase it at Meijer. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Diet Peach Snapple to drink.
