Bison New York Strip and Sauted Mushrooms w/ Sliced New Potatoes and Seasoned Pinto Beans

Dinner Tonight: Bison New York Strip and Sauteed Mushrooms w/ Sliced New Potatoes and  Seasoned Pinto Beans




I normally prepare Breakfast here at the house but today I had Panera Bread Breakfast Sandwich. I'm usually up by 6:00 in the morning but slept in till after 7:00, which is late for me. Mom got up around 8:00 and I headed out to Panera Bread. I bought us a couple of Ham, Egg and Cheese Breakfast Sandwiches, which we'll be having again! They were delicious! Good size and fantastic taste. I also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy out and 86 degrees, rain shower in the early evening. Cleaned the house and cleaned up around the outside later on. For Dinner tonight a Bison New York Strip and Sauteed Mushrooms w/ Sliced New Potatoes and Seasoned Pinto Beans




I'm trying the Buffalo Gal - Bison New York Strip Steak for Dinner tonight! Recently I've had the Buffalo Gal Bison Cube Steak and the Buffalo Sliders and loved both.So tonight it's their New York Strip Steak. To prepare it I'll need; McCormick Grinders of Sea Salt and Peppercorn Medley, Blue Bonnet Light Butter, and Extra Light Olive Oil, and 1 Cast Iron Skillet! I'll be preparing the Steak by frying it in a Cast Iron Skillet.






To prepare it I start by adding a 1/2 tablespoon of the Extra Light Olive Oil and preheating  the Cast Iron Skillet on high heat. Next I Salted and Peppered the Steak, brushed with a little of the Butter, then placed in the heated Skillet. I let it sear on the high heat for about 4 minutes.  Then turned it once using tongs.  Continued cooking on the high heat for about another 2 minutes for a perfect medium rare steak. They say key is to get the sear on one side first and do not flip back and forth, just one time.  Then I let Steak rest 15 minutes before slicing.







And WOW what a Steak! So tender, flavorful, and juicy. Excellent Steak, I'll be having this one
again. I served it with some Sauteed Mushrooms.













For one side I heated up a can of Del Monte Sliced New Potatoes. I use a lot of Del Monte Vegetable
Products, always delicious and store a lot longer than fresh Vegetables. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through.










Then for a second side I prepared a can of Margaret Holmes Seasoned Pinto Beans. It doesn’t get much better for a canned Beans than these! To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. I love Beans of all kinds and these Seasoned Pinto Beans are at the top of the list, love the Seasoning.For Dessert/Snack later some slices of Boar's Head Longhorn Colby Cheese along with Whole Wheat Saltine Crackers, good ole Cheese and Crackers!








Buffalo Gal - Bison New York Strips
A customer favorite. Cut thick and ideal for grilling. Receive 2 (7-9 oz.) steaks. (2 steaks per package, package is over 1 lb.)

Nutrition (8 oz.):
Fat: 4.8g, Calories: 260, Protein: 54g, Sodium: 180mg

Suggested Cooking Method:
Preheat your pan on high.  Cast iron or non-stick.   Salt and Pepper the meat, brush with a little butter, then place in the pan.  Let it sear on the high heat for about 4 minutes.  You will see the meat color change on the sides.  Then turn once using tongs or turner to flip.  Continue cooking on the high heat for about another 3 minutes for a perfect medium steak.  2 minutes for rare or 5 minutes for well done.  The key is to get the sear on one side first and do not flip back and forth, just one time.  Let meat rest 15 minutes before slicing.

Fried Walleye Fillet w/ Seasoned Pinto Beans and Golden Hominy

Dinner Tonight: Fried Walleye Fillet w/  Seasoned Pinto Beans and Golden Hominy






For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. It was a beautiful Sunrise this morning the east horizon was just lit up with color. Finished up a few things around the yard before rain moved back in around 11::00 this morning. For the day it was 58 degrees with rain. The yard is looking a lot better! I was able to finally get caught up with a lot of yard work. Later in the day Hoveround came over to make some repairs on my Hoveround Mobility Chair. Being an amputee I don't know what I would without my Hoveround! For Dinner tonight I prepared Fried Walleye Fillet w/ Seasoned Pinto Beans and Golden Hominy.

 


Last time I was at Costco yesterday I bought a package of fresh Canadian Walleye Fillets! There was 7 Fillets in the package, I gave Mom a couple of them that she froze and I had one that day and had froze the rest. So I laid a bag of 2 Fillets out in the fridge to thaw overnight.











So I’m preparing 2 Fillets. To prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor! Costco has excellent an Fish and Seafood selections!






As the Fillets were cooking I prepared my side dishes. I prepared a can of Margaret Holmes Seasoned Pinto Beans. It doesn’t get much better for a canned Beans than these! To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. I love Beans of all kinds and these Seasoned Pinto Beans are at the top of the list, love the Seasoning.








For another side I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy.
For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Coke Zero to drink.

Blackened Chicken Breast w/ Seasoned Pinto Beans, Sliced New Potatoes,.......

Dinner Tonight: Blackened Chicken Breast w/ Seasoned Pinto Beans, Sliced New Potatoes, and Baked Texas Toast






For Breakfast this morning I prepared Scrambled Eggs, 3 slices of al fresco Uncured Chicken Bacon, toasted 2 slices of Aunt Millie's Light Whole Grain Bread (lightly buttered), and that morning cup of
Bigelow Decaf Green Tea. Outside it's mostly cloudy and a high of 50 degrees. After Breakfast I went to Costco. First time here in a while. Bought a few items I needed and bought a couple of cases of canned Fruit and Vegetables. On the way home I dropped the cases off at Reach Out Lakota, food and shelter center here in West Chester. Then mailed a couple of letters and stopped by the ATM. Not a lot going on today, did a few things around the house then some work on my computer. For Dinner tonight its a Blackened Chicken Breast w/ Seasoned Pinto Beans, Sliced New Potatoes, and Baked Texas Toast.




I was at Kroger yesterday and picked up a package of Kroger Blackened Chicken Breast. It contained 1 Chicken Breast that was Seasoned with Blackened Spices. The only thing I added to prepare it was some McCormick Grinders of Sea Salt and Peppercorn Medley. I'll be preparing it in a Cast Iron Skillet.










I started by heating the oven on 400 degrees. I sprayed the Cast Iron Skillet with Pam Non Stick Cooking Spray and added a tablespoon of Bertoli Extra Light Olive Oil. I heated the Skillet on
medium heat. When the Skillet was heated I added the Chicken Breast. I seared it for 2 minutes per side. I then moved it to the oven. I love using Cast Iron Skillets. Not only do they hold heat and cook evenly but you can go from the stove on to the oven like I did with the Chicken. I continued cooking the Chicken for 10 minutes, flipping it over one time. Checked the Chicken with an internal meat thermometer, and it read 166 degrees. Took the Skillet out of the oven and let the Chicken rest for 3 minutes before serving. Excellent Blackened Seasoning and the Chicken came out moist and delicious. I'll have to get another package of this sometime, enjoyed it.




As my Chicken was cooking I prepared my side dishes. I prepared a can of Margaret Holmes

Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes

Dinner Tonight Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes





For Breakfast on this morning I toasted a Healthy Life Whole Grain English Muffin. I topped it with
a Poached Egg and I also had a cup of Bigelow Decaf Green Tea. About 12 degrees out this morning, not quite as cold as it's been. Mostly cloudy and 24 degrees. Warmer temps on the way starting tomorrow, none too soon for me! Well the house is clean, the pantry is straight, oven clean, so not a thing to do today! Did a few things on the computer and then caught up on shows I had recorded. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes.









I picked A couple of Pork Tenderloin Center Cut Pork Chops at Meijer a while back and them in the freezer. I laid one of the Chops in the fridge overnight to thaw. They have some of the finest Pork Chops you can find.









So to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in
a large Spice Jar I have To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

of this at a nearby Walmart, they carry a good selection of a lot of the Margaret Holmes Products. To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. And I have delicious side dish! I love Beans of all kinds and these Seasoned Pinto Beans are delicious, love the Seasoning.








For a second side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I also baked a loaf of LaBrea Multi-Grain Bread. For Dessert later a Jello Sugarfree Dark Chocolate Pudding.

Peppercorn and Herb Crusted Pork Tenderloin w/ Savory Herb Potatoes and Seasoned Pinto Beans

Dinner Tonight: Peppercorn and Herb Crusted Pork Tenderloin w/ Savory Herb Potatoes and Seasoned Pinto Beans







For Breakfast on this morning i toasted a Healthy Life Whole Grain English Muffin. I topped it with a Poached Egg and I also had a cup of Bigelow Decaf Green Tea. Yesterday morning was cold and this morning its even colder! It's a minus 8 degrees. It was sunny out today but only a high of 18 degrees. So with the cold weather outside I stayed indoors. Today was computer cleanup day. Cleaned off the desk and did some rearranging. Then I did some computer cleaning and maintenance. Ran all the scans, deleted old files, and up dated some passwords. Then I unhooked everything and cleaned the inside of the processor. For Dinner tonight I prepared a Peppercorn and Herb Crusted Pork Tenderloin w/ Savory Herb Potatoes and Seasoned Pinto Beans.




I purchased the Pork Tenderloin at our local Kroger up the road. It's a Smithfield Pork Tenderloin Usually I use my Cumin Spiced Rub when having a Pork Tenderloin so I thought I would give the Peppercorn and Herb Rub a try. To prepare it I'll need; the Pork Tenderloin, Extra Light Olive Oil, McCormick Grinder Sea Salt, McCormick Grinder Peppercorn Medley, Dried Parsley, and Dried Thyme.








To prepare it; preheat oven to 350°. Combine all the ingredients, except the Peppercorn, in a small bowl. Next rub a light coat of Extra Light Olive Oil all over the Pork. Then rub the combined ingredients on all sides of the Pork. I then got a plate, and got the McCormick Grinder Peppercorn
Medley and ground the Peppercorn on to the plate. Took the Pork Tenderloin and rolled in the Peppercorn. I then let the Pork rest for 5 minutes. As that was resting I got a Cast Iron Skillet sprayed it with a light coat of Pam Non-Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the Skillet on medium high heat. Add the Pork to the skillet and cook 2 minutes per side. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. That's one excellent Pork Tenderloin! Moist, juicy, and love the seasoning. The Peppercorn Medley gives it great flavor and a nice crust. Served it with Horseradish Sauce and baked a loaf of La Brea Multi Grain Bread.




For one side I prepared Potatoes; the Little Potato Company Savory Herb Potatoes. I have these quite
often and really enjoy them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.







For another side I heated up a can of Margaret Holmes Seasoned Pinto Beans. I purchased a few of cans of this at a nearby Walmart, they carry a good selection of a lot of the Margaret Holmes
Products. To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. And I have delicious side dish! I love Beans of all kinds and these Seasoned Pinto Beans are delicious, love the Seasoning. I also baked a loaf of La Brea Multi Grain Bread. So easy to prepare and no clean up. For Dessert later a Weight Watcher's Divine Triple Chocolate Ice Cream Bar.

6 oz. Buffalo Sirloin Steak w/ Seasoned Pinto Beans and Sliced Potatoes

Dinner Tonight: 6 oz. Buffalo Sirloin Steak w/ Seasoned Pinto Beans and Sliced Potatoes





To start this cloudy Monday morning off I prepared a Thin Cut Breakfast Pork Chop. Seasoned it with Salt and Pepper then rolled it in flour. Fried it in Extra Light Olive Oil, about 3 minutes per side. Then I Scrambled a couple of Eggs, toasted a slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. What better way to start a Gloomy Monday morning! Cloudy and 48 degrees outside, and a passing shower. Gave Mom a hand with a couple of loads of laundry and that about it for the day. I had a Sinus Headache that would not quit all day. So it was a lot of rest today. For Dinner tonight I prepared a 6 oz. Buffalo Sirloin Steak w/ Seasoned Pinto Beans and Sliced Potatoes.


Nothing like a Wild Idea Buffalo Steak! So tonight I'm having a Wild Idea 6 oz. Fine Cut Buffalo Sirloin.  I had the Sirloin in the freezer so I laid it in the fridge overnight to thaw. To prepare the it I rubbed the Steak with a teaspoon of Extra Light Olive Oil. Then seasoned it with Dried Rosemary and McCormick’s Grinder Sea Salt and Black Peppercorn. As the Steak rested I preheated a Skillet, that I sprayed with Pam Cooking Spray, on medium heat. When the skillet was heated I added my Buffalo Sirloin, I cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and tender.

To prepare them; boiled until heated and seasoned with Sea Salt, Ground Black Pepper, and Parsley Flakes. I also baked a slice of New York Bakery Texas Toast Light. For Dessert later a Weight watcher's Cookies and Cream Ice Cream Bar.

Beef Cubed Steak w/ Peppered White Gravy, Mashed Potatoes, and Green Beans

Dinner Tonight: Beef Cubed Steak w/ Peppered White Gravy, Mashed Potatoes, and Seasoned Pinto Beans



For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento
Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Mostly sunny out there but its one cold start this morning, 24 degrees! We had a high of 45. After Breakfast I headed off to Kroger to pick up a few things for Mom and our Christmas Tree. Stopped by McDonald's and picked up Breakfast for Mom and Dad. Cleaned the house this afternoon and had to replace a couple of our floor heat registers. For Dinner tonight I prepared Beef Cubed Steaks w/ Peppered White Gravy, Mashed Potatoes, and Seasoned Pinto Beans.



When at Meijer I always pick up a couple of packages of the Meijer Beef Cubed Steak. They are the
best Cubed Steak I have ever found by far and one of the very few times I have Beef. They’re good size patties so I’m able to cut them in half and get 2 meals out of 1 patty. They come 2 to a package and cooked the other Cubed Steak for Mom. This is one of the few times I use Beef. Normally I use Buffalo but as far as I know no one makes Cubed Bison Steak, at least not yet!








To prepare the Cubed Steak I seasoned them with Sea Salt and Ground Black Pepper and I then
dusted them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Extra Light Olive Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy. I also made a packet of the Pioneer Peppered White Gravy Mix. Topped the Cubed Steak and Mashed Potatoes with it.







To go with the Cubed Steak you always have to have Mashed Potatoes! I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I also made a packet of the Pioneer Peppered White Gravy to top the Mashed Potatoes.










Then I heated up a  can of Margaret Holmes Seasoned Pinto Beans. To prepare them just empty the can into a sauce pan and heat until heated through. One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.











Cube Steak
Cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding with a
meat tenderizer, or use of an electric tenderizer. The name refers to the shape of the indentations left by that process (called “cubing”). Many professional cooks insist that regular tenderizing mallets cause too much mashing to produce a proper cube steak, and insist on either using specialized cube steak machines, or manually applying a set of sharp-pointed rods to pierce the meat in every direction. This is the most common cut of meat used for chicken fried steak.

In Canada as well as in some parts of the United States, cube steak may be called a minute steak, because it can be cooked quickly.
Others distinguish minute steak as:
* simply referring to the cut, which is not necessarily tenderized;
* thinner than cube steak (hence does not need tenderizing);
* cut from sirloin or round, while cube steak cut is from chuck or round.
The term “minute steak” is also used in the United Kingdom, where the term “cube steak” is little known.

Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes

Dinner Tonight: Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes




To start this Saturday morning off I had Steak and Egg. I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then
grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy. Then I fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also, as usual, my morning cup of Bigelow Decaf Green Tea.




Cold morning out there this morning, 28 degrees. For the day mostly cloudy and a high of 54 degrees.
I did a load of laundry after Breakfast. Later on I got the leaf blower out and cleaned off the deck and driveway ares of leaves. Back inside I cleaned the house, dusted and vacuum. Then settled in to watch some College Basketball and Football. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes.








I picked A couple of Pork Tenderloin Center Cut Pork Chops at Meijer yesterday. I froze one of the Chops and having the other one for Dinner tonight. I really love the Meijer selection and quality of all their meats, and all their products and produce. They have some of the finest Pork Chops you can find.








So to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in
a large Spice Jar I have To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.




For one side I heated up a can of Margaret Holmes Seasoned Pinto Beans. I purchased a few of cans
of this at a nearby Walmart, they carry a good selection of a lot of the Margaret Holmes Products. To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. And I have delicious side dish! I love Beans of all kinds and these Seasoned Pinto Beans are delicious, love the Seasoning.






For a second side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I also baked a loaf of LaBrea Multi-Grain Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.
