Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight: Shrimp and Smoked Turkey Sausage Gumbo






It was a rough morning. I don't know if I tried walking in my sleep or just half a sleep but I fell early this morning getting out of bed. Not really sure what happened, one minute I was in bed and the next
in the floor with my walker on top of me. I busted my knee open,had a cut on my arm, a sore neck, and a knot on my head. It could have been a lot worse if I had broken a hip or leg. And having but one leg, either would be bad news. That's about the 4th time that's happened. I'm going to have to come up with a solution before I do break something. For Breakfast I just had a cup of Bigelow Decaf Green Tea, not real hungry. Rested most of the day. For Dinner tonight I prepared a personnel favorite, Shrimp and Smoked Turkey Sausage Gumbo.





One of my favorites tonight, Shrimp and Smoked Turkey Sausage Gumbo! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey
Sausages (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp and Frank’s Red Hot Sauce. I precooked the Sausage and Shrimp, according to the package instructions, before adding it to the Gumbo.







The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced the Turkey
Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a loaf of Pillsbury French Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup.

Leftovers – Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight: Leftovers – Shrimp and Smoked Turkey Sausage Gumbo




For Breakfast this morning I had a bowl of Cheerio's along with a cup of Bigelow Decaf Green Tea. After Breakfast I went up to the McDonald’s Drive-Thru and picked up Breakfast for Mom. Outside mostly cloudy but not a bad day out,81 degrees and a tad humid. After Lunch headed over to the afternoon with Dad. He's been doing good, hope to have him home soon! And for my Dinner tonight Leftovers! Tonight its Leftover – Shrimp and Smoked Turkey Sausage Gumbo.



Far be it from me to waste leftovers, especially leftovers as god as the Shrimp and Smoked Turkey Sausage Gumbo leftovers! So for Dinner tonight I reheated the leftover Shrimp and Smoked Turkey
Sausage Gumbo. The dish reheats perfectly! It’s just as good the second time around, if not better! I also reheated a couple of slices of French Bread that was leftover from last night. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar. I have left the original post from the other day that has the ingredients and instructions for the Shrimp and Smoked Turkey Sausage Gumbo. Enjoy!

YOU WILL NEED:
1 package Zatarain’s® Gumbo Pasta Dinner Mix
1 tablespoon oil
1 pound andouille or other cooked sausage, cut into 1/2-inch slices
2 3/4 cups water

DIRECTIONS:
1. HEAT oil in large skillet (12-inch) on medium-high heat. Add sausage; cook and stir 5 minutes or until lightly browned.
2. STIR in water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.

VARIATIONS
Chicken Gumbo: Prepare as directed, using 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes, in place of the sausage. Cook and stir 5 minutes or until chicken is no longer pink.

Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.

To start this day I Poached an Egg and served it on a Healthy Life Whole Grain English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy with a passing shower, about 82
degrees and humid. We had some action in the neighborhood, 6 houses up from where we live. The house was being repossessed and the resident wasn't giving the house up. Plus he had a huge gun collection so they had to call the SWAT Team in. They finally had to break the door down and get him out. I'll give our Police credit, they tried to talk him out for 4 hours before going in, and they never arrested him. Our neighborhood went back to peace and quiet today. After Lunch went over to see Dad for the rest of the afternoon. For Dinner tonight I prepared a personnel favorite, Shrimp and Smoked Turkey Sausage Gumbo.

As always when I prepare Shrimp and Smoked Turkey Sausage Gumbo I have the leftovers in a day
or two. And this batch is no exception, for Dinner tonight I reheated the leftover Shrimp and Smoked Turkey Sausage Gumbo. The dish reheats perfectly! To start my day I made one our favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of
Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. Just love this Skillet Breakfast! Mostly cloudy with passing showers and 78 degrees. More rain moving back in tonight. Not a lot going on today. Did some things around the house and outside. For Dinner tonight I prepared a personnel favorite, Shrimp and Smoked Turkey Sausage Gumbo.

Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.

Leftovers - Shrimp and Smoked Turkey Sausage Gumbo

Had a a light Breakfast of a Toasted Healthy Life Whole Grain English Muffin lightly buttered with I
Can't Believe It's Not Butter along with my morning cup of Bigelow Decaf Green Tea. Another cold morning out there again, 16 degrees with a cold breeze a blowing! Partly sunny and 34 for the day. Stayed in all day and gave the house a good cleaning. Also cleaned the fridge and the oven. Then had to do some repair work on a wheelchair I keep out in the car. For Dinner tonight an always delicious dish, Leftovers! Tonight its  Leftovers - Shrimp and Smoked Turkey Sausage Gumbo.
 


As always when I prepare Shrimp and Smoked Turkey Sausage Gumbo I have the leftovers in a day or two. And this batch is no exception, for Dinner tonight I reheated the leftover Shrimp and Smoked Turkey Sausage Gumbo. The dish reheats perfectly! It's just as good the second time around, if not better! I also had a slice of Healthy Life Whole Grain Bread, lightly buttered with I Can't Believe It's Not Butter. For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar. i have left the original post from the other day that has the ingredients and instructions for the Shrimp and Smoked Turkey Sausage Gumbo. What’s not to like with one of my favorite meals; Gumbo, Shrimp, and Smoked Turkey Sausage! To
make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp (that I precooked before adding to the Gumbo), and Frank’s Red Hot Sauce.





The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes
about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a loaf of Pillsbury French Bread. For dessert later a Weight Watchers Cookies and Cream Ice Cream Bar.

Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight: Shrimp and Smoked Turkey Sausage Gumbo





To start my day I made one our favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of
Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. Did some cleaning around the house. Outside its cloudy, rain showers, and a high in the low 40's. They say we have snow flurries moving in overnight. Went over to see Dad at the rehab center after Lunch, for a while. Back home for Dinner tonight I prepared a personnel favorite, Shrimp and Smoked Turkey Sausage Gumbo.

Leftovers: Shrimp and Smoked Turkey Sausage Gumbo

2 of my 3 Meals today will be leftovers, love leftovers! For Breakfast I'll be reheating the leftover
Skillet Potatoes and Ham. to make this I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. It reheats perfect and tastes just as good! Only a high in the 50's today and partly cloudy. After Breakfast I went to Home Depot to buy some wood stain. I plan on sprucing up the small shelf I got from my neighbor. Then after Lunch I headed up to the assisted living center to see a friend of mine. He's really going downhill quick and it's taking a toll on his wife also. Wish I could do something but I don't guess no one can, just hope he doesn't suffer. Back at home it's going to be leftovers for Dinner I'm reheating the Shrimp and Smoked Turkey Sausage Gumbo.




This heats back up perfectly! The pasta holds up great and it maintains the flavor. It also freezes well also. But as good as this it rarely ever sees the freezer! I also heated up the Pillsbury French Bread and had a Diet Peach Snapple to drink. For Dessert later a bowl of Dole Sliced Peaches. Shrimp and Smoked Turkey Sausage Gumbo

Then I did some house cleaning, ran the vacuum, dusted, etc.. Absolutely love this dinner I'm having tonight, Shrimp and Smoked Turkey Sausage Gumbo.

Just a cup of Bigelow Decaf Green Tea for Breakfast. Then about 7:30 Mom drove me over to pick my car up at the shop. Everything good to go again! From there we went to a Med Store and picked out a lift chair for Dad, it will be delivered Monday afternoon. Dad is doing better and slowly getting back on his feet. He's having 2 a day therapy sessions.



Went to Kroger late this afternoon for a few items and got caught in one of the hardest rains I've ever
been caught in! I was in a electric shopping cart bringing my groceries out, it was just a light sprinkle. As I was unlocking the car the monsoon came out of no where! In seconds I was drenched. It was coming down so hard cars were pulling off because they couldn't see. I finally managed to get my groceries in the car and grabbed my walker and got in the car. I had a towel laying in the back seat so I was a few minutes attempting to dry off some. I live about 1 1/2 miles from Kroger and about a 1/4 mile from home the rain stopped and at the house it hadn't rained a drop! I had to take my shirt, hat, shoes and socks off before going in the house. Threw everything in the washing machine and went ahead and did the laundry. Now are whole county is under a flood warning and still no rain here at the house, amazing! Anyway it's leftovers for dinner tonight. I reheated the Shrimp and Smoked Turkey Sausage Gumbo for my Dinner tonight. I've left the original post from last night below. Later and stay dry!

Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight:Shrimp and Smoked Turkey Sausage Gumbo w/ Baked Italian Loaf Bread




To start my day I made one our favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare
it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. After Breakfast headed over to pick my car up from the repair shop and back home. Then on the way home, the same problem occurred. The air conditioner blower went out again. So I made a u-turn and took it back in to be repaired. This time it's something else that kicked it out, they told me not to worry about it that they would take care of everything at no cost! Very good people there. Good day to stay in the a/c today, hot and humid. For Dinner tonight its Shrimp and Smoked Turkey Sausage Gumbo.





What is not to like with this meal of; Gumbo, Shrimp, and Smoked Turkey Sausage! To make it I
used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp (that I precooked before adding to the Gumbo), and Frank’s Red Hot Sauce.









The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. YOU WILL NEED:
1 package Zatarain’s® Gumbo Pasta Dinner Mix
1 tablespoon oil
1 pound andouille or other cooked sausage, cut into 1/2-inch slices
2 3/4 cups water

DIRECTIONS:
1. HEAT oil in large skillet (12-inch) on medium-high heat. Add sausage; cook and stir 5 minutes or until lightly browned.
2. STIR in water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.

VARIATIONS
Chicken Gumbo: Prepare as directed, using 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes, in place of the sausage. Cook and stir 5 minutes or until chicken is no longer pink.

Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.

Leftover - Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight: Leftover - Shrimp and Smoked Turkey Sausage Gumbo w/ Baked Italian Loaf Bread




Had an Egg sandwich for Breakfast this morning. Took 2 medium size Eggs, put them in a small bowl, added Sea Salt and Ground Black Pepper, a couple of shakes of Frank's Red Hot Sauce, and a sprinkle of Sargento Reduced Fat Sharp Cheddar. Stirred everything and added it to a small preheated skillet and fried it until it was no longer wet. Served it on Healthy Life Whole Grain Bread, Egg Sandwich! Mom and Dad went on to Church so it gave me a chance to do my weekly full cleaning of the house. Got everything done and spent some time outside. Beautiful day out, sunny and in the 50's! For dinner tonight Leftovers. I reheated Shrimp and Smoked Turkey Sausage Gumbo.




I'm still in a slug mode so it was going to be another easy to prepare dinner! I had prepared Shrimp and Smoked Turkey Sausage Gumbo the other night and had just froze the leftovers. So I sat the container in the fridge overnight to let it thaw. So tonight it's Leftovers - Shrimp and Smoked Turkey Sausage Gumbo. It's one of my many favorite meals and love having it anytime!
