Seasoned Haddock w/ Mac and Cheese

Dinner Tonight: Seasoned Haddock w/ Mac and Cheese




For Breakfast this morning I Scrambled a couple of eggs, toasted 2 slices of Aunt Millie's Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Partly sunny and 74 degrees, rain and thunderstorms moving in toward evening. Had the other half of the outside deck painted, looks great. Went to Meijer Lawn and Garden and picked up another bag of the dark Mulch. Ran a little short of Mulch for around the tree out front. Got the front and side yards looking good! Next is the back yard flower bed and replacing some skirting around the back of the shed. For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

Had not had Haddock in a while and it sounded good! I had purchased the Haddock from Kroger a couple of weeks ago and had them in the freezer. I sat the bag of them in the fridge overnight to thaw. I had already rinsed the fillets off in cold water  and cut the fillets in half before I froze them. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac
Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Fried Walleye Fillet w/ Mac and Cheese

Dinner Tonight: Fried Walleye Fillet w/ Mac and Cheese




For Breakfast morning I prepared a Poached Egg, toasted 2 slices of Aunt Millie's Light Whole Grain
Bread, heated 2 Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green. Mostly cloudy and very windy out, 46 degrees. Not a lot to do today, I was all caught up with chores around the house. After Lunch I went over to a friend of mine I hadn't seen in a while. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.





While at Kroger yesterday I bought a couple of packages small fresh Walleye Fillets. To prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Next I cut the Fillets in half. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!



Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac
Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup.

Seasoned Gulf Coast Grouper w/ Vegetable Rotini

Dinner Tonight: Seasoned Gulf Coast Grouper w/ Vegetable Rotini




To start my Monday morning off I Poached an Egg, heated up a couple of Johnsonville Turkey Sausage Links, toasted a couple of slices of Ant Millie's Light Whole Grain Bread, and had my
morning cup of Bigelow Decaf Green Tea. A delicious way to start the day! Cloudy with light rain and a high of 56 degrees. Cleaned and straightened the Pantry and Freezers. Later on just rested for a while, my Sinuses are really bad today. For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Vegetable Rotini and Marinara Sauce








I had purchased the Grouper Fillet at Kroger yesterday. So to prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s
Seafood Breading Mix Seasoning. Shook until the fillet was well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillet, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful!






Last minute change, Out of the Stouffer's Mac and Cheese and I used Birds Eye Steamfresh Veggie
Made Rotini Marinara. First time trying it and loved it! Heated in the package for 4 minutes in the microwave. Turned out perfect! I'll be trying this and the others soon! For Dessert later a Jello Sugar Free Dark Chocolate Pudding. 
















Grouper – Firm texture, white meat with large flake and a mild flavor. Extra lean fish.

Millie's Light Whole Grain Bread. I Also had 2 Johnsonville Turkey Breakfast Sausage Links and a cup of Bigelow Decaf Green Tea. Cold out this morning, 19 degrees and a wind chill of 14 degrees. Windy, cloudy and 29 degrees for the day! Good day to stay in. After Lunch I helped Mom dig out all the Christmas Decorations from the closets and shed. Getting to be that time of year! For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

Dinner Tonight: Baked Jumbo Butterfly Shrimp w/ Mac and Cheese





Just a Bigelow Decaf Green Tea for Breakfast this morning. About 1:30 this morning I awaken by the Phantom Pains again! Not much sleep and the Pains continued till about 2:00 this afternoon. After my Tea I went to Meijer for Mom. She needed Cereal, Pretzels, Chocolate, and Mixed Nuts. I stopped and got gas, stopped by the ATM, and stopped by McDonald's and picked up Breakfast for Mom. Back home I just tried relaxing and getting caught up on sleep. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Mac and Cheese.




Mom loves this Shrimp so that’s what I’m preparing tonight. For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. Then baked at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and delicious. Hard to beat these always great tasting. I served them with a side of Heinz Shrimp Cocktail Sauce.




To go with the Shrimp another easy and tasty dish, Stouffer’s Classic Mac and Cheese Mac Cups. just
microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. Well that’s about as an easy Shrimp w/ Mac and Cheese dinner that you can fix! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

– Keep frozen until ready to prepare.
– Due to differences in appliances, cooking times may vary and require adjustment.
– Microwaving not recommended.
– For food safety this product must be cooked to an internal temperature of 165°F
– Caution – Product will be hot!
PREPARATION:
BAKE
* preheat oven to 425°f.
* arrange frozen shrimp in single layer on baking sheet so shrimp are not touching.
* for full package, bake 13 to 14 minutes.
* for best results, turn product over halfway through cooking.

FRY
* preheat oil to 350°f.
* place frozen shrimp in fry basket.
* for full package fry 2 minutes and 30 seconds to 3 minutes.
* drain on absorbent paper before serving.

Cleaned the house and did a load of laundry. Everything else done for the day and not much else going on. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

To start my day off I toasted a Thomas 100 Calorie Multi Grain English Muffin and topped it with Smucker's Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 87 degrees out. After Breakfast I went to Meijer for groceries and also the Lawn and Garden Center for a few items. Then by McDonald’s to pick up Breakfast for Mom. I got the cart out of the shed I had to spray for weeds on our side yards. Then got the leaf blower out and cleaned off the deck and driveway. I also bought a battery weed whacker, had to charge for a day before using. For Dinner tonight its Baked Jumbo Butterfly Shrimp with Mac and Cheese.



Mom loves this Shrimp so that's what I'm preparing tonight. For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. To start my day off I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1
package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Sunnyside Up Fried Egg. Partly cloudy and 88 degrees out today, and humid! After Breakfast I went to the local Kroger, just needed a few things. Then by McDonald's to pick up Breakfast for Mom. Then later I went with Mom to a family friend's Funeral. For Dinner tonight its Baked Jumbo Butterfly Shrimp with Mac and Cheese.
