Grilled Buffalo Terris Major Steak w/ Smashed Red Potatoes and....

Dinner Tonight: Grilled Buffalo Terris Major Steak w/ Smashed Red Potatoes and Sliced Carrots








The wet Spring continues, rain on and off all day. It got to 70 degrees but that going to change for the next couple of days their saying. By in the morning around 31 to 33 degrees with a chance of snow or flurries! Their even saying some parts of the area could get around an inch of the wet stuff. Old man Winter is one tough old man! For dinner tonight it was my favorite Meat, Buffalo or Bison if you prefer. i prepared a Grilled Buffalo Terris Major Steak w/ Smashed Red Potatoes and Sliced Carrots.








I prepared the always tender and delicious Wild Idea Buffalo Terris Major Steak. It's come on of my favorite cuts of Buffalo. I started by seasoning it with McCormick Grinder Sea Salt and Black Peppercorn then brushing it lightly with Extra Virgin Olive Oil. Fired the grill up and let it get nice and hot, and grilled! Buffalo Meat is very lean and gets done a lot quicker than other Meats. It only takes about 3 1/2 minutes of grilling per side and it's ready. This one was no exception, it came out medium rare and juicy! I just love the incredible sweet and wild flavor of the Wild Idea Buffalo Meats. I love any Bison or Buffalo but Wild Idea Buffalo is my favorite. Topped it with some sliced and sauteed Baby Bella Mushrooms.








For one side I prepared some Smashed Red Potatoes with Rosemary. If you like Potatoes, you'll love this Potato Dish. Easy to prepare and goes great with any main dish. To start you'll need the following; 12 whole Gourmet Red Potatoes, 3 Tablespoons Extra Virgin Olive Oil, Sea Salt To Taste,  Black Pepper To Taste, and  Rosemary To Taste (You can use any Herb). If your using fewer than 12 Potatoes just adjust the ingredient amounts, still comes out the same. To prepare them I started by bringing a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender. On a sheet pan, generously drizzle olive oil. Place tender potatoes on a cookie sheet leaving plenty of room between each potato. With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil. Sprinkle potatoes with sea salt, ground black pepper and fresh chopped rosemary. Bake in a 450 degree oven for 20-25 minutes until golden brown. Remove from the oven and enjoy! I left the original recipe at the bottom of the post.








For another side I heated up a small can of Walmart Brand Sliced Carrots. Also had a slice of Klosterman Wheat Bread that I buttered with I Can't Believe It's Not Butter. For dessert later a Jello Double No Sugar Added Double Chocolate Pudding topped with Cool Whip Free.

Smashed Red Potatoes with Rosemary

Ingredients:

12 whole Gourmet Red Potatoes
3 Tablespoons Extra Virgin Olive Oil
Sea Salt To Taste
 Black Pepper To Taste
 Rosemary To Taste (You can use any Herb)


Preparation Instructions:

* Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
* On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.

* Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
* Bake in a 450 degree oven for 20-25 minutes until golden brown.
* Serve as is or top each Potato with a dab of Daisy Reduced Fat Sour Cream.
