Wild Idea Buffalo Recipe of the Week – B.B.Q. Summer Sausage and Shrimp Skewers

This week’s Wild Idea Buffalo Recipe of the Week – B.B.Q. Summer Sausage and Shrimp Skewers. Wild Idea Buffalo Summer Sausage, Shrimp, and Mango, how can you resist this! Fire the grill up and get the skewers ready for this recipe. A Summertime grilling treat from Jill O’Brien of Wild Idea Buffalo. You can get this recipe and purchase the Wild Idea Buffalo Summer Sausage at their Wild Idea Buffalo website. http://wildideabuffalo.com/

B.B.Q. Summer Sausage and Shrimp Skewers

By: Jill O’Brien
Simple summertime grilling recipes that don’t skimp on the “wow” factor are pretty hard to beat. The ingredient combination of this recipe is sensational, but quality ingredients are the key. The number of skewers will depend upon the size of shrimp you purchase. 16 to 24 sized shrimp per pound work well, but larger would be fine too. Seek out wild caught shrimp, no other will do, and of course Wild Idea’s Bison Summer Sausage!

Ingredients:
8 – ounces Wild Idea Buffalo Summer Sausage
1 – pound wild caught shrimp (16 to 24 size), peeled & deveined
1 – lemon, cut into wedges
1 – teaspoon lemon pepper
1 to 2 mango’s, peeled and cut into thick pieces
2 – tablespoons olive oil
½ – cup of your favorite B.B.Q. sauce
Wooden skewers, soaked in water
Cilantro for garnish

Preparation:
1) Cut Wild Idea Buffalo Summer Sausage into circle slices and then into pie pieces, in keeping with the size of your shrimp. You may have extra summer sausage. Cover and set aside.
2) Peel, devein, and rinse shrimp. Blot dry with a paper towel. Place in a bowl and squeeze half of the lemon wedges over the shrimp, and season with the lemon pepper. Toss to incorporate and allow to rest for 20 minutes.
3) Skewer the tail part of the shrimp on first, then the summer sausage, securing the meatier part of the shrimp around the summer sausage. Add a piece of mango to the end of the skewer. *The mango pieces can also be added after the grilling.
4) Place on pan and drizzle with olive oil.
5) Grill over medium high heat, for 30 seconds each side, closing grill while grilling. Repeat two more times brushing with B.B.Q sauce while turning.
6) Arrange skewers on a platter and squeeze with additional lemon slices. Garnish with cilantro and drizzle with additional warmed B.B.Q. sauce if desired.

Sweet BBQ Chicken Kabobs w/ White Rice

Dinner Tonight: Sweet BBQ Chicken Kabobs w/ White Rice

To start my day I toasted a Healthy Life Whole Grain English Muffin and topped it with a Poached Egg, I love Poached Eggs! Also had my morning cup of Bigelow Decaf Green Tea. Not quite as hot but the high humidity is still there! Having some yard work done today. Wish I was able to get out there and do it but sometimes you are limited in a wheel chair. I stayed in and did some housecleaning, dusting, vacuum, and such. For Dinner tonight I prepared Sweet BBQ Chicken Kabobs w/ White Rice.

Came across a new item at Meijer a while back and prepared it for the first time and loved it! Tonight I’m having the Johnsonville Sweet BBQ Chicken Kabobs. Meijer has 3 different kinds but I wanted to give the Sweet BBQ Chicken Kabobs again. You can grill them or bake them, so I’m baking mine. The Kabobs come fresh and in a sealed package of 4 seasoned and skewered Kabobs.

To prepare them I preheated the oven to 425°F. Placed the Kabobs on foil-lined backing pan,  coated with Pam Cooking Spray. Baked for 15 minutes, turning once. And done! How easy is this, a one pan cleanup. Johnsonville has it’s self another winning dish! The Chicken is moist and so tender with nice seasoning. The easiest Kabob I’ve ever prepared and one of the tastiest!

Then for the a side I prepared some Uncle Ben’s White Rice. I usually have Brown Rice but the
White Rice just sounded good! Easy to prepare; Just bring Water and Rice to a boil. Reduce heat and cover for 20 minutes and done! Rice is so good! Realy like White Rice, just wish it was lower in the carbs. For dessert later a bowl of Del Monte Cling Peaches.

Kitchen Hint of the Day!

A good one to remember when using skewers.....

When using foods with different cooking times (such as shrimp  and beef), don't combine them on the same skewer. Instead, make skewers of just shrimp or just beef, start cooking the beef first, and then combine them on a serving platter.

Kitchen Hint of the Day!

When grilling shrimp, always thread them onto the skewers lengthwise, so they won't curl on the grill. They'll also be less likely to fall into the fire.

Kitchen Hint of the Day!

Thank you to Bev C. for passing this time saving hint along!

To avoid soaking bamboo skewers each time you need them, soak a big batch once for an hour or so, drain, then freeze them in a plastic bag. When it's time to grill, pull out as many skewers as you need.

One of America's Favorites - City Chicken

A package of All Pork City Chicken

City chicken (also known in some locations as mock drumsticks or mock chicken) is an entrée consisting of cubes of meat (usually pork), which have been placed on a wooden skewer (approximately 4–5 inches long), then fried and/or baked. Depending on the recipe, they may be breaded. Despite the name of the dish, city chicken almost never contains chicken.

A similar dish known as "mock chicken" was described as early as 1908. The first references to city chicken appeared in newspapers and cookbooks just prior to and during the Depression Era in cities such as Pittsburgh. City chicken typically has cooks using meat scraps to fashion a makeshift drumstick from them. It was a working class food item. During the Depression, cooks used pork because it was then cheaper than chicken in many parts of the country, especially in those markets far from rural poultry farms. Sometimes cooks would grind the meat and use a drumstick-shaped mold to form the ground meat around a skewer.

The dish is popular in cities throughout the eastern Great Lakes region of Ohio and Michigan as well as the northeastern Appalachian regions of Pennsylvania and Upstate New York, and at least as far south and west as Louisville, Kentucky. City chicken is commonly found in the metropolitan areas of Binghamton, Cincinnati, Cleveland, Detroit, Erie, Pittsburgh and Scranton, hence, the dish's "urban" title. In Canada, the deli-counter version is popular in the Ottawa Valley and Kitchener area.

Pork is typically the base meat in the common versions of the dish, although recipes vary regionally. For example, Pittsburgh-area preparations are almost always breaded and usually baked, while in Binghamton, the meat is usually marinated, battered and then deep fried. The Cleveland version is generally baked without breading, but the meat is dredged in flour, browned in a pan, then finished in the oven, and served with gravy. Grocery stores in both the Greater Cleveland area as well as those in the Pittsburgh metro area include wooden skewers with pork cubes specifically packaged as city chicken. In Ottawa, Canada, at least one variation involves skewers of three kinds of meat: pork, veal, and beef. Another Canadian variation, from Saskatoon, Saskatchewan, was composed entirely of veal.
