Dinner Tonight: Grilled Pastrami and Swiss Sandwich w/ Italian Pasta Salad




I just had a cup of Bigelow Decaf Green Tea for Breakfast. I didn't want anything too heavy I had to be at the Hospital for a EMG/Nerve test at 8:30 this morning. They want to make sure my Diabetes 2 isn't creating any nerve damage. I also had blood work done. Beautiful day out today, mostly sunny and 65 degrees. Got the cart out and did some yard work and later took a spin in the cart around the neighborhood. So good to be able to get out again without having to bundle up! For Dinner tonight its a Grilled Pastrami and Swiss Sandwich w/ Italian Pasta Salad.



To make my Grilled Pastrami and Swiss Sandwich I’ll be using; French’s Spicy Brown Mustard, Boar’s Head Top Round Pastrami, Boar's Head Swiss Cheese, Blue Bonnet Light Butter, and Klosterman Rye Bread to make my Sandwich.









To prepare it I started by buttering the outside half of a slice of the Rye Bread. Next spread the Mayo on the bottom slice of Bread, next layered the Pastrami, spread the Brown Mustard, and added a slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a large skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Swiss Cheese melted. Love these Grilled Sandwiches!



To go with my Grilled Sandwich I had prepared some Italian Pasta Salad, made about noon today. A Light and tasty dish that includes Ronzoni Smart Taste Rotini Pasta, Black Olives, Green Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovy Paste, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning, and topped with Kraft Reduced Fat Grated Parmesan Cheese. Boiled the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use. Really enjoyed the Dinner tonight of a Grilled Pastrami and Swiss Sandwich along with some Italian Pasta Salad. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Italian Pasta Salad w/ Polska Kielbasa Turkey Sausage.

Dinner Tonight: Italian Pasta Salad w/ Polska Kielbasa Turkey Sausage



Jumped in the car last night, about 9:15, and went up the road to a local country club that sits on a
huge hill. It's one of the tallest points here in the area. Parked the car and watched several different Firework Shows going on. From up there you could see 5 or 6 Shows going on at the same time. It was a clear night so it was a great show! For my breakfast this morning I had an Egg Beater's Egg White Cheese Omelet, Healthy Life Whole Grain English Muffin, and my morning cup of Bigelow Decaf Green Tea. Now this is the way to start the day! Not much going on today. Did a few chores here around the house and that was about it. Sofa City with the remote after that. For dinner tonight I prepared an Italian Pasta Salad w/ Polska Kielbasa Turkey Sausage.





I made this after Breakfast, it’s always better to prepare it and let it chill in the fridge for as long as possible. To make this I'll need; Butterball Polska Kielbasa Turkey Sausage (1 sausage sliced into bite size pieces), Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Green Olives, Kalamata Olives, Hormel Turkey Pepperoni (1 serving 17 slices), Anchovies (4 canned fillets chopped), Kraft Reduced Fat Shredded Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing,  McCormick Grinder Italian Seasoning, Sea Salt, and Texas Toast Cheese and Garlic Croutons (for topping).





To prepare the Pasta; Boil the Pasta according to the box; drain the Pasta and let it cool. Once cooled add the Pasta to a large bowl and add all the ingredients and fold in everything but the Sausage. Put the Pasta Salad in a plastic bowl with a lid and set it in the fridge until your ready to use it.




When it was getting time for dinner I cooked the Sausage. To prepare the Butterball Polska Kielbasa Turkey Sausage; In a large skillet coated with cooking spray add 1 tablespoon Extra Virgin Olive Oil, heat on medium heat. As the skillet is heating slice the sausage into bite size pieces. Add the sausage to the heated skillet and cook, turning the slices several times to get even cooking. Cook a total of about 12 minutes. I love these Butterball Turkey Sausages, always delicious with just an incredible seasoning. Remove the sausage from the pan into a bowl and set aside.




Got the Pasta Salad out of the fridge and put all into a medium size bowl. Added a couple of shakes of the  Kraft Zesty Italian Fat Free Dressing and a sprinkle of Kraft Reduced Fat Shredded Parmesan Cheese. To serve make a bed of the pasta Salad in a bowl and top with Croutons and the Butterball Polska Kielbasa Turkey Sausage. Really enjoy this Pasta Salad, refreshing and so easy to make and with the added  Kielbasa Turkey Sausage kicks it another notch! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Easter Dinner - Roasted Veal Shoulder w/ Canned Green Beans and Mashed Potatoes








First I'd like to wish each and every one of you, and your families, a Happy Easter! I was up about 6:30 this morning, went out to get the Sunday Papers. Grabbed my neighbors papers first and dropped it off at their door's and couldn't help but admire what an absolutely gorgeous Sunrise! The Eastern sky was just lit up with color, a beautiful Easter Morning! Came in made Breakfast, had a cup of fresh brewed Green Tea, and it's a fantastic start to a beautiful day. For Easter Dinner I prepared a Roasted Veal Shoulder w/ Canned Green Beans and Mashed Potatoes.








We had Veal Clod Boneless Roast for the first time a few weeks ago. It was so tender, moist, and delicious we decided right that we were going to have this for our Easter Dinner. I purchase it from Kroger, which so far is the only place I've seen it sold. This one weighed 2.20 lbs. It comes with instructions on how to prepare it and a pop up thermometer already inserted in it. I seasoned it with McCormick Grinders Sea Salt and Black Peppercorn, Thyme, and Rosemary. Instructions were very easy I just placed the Roast on a rack in a shallow pan. Roasted at 325 degrees for about 72 minutes. Meat thermometer should read 145 degrees for medium rare, 160 degrees for medium and 170 degrees for well done. I prepared our’s at 150 degrees for a shade under medium. When done I let it sit for about 5 minutes before slicing. The Roast came out just as incredible as it did the first time! Juicy and moist and just packed with flavor, and so very tender.








I had made some Italian Pasta Salad, yesterday, for an Appetizer for today. It always tastes better after it refrigerates overnight. Made it with Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, fresh Shredded Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, and McCormick Grinder Italian Seasoning. For one side I opened up a Mason Jar of our Canned Green Beans, canned last summer. Then I also prepared our favorite household Mashed Potato, Bob Evan’s Original Mashed Potatoes. Finally reheated the Pillsbury Rustic French Bread I baked yesterday. Quite an Easter Feast! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.










Kroger Private Selection Veal Shoulder Clod Roast

Place Roast on a rack in a shallow pan. Insert ovenproof meat thermometer so tip is centered in the thickest part of Veal, not in fat. Roast at 325 degrees for 31 – 34 minutes per pound for medium doneness. Meat thermometer should read 145 degrees for medium rare, 160 degrees for medium and 170 degrees for well done.
