Tried a new recipe for Breakfast this morning, Baked Diced Potato Breakfast Skillet. I prepare Diced Potatoes and Ham Skillet but never this way. I preheat the oven on 400 degrees. I used the Cast Iron
Skillet and prepared a package of Simply Potatoes Steak House Seasoned Diced Potatoes. Cooked them for 16 minutes, flipping them over several times. Removed the Skillet from the heat. Then with the back of a spoon, made 2 indention in the potatoes and cracked an egg into each well. Baked at 400 degrees for 11 minutes until egg whites were completely set and yolks begin to thicken but are not hard. Took it out of the oven and sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Put it back in the oven and baked it 1 minute longer until the cheese was melted. It came out delicious! Mom even had it instead of her usual McDonald's.
Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.
I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. The Crust
has excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. The Naan Bread is 150 calories and 21 net carbs per serving which is 1 Naan Bread. Mom really enjoyed them, so its Parent Approved! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
