A delicious, low calorie, and low carb recipe for Baked Catfish, passed along to me by my friend Jenny! At just 61.9 calories and a mere 4.3 in carbs it makes for a perfect dish for anyone with diabetes or for those just watching the calories and carbs. This would work well with Tilapia also. Baked Catfish Parm
Ingredients
1 lb Catfish fillets
3 Tbsp Sour Cream, nonfat or reduced
1/3 Cup Grated Parmesan cheese
2 Tbsp White All Purpose Flour
1/8 Tsp Black Pepper
1/4 Tsp Paprika
1/4 Tsp Parsley Flakes
* Sea Salt to taste *
Directions
1 Preheat oven to 450 degrees F.
2 Cut fish into 4 equal portions and brush lightly with sour cream.
3 Combine Parmesan cheese, flour, pepper, parsley flakes, and paprika. Dip fish in mixture, turning to coat both sides. Place on a sprayed shallow baking pan.
4 Bake 8 to 12 minutes, or until done.
