Dinner Tonight: Bison Smoked Cheddar Burger w/ Baked Crinkle Fries





 I'm having one of those Wild Idea 1/4 lb. Buffalo Burger . I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it in Extra Virgin Olive Oil about 3 1/2 minutes per side. It fried up perfectly! Great tasting and juicy Burger and as good as it looks in the picture it tasted even better. I topped it with a slice of Bordon’s Smoked Cheddar Cheese and served it on a Healthy Life Whole Grain Bun. I love these Buffalo Burgers!

For a side I had I baked some Alexia Crinkle Fries. Baked at 450 degrees for 20 minutes and I seasoned them with Sea Salt and Ground Black Pepper. For dessert later/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Jennie - O OVEN READY™ Whole Turkey


Well I got our Thanksgiving Turkey this morning at our local Walmart. For the second year in a row were going with the Jennie - O OVEN READY™ Whole Turkey. There's just going to be 4 of us so the Jennie - O OVEN READY™ Whole Turkey will be plenty, with some great leftovers! It comes frozen and in it's own cooking bag. Cooking Instructions:
OVEN COOKING METHOD:
Preheat oven to 375 °F.
Remove frozen turkey from white outer package.
Do not remove turkey from FOOL PROOF. cooking bag.
Place in a roasting pan with at least 2" high sides.
Note - Do not increase oven temperature, cooking bag may melt at higher temperatures.
Cut six 1/2 inch slits in top of FOOL PROOF. cooking bag.
Pull bag up and away from turkey, to release vacuum.
Place pan in oven, allowing room for bag to expand without touching the oven racks or walls.
Roast the turkey until a meat thermometer inserted into the center of the breast reaches 170°F.
Note - Meat temperature increases rapidly during last hour of cooking.
Let turkey rest 15 minutes, cut open top of oven bag.
Watch out for hot steam and juices.
Heat gravy as directed on pouch.

APPROXIMATE OVEN ROASTING TIMES IN 375°F. OVEN TEMPERATURE:
11-12 lbs 4-1/4 to 4-1/2 hours.
12-13 lbs 4-1/2 to 5 hours.

Progresso Kitchen Favorites Classic Lasagna w/ Toasted Whole Grain Bread


Today’s Menu: Progresso Kitchen Favorites Classic Lasagna w/ Toasted Whole Grain Bread


This has become one of our favorite dinners and our favorite Lasagna recipes, Progresso Kitchen Favorites Classic Lasagna! Its very easy to make as the dinner kit contains the Lasagna Pasta, Tomato Herb sauce, Ricotta Sauce Mix, and Grated Parmesan Cheese. I added 1 lb. Jennie - O Lean Ground Turkey, 1 Cup water, 2/3 Cup 2% Milk, 1 (8 oz.) Shredded Mozzarella Cheese (2 Cups), 1 cup Shredded dutch Gouda, and I also added a bit more seasoning (McCormick Grinder Italian Herb). I combined the Mozzarella and Goda Cheese. Gouda is such a great tasting Cheese and is a perfect melting Cheese. Basically you just layer your ingredients in a 8″ square baking dish and cover and bake at 425 degrees for 30 minutes and bake an additional 10 minutes uncovered. Prepared by the instructions it was 390 calories but I cut that and the carb count down by using Honeysuckle White Extra Lean Ground Turkey instead of Beef and Sargento Reduced Fat 2% Mozzarella Cheese. The Lasagna came out delicious again! Everyone really loves this. I’ve got a quick and easy way to have Lasagna now. The flavor was excellent. The Sauce was thick and well seasoned and the same for the pasta, perfect. I had a side of Aunt Millie’s Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter and then sprinkled Shredded Parmesan Cheese and Sargento Shredded Provolone/Mozzarella on it. Then I baked for 10 minutes until the the bread was toasted. For dessert later a slice of fresh baked Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Ice Cream.






Progresso Kitchen Favorites Classic Lasagna

Directions
Ready to bake in about 20 minutes. You Will Need: 1 lb lean ground beef; 1 cup water; 2/3 cup milk; 1 bag (8 oz) shredded mozzarella cheese (2 cups); nonstick cooking spray and foil. Sauce: Heat oven to 425 degrees F. Brown beef in 10-inch skillet, breaking up beef into small pieces; drain. Stir Tomato Herb Sauce and water into beef; heat to boiling. Reduce heat; simmer 3 to 5 minutes, stirring occasionally. Meanwhile, mix Ricotta Sauce Mix and milk in liquid measuring cup or small bowl, using whisk or fork. Layer: Spray 8-inch square glass baking dish with cooking spray. Layer lasagna: Spread about 2/3 cup beef sauce in dish. Layer with 2 uncooked Pasta sheets (side by side), 2/3 cup beef sauce (cover Pasta with sauce), 1/4 cup ricotta sauce and 1/2 cup mozzarella. Repeat layers twice, starting with Pasta. Add remaining Pasta, beef sauce and mozzarella. Sprinkle with Parmesan Cheese. Kitchen Tip: Substitute 1/4 cup dry red wine for 1/4 cup of the water.

Kitchen Hint of the Day!

Cream of Tomato Soup can be tricky to make from scratch. To keep it from curdling, add the ingredients in the right order: Pour the tomato base into the milk instead of the milk into the tomato. Stirring a small amount of flour into the milk also helps.

I had Italian Herbed Pork Chops with Steamed Asparagus, Rice A Roni, and Whole Grain Bread for dinner tonight. I used Kraft Free Italian Dressing to marinate the Chops and used Thyme, Chives, Basil, and Oregano as my herbs. I've used this recipe several times and really like it. The Italian Dressing combined with Herbs makes the Chops tender and moist with a fantastic flavor.

For sides I had Steamed Asparagus, Rice A Roni (Chicken Flavor), and Whole Grain Bread. The Asparagus is Walmart Marketside Asparagus. It comes in a microwavable bag and you just heat it for 2 minutes and it's done. Really a very easy and quick way to have some good steamed Asparagus! The Rice A Roni Chicken Flavor was the first time I've had Rice A Roni in years. It's new one that comes in a 1 serving microwavable cup. Just add the seasoning packet and add water. Microwave for 3 1/2 minutes, cool for 1 minute and stir and serve! It came out great and tasted like the Rice A Roni I remember. They have 2 or 3 different kinds and look forward to trying them. This one was 190 calories, 41 carbs, and 1 gram fat. i also had Healthy Life Whole Grain Bread.






Italian Herbed Pork Chops

Ingredients:

4 pork loin chops, 3/4-inch thick
1 cup reduced fat Italian dressing
4 tablespoons fresh herbs, chopped (any combination – chives, basil, oregano, rosemary)

Cooking Directions:

Place chops in a resealable plastic bag. Add dressing and herbs; seal and refrigerate 3 to 8 hours. Remove chops from marinade; discard marinade. Fry chops over medium heat (or broil 4 inches from heat) for 8 to 9 minutes, turning once until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 3-minute rest time.

Serves 4.

Quiches
Quiches, especially those made with onions and mushrooms should not be allowed to cool. Both of these vegetables have a high water content, which will be released into the quiche as it cools. The result: a soggy crust and runny filling. If buying pre-made quiche, look for ones that don't have onions or mushrooms, and when making your own, make sure to serve after letting it sit for 10 minutes ( which will prevent oozing ).
