Today’s Menu: Ground Chicken Burger w/ Kicked Up Chili Beans
I had a Ground Chicken Burger with a side of Kicked Up Chili Beans for dinner tonight. The lighter the better in this heat wave your having. I used Tyson Extra Lean Ground Chicken. I added a tablespoon of Italian Style Bread Crumbs to the burger. With lean Chicken it’s tough sometimes keeping it together to form a burger so the bread crumbs really help. I seasoned it with Sea Salt, Ground Black Pepper, and Ground Smoked Cumin. Fried it in Extra Virgin Olive Oil about 4 minutes per side. Served on an Healthy Life Whole Grain Bun and topped with Lettuce, a slice of Monterrey/Jack Cheese and a dab of Jack Daniel’s Smoked Honey BBQ Sauce. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, and a few dashes of Frank’s Red Hot Sauce. Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with fresh Red Raspberries.

Shrimp Pinwheels
The trick is to roll the wraps very tight. If not you won't be able to cut them nicely. Don't just roll them up or you will squish the contents out. You need to lift the part you're rolling and drag it back until its tight.From The Better Homes and Garden web site.
Makes: about 36 slices
Prep: 30 minutes
Chill: 1 hour
Shrimp Pinwheels
ingredients
* 1 ripe Avocado, halved, seeded, and peeled
* 1/2 of an 8-oz. pkg. Low Fat Cream Cheese, softened
* 1/4 cup Catsup
* 1 Tbsp. prepared Horseradish
* 1 tsp. finely shredded Lemon peel
* 2 Tbsp. Lemon Juice
* 1/2 tsp. Chili Powder
* 6 9- to 10-inch red, green, and/or plain Flour Tortillas
* 3 cups shredded Spinach leaves
* 2/3 cup smoked Almonds, chopped
* 10 oz. peeled and deveined cooked Shrimp, chopped
*
Party picks (optional)
Directions
1. In a medium bowl mash avocado with a fork. Add cheese; stir until smooth. Stir in catsup, horseradish, lemon peel, lemon juice, and chili powder.
2. On one tortilla spread 1/4 cup of the avocado mixture, leaving 1-inch border around the edges. Top with a layer of spinach. Sprinkle with a scant 2 tablespoons almonds and about 1/4 cup shrimp. Roll up tightly. Secure with a party pick, if necessary, to prevent unrolling. Repeat with remaining tortillas, avocado mixture, spinach, almonds, and shrimp.
3. Place rolled tortillas on a tray or platter. Cover and chill up to 4 hours before serving. To serve, cut each rolled tortilla into 1-inch slices, discarding ends. Secure with party picks, if necessary. Arrange slices on a serving platter. Makes about 36 slices.

Baked Turkey Tenderloin w/ Fresh Asparagus and...
Today's Menu: Baked Turkey Tenderloin w/ Fresh Asparagus and Penne Rigate Pasta
I used a Jennie-OTurkey Tenderloin that I seasoned with Parsley, Ground Pepper, Sea Salt, and Smoked Ground Cumin. I then marinated the Turkey Tenderloins with JB’s Fat Boy Chipotle BBQ Sauce for about 3 hours in the frige before baking. After marinating I baked it in a pan covering with foil at 350 degrees for 30 minutes and then I took it out basted it with the Fat Boy BBQ Sauce and placed 2 Pineapple Slices, plus about teaspoon of the Pineapple juice, on top of the Tenderloin returned the tenderloin to the oven uncovered and baked another 20 minutes. Moist and flavorful! I made a little extra Pasta and had about half the Tenderloin left, which will make my lunch tomorrow. As sides I had Frsh Asparagus and Dreamfields Penne Rigate Pasta. I cut the Asparagus seasoned it with Garlic Salt and Ground Pepper and then lightly fried it in Extra Virgin Olive Oil, I Can't Believe It's Not Butter, and added Sliced Almonds and Crumbled Turkey Bacon. I also used Dreamfields Penne Rigate Pasta. I usually use Ronzoni Pasta, cheaper price wise, but I found the Dreamfields on sale so I picked up a couple of boxes. After boiling the Pasta I seasoned it with McCormick Grinder Italian Seasoning, just a couple of shakes of Sea Salt , and a teaspoon of Extra Virgin Olive Oil. For a snack/dessert I'll have a bag of Jolly Time 100 Calorie Mini Bag of Popcorn.

Top Sirloin and Sauteed Mushrooms w/ Green Beans and...
Dinner Tonight: Top Sirloin and Sauteed Mushrooms w/ Green Beans and Boiled New Potatoes
I had a Top Sirloin Steak that I seasoned with JB's Fat Boy Premium Steak Rub. I would've liked to grill it but the heat index outside is 110 and the humidity is smothering so I pan fried it in Extra Virgin Olive Oil about 4 1/2 minutes a side, it was a thick cut. Turned out a beautiful medium rare and topped it with sauteed Mushrooms that I seasoned with Smoked Cumin, Sea Salt, Pepper, Parsley, and Thyme. As sides I used some leftover Boiled New Potatoes and leftover Green Beans. Dessert later Breyer's Carb Smart Vanilla Ice Cream topped with some fresh Blueberries.
Vietnamese Pork Rolls
Vietnamese Pork Rolls
These rolls are special, yet not hard to make. A simply dressed green salad with cucumber or radish would be a perfect accompaniment. Cut them on the diagonal or cut the lettuce leaves into thirds and roll up smaller, hors d'oeuvre-size pieces.
Dressing:
1 tablespoon Asian fish sauce
1 tablespoon fresh lime juice
2 teaspoons minced fresh ginger
1 garlic clove, minced
Pinch red pepper flakes
Pork:
1 tablespoon canola oil
1 pound pork cutlets
1 (1/2 pound) head napa cabbage, shredded (3 cups)
1 small red bell pepper, cut into thin strips
8 large Boston lettuce leaves
Salt and freshly ground black pepper
1. For the dressing: Whisk together fish sauce, lime juice, ginger, garlic, and red pepper flakes in a small bowl.
2. For the pork: Heat oil in a large skillet over medium heat. Season pork with salt and pepper and sauté until lightly browned, 3 minutes per side. Remove from heat and slice into thin strips. Toss with 1 tablespoon of the dressing.
3. Combine cabbage, bell pepper, and remaining dressing in a large bowl. Lay lettuce leaves on a clean, dry work surface. Divide pork among leaves. Top with cabbage mixture and roll tightly, tucking edges in as you go. Place rolls, seam side down, on a cutting board, cut in half, and serve.
Makes 4 servings. Prep Time: 15 minutes Cook Time: 20 minutes (includes assembling rolls)
