Beef Cubed Steak w/ Mashed Potatoes and Fresh Green Beans

Dinner Tonight: Beef Cubed Steak w/ Mashed Potatoes and Fresh Green Beans







For Breakfast this morning I prepared a Poached Egg and served it on a Thomas Light English Muffin. Then I also lightly fried a al fresco Chicken Sausage Patty. I also had a cup of Bigelow Decaf Green Tea. My cousin came over today and put down new Mulch in the Flower Beds. Then touched up the wooden deck with some fresh paint and then put a sealant on the ramp outside. Almost done with the outside work! For Dinner tonight I’m preparing a Beef Cubed Steaks w/ Mashed Potatoes and Fresh Green Beans.



I had a package of Meijer Beef Cubed Steak in the freezer that I sat in the fridge overnight to thaw. These are the best Cubed Steak I have ever found by far. They’re good size patties so I’m able to cut them in half and get 2 meals out of 1 patty. They come 2 to a package. This is one of the few times I use Beef.







To prepare the Cubed Steak I seasoned them with Sea Salt and Ground Black Pepper and I then
dusted them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Extra Light Olive Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy.






To go with the Cubed Steak you always have to have Mashed Potatoes! I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I also made a packet of the Pioneer Peppered White Gravy to top the Mashed Potatoes.







For a second side I reheated the leftover Canned Green Beans. Just heated them up in a large sauce pan and done! Then I also baked a loaf of Pillsbury French Bread. For Dessert/Snacks I had a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

To start the day off I toasted a Thomas Light 100% Multi Grain English Muffin. I then  fried 3 slices of Boar’s Head Sweet Slice Ham. As the Ham was almost done I piled it up in the skillet and topped
it with a slice of Sargento Ultra Thin Swiss Cheese. Put the ham on 1/2 the Muffin and I had my Breakfast Sandwich! I also had a cup of Bigelow Decaf Green Tea. Had a shower early this morning and then partly cloudy and 56 degrees out. Not much going on today. Did a load of laundry and then cleaned the house. For Dinner tonight its a Beef Cubed Steak w/ Mashed Potatoes and Fresh Green Beans






When I went to Meijer the day before and I picked up a package of Meijer Beef Cubed Steak. These
are the best Cubed Steak I have ever found by far. They’re good size patties so I’m able to cut them in half and get 2 meals out of 1 patty. They come 2 to a package. This is one of the few times I use Beef.

For Breakfast this morning I prepared made some Simply Potatoes Shredded Hash Browns, heated up
some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. Outside it was back to the rainy and humid weather, 85 degrees. Very bad day with my allergies! Been a tough Spring and Summer on everyone with allergies. Did a little housework and then rest. For Dinner tonight I prepared a Beef Cubed Steak w/ Mashed Potatoes and Cream Style Skillet Corn.



When I went to Meijer last week I picked up a package of Meijer Beef Cubed Steak. These are the best Cubed Steak I have ever found by far. For a 2nd side dish I prepared a can of Glory - Seasoned Cream Style Skillet Corn. It had been awhile since I've had this. To prepare it just emptied the can into a sauce pan and heated to a boil. Reduced the heat, to a low simmer and continued heating until heated through. If you like Corn you’ll love this Glory Corn! Very good Corn side dish.  For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

To start my day off I toasted a Healthy Life Multi Grain English Muffin. I then lightly fried 3 slices of Boar's Head Sweet Slice Ham. As the Ham was almost done I piled it up in the skillet and topped it with a slice of Sargento Ultra Thin Swiss Cheese. Put the ham on 1/2 the Muffin and added a little of Kraft Mayo to the top 1/2 of the Muffin and I had my Breakfast Sandwich! Partly cloudy, humid, and 84 degrees out today. Laid back day today so I got caught up on some little things that needed done. For Dinner tonight its a Beef Cubed Steak w/ Mashed Potatoes, and Fresh Green Beans

are the best Cubed Steak I have ever found by far. They’re good size patties so I’m able to cut them in half and get 2 meals out of 1 patty. They come 2 to a package. This is one of the few times I use Beef.

Next I cooked some more of the fresh Green Beans. Mom’s Cousin dropped some more of them off to us that they had grown. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! For Dessert/Snacks I had a bowl of Skinny Pop – Pop Corn and a Diet Mango Snapple to drink.

For Breakfast this morning I made another Breakfast Sandwich. I made this for Breakfast yesterday and it was so good I wanted another one. First I toasted a Healthy Life Whole Grain English Muffin
. Next I lightly fried a few slices of Boar's Head Sweet Sliced Ham and as they Ham was finishing cooking I topped it with a slice of Sargento Swiss Cheese. In another small skillet as the Ham was cooing I Scrambled some Egg Beater's Egg Whites. Put the Egg Whit Scramble on the English Muffin and topped it with the Ham and Swiss. After Breakfast I started a load of laundry for Mom. Then went and picked up Breakfast for her at McDonald's. I had to wait around the house today for the Hoveround repairman. i needed some repairs done to my Hoveround Mobility Chair. After I had the Chair repaired just did a few things around the house and outside. For Dinner tonight I prepared a Beef Cubed Steak w/ Seasoned Petite Potatoes, Fried Polenta Slices, and Cut Green Beans.

To prepare the Cubed Steak I seasoned them with Sea Salt and Ground Black Pepper and I then
dusted them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Extra Light Olive Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy.









For one side I tried a new one, Private Selection Petite Potatoes Herbes De Provence in Artisan
Seasoning Blend. I purchase these at Kroger. They are similar to the Little Potato Co. Potatoes that I prepare. It comes in a microwavable tray. Just heat in microwave for 5 and 1/2 minutes. Next add a 1 tablespoon of Extra Light Olive Oil and then the Seasoning Packet. Stir and serve! They turned out piping hot and delicious, really like the Seasoning provided.









For one side I prepared Fried Polenta. It’s been a while since I had Polenta so when I was at Jungle Jim’s Market last visit I picked a roll up. I use Frieda’s Organic Traditional Polenta. it comes in a roll,
so all you have do is slice it and then prepare it the way you want. To make it I’ll need Egg Beater’s, Progresso Italian Style Bread Crumbs, Kraft Reduced Fat Grated Parmesan Cheese, and Extra Virgin Olive Oil. To prepare it just lightly coat the slices in the Egg Beater’s and gently shake off the excess. Then dip each slice in the bowl of bread crumbs and coat well. Then I fried the slices, heated the Extra Virgin Olive Oil about 1/4″ deep in a skillet and fry the slices for 2-3 minutes on each side. They fry up golden brown with a nice crust, flavorful, and a moist center.









Then I also heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan
and heat until heated through. Wow, one good Dinner tonight, Mom really enjoyed it! Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Beef Cubed Steaks w/ Potato Pancakes and Cut Italian Green Beans

Dinner Tonight: Beef Cubed Steaks w/ Potato Pancakes, Cut Italian Green Beans, and Baked Garlic Loaf Bread






For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of
Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Outside cloudy and 52 degrees. So this afternoon did some light cleaning around the house and then cleaned and straightened the big freezer up, which it needed! For Dinner tonight I prepared a Beef Cubed Steaks w/ Potato Pancakes, Cut Italian Green Beans, and Baked Garlic Loaf Bread.

So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and
makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). The whole family love’s these Potato Pancakes! They turn out so good and easy to reheat the leftovers.







For another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty
the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans of any kind every day and never get tired of having them.









I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. Love this Bread! We've been using this instead of the Multi Grain Bread of late. For Dessert/Snack later a bowl of Skinny Pop - Po Corn with a Diet Dr. Pepper to drink.

Manischewitz Potato Pancake Mix

DirectionsMakes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

For Breakfast this morning I prepared a favorite of mine. Outside cloudy and a high of 50 degrees! After Breakfast went to Kroger for Mom and stopped by
McDonald's to pick up Breakfast for Mom and Dad. Back home did a load of laundry and then after
Lunch headed to the ATM at the Bank, got gas, and had the car a much needed wash. Huge line with people getting their car washed, took about 20 minutes to get through. For Dinner tonight I prepared Beef Cubed Steaks w/ Peppered White Gravy, Mashed Potatoes, and Green Beans.

Topped the Cubed Steak and Mashed Potatoes with it.





To go with the Cubed Steak you always have to have Mashed Potatoes! I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I also made a packet of the Pioneer Peppered White Gravy to top the Mashed Potatoes.











Then I heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.














Cube Steak
Cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding with a meat tenderizer, or use of an electric tenderizer. The name refers to the shape of the indentations left
by that process (called “cubing”). Many professional cooks insist that regular tenderizing mallets cause too much mashing to produce a proper cube steak, and insist on either using specialized cube steak machines, or manually applying a set of sharp-pointed rods to pierce the meat in every direction. This is the most common cut of meat used for chicken fried steak.

In Canada as well as in some parts of the United States, cube steak may be called a minute steak, because it can be cooked quickly.
Others distinguish minute steak as:
* simply referring to the cut, which is not necessarily tenderized;
* thinner than cube steak (hence does not need tenderizing);
* cut from sirloin or round, while cube steak cut is from chuck or round.
The term “minute steak” is also used in the United Kingdom, where the term “cube steak” is little known.

Beef Cubed Steak w/ Peppered White Gravy, Mashed Potatoes, and Green Beans

Dinner Tonight: Beef Cubed Steak w/ Peppered White Gravy, Mashed Potatoes, and Seasoned Pinto Beans



For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento
Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Mostly sunny out there but its one cold start this morning, 24 degrees! We had a high of 45. After Breakfast I headed off to Kroger to pick up a few things for Mom and our Christmas Tree. Stopped by McDonald's and picked up Breakfast for Mom and Dad. Cleaned the house this afternoon and had to replace a couple of our floor heat registers. For Dinner tonight I prepared Beef Cubed Steaks w/ Peppered White Gravy, Mashed Potatoes, and Seasoned Pinto Beans.



When at Meijer I always pick up a couple of packages of the Meijer Beef Cubed Steak. They are the
best Cubed Steak I have ever found by far and one of the very few times I have Beef. They’re good size patties so I’m able to cut them in half and get 2 meals out of 1 patty. They come 2 to a package and cooked the other Cubed Steak for Mom. This is one of the few times I use Beef. Normally I use Buffalo but as far as I know no one makes Cubed Bison Steak, at least not yet!








To prepare the Cubed Steak I seasoned them with Sea Salt and Ground Black Pepper and I then
dusted them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Extra Light Olive Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy. I also made a packet of the Pioneer Peppered White Gravy Mix. Topped the Cubed Steak and Mashed Potatoes with it.
