Cumin Spiced Pork Chop w/ Mashed Potatoes,Seasoned Butter Beans, and Baked Italian Loaf Bread

Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes, Seasoned Butter Beans, and Baked Italian Loaf Bread

I made Biscuits and Gravy for Breakfast this morning for me and Mom. I used Pillsbury Biscuits and Pioneer Peppered White Gravy. Dad is now at a local rehab center to continue his rehab. The doctor said he would be there at least 2 weeks or more. Mom headed over at noon but I'm staying home today to catch up on work around and outside the house. Had a full day of cleaning today until the early afternoon and then I got my 4 wheel mobility cart out for a while to enjoy this beautiful day! It's sunny and 70 degrees. For dinner tonight I prepared Cumin Spiced Pork Chop w/ Mashed Potatoes,Seasoned Butter Beans, and Baked Italian Loaf Bread.

I grabbed a couple of Pork Chops from the freezer, that I had purchased from Costco, and let it thaw
overnight in the fridge. Then to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork. Hard to beat these Costco Pork Chops, always top quality.

I served it with some Bob Evan’s Mashed Potatoes, which I just microwave and serve. Then I also
heated up a can of Margaret Holmes Seasoned Butter Beans. I came across these while at Walmart yesterday and thought I would give them a try! To prepare them just empty the contents into a small sauce pan. Cover and bring to a boil. Stir and reduce heat. Then just simmer until ready to eat. I'm sold on these after the first spoonful! Nice sized Butter Beans that are perfectly seasoned. Another good one to have in the pantry! All Margaret Holmes products are some of the best canned items you can buy. I also had a half loaf of Pillsbury Italian Loaf Bread leftover that I reheated. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

How do you make butter beans even better? Just slow simmer in Margaret Holmes’ down-home
Southern spices! A slightly larger variety of Lima Beans are used to produce this classic Southern favorite.

Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and Baked Italian Loaf Bread

Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and Baked Italian Loaf Bread

Happy Easter everyone! Hope you are having a good one! Wow, what a bright moon last night and early morning! Beautiful Moon out. Had a light Breakfast of a toasted Healthy Life Whole Grain English Muffin, topped with I Can't Believe It's Not Butter. After Breakfast I made an early run to Walmart, needed printing ink and paper. Then stopped in Meijer to pick up a few items and back home for the day! It's a beautiful Easter Day out there, mostly sunny and high near 70 degrees! Got the cart out for a while this afternoon. Rode around the neighborhood and down by the lake, so nice out! Mom and Dad went to an Easter Dinner with some friends. For my dinner I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and Baked Italian Loaf Bread.

I just didn't feel like preparing some big Easter dinner, so I went with a delicious comfort food meal. I grabbed a Pork Chops from the freezer that I had purchased from Costco and let it thaw overnight in the fridge.

Then I also heated up a can Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. And finally I baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

Dinner Tonight: Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

Wow a perfect day out today! About 78 degrees, sunny, and a bit of a breeze. Had an early doctor's appointment with dermatologist, just a 6 month check up, got the car washed, and ran a couple of errands, then home for the day. Cleaned up the grill a bit and then got the cart out to enjoy the rest of the day. For dinner tonight it's a Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

Still using the bag of Tilapia I had purchased from Walmart. Good thing to have in the freezer, their easily thawed, easy to prepare , and delicious! I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. Served it on a Meijer Bakery Perfection Deli Mini Wheat Sub Bun.

For a side for my Fish Sandwich I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert/snack later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

5 oz. Buffalo Sirloin and Sauteed Mushrooms w/ Baked Potato and Green Beans

Dinner Tonight: 5 oz. Buffalo Sirloin and Sauteed Mushrooms w/ Baked Potato and Green Beans

Not quite as cold today, high in the 40's. No rain but cloudy and dreary out. Not a whole lot going on today, a bit of laundry and watching Football. I had bought some Honey Crisp Apples from Kroger the other day and they were possibly some of the largest and juicy Honey Crisps I had ever had! Good crop coming in so far. Have to fast after 10:00 pm tonight, Doctor's appointment in the morning and they'll be doing blood work, checking Cholesterol and Sugar. So for dinner I wanted a filling and healthy dinner so tonight I prepared 5 oz. Buffalo Sirloin and Sauteed Mushrooms w/ Baked Potato and Green Beans.

I used my favorite brand of Buffalo, Wild Idea Buffalo 5 oz. Petite Top Sirloin Steak. I seasoned it with Sea Salt and Ground Black Pepper and pan fried it, in Canola Oil. Fried it about 4 minutes per side, to a medium rare. The taste of Wild Buffalo Steaks are just incredible! The meat has a sweet taste to it and cooks up so easy. I topped it with some Sauteed Baby Bella Mushrooms.

For a side I had a Baked Potato that I seasoned with Sea Salt, Ground Black Pepper, and I Can't Believe It's Not Butter. i also heated up a small can of Del Monte Cut green Beans and had a slice of Klosterman Wheat Bread. For dessert later a Jello Sugarless Double Chocolate Pudding topped with a dab of Cool Whip Free.

Wild Idea Buffalo 5 oz. Petite Top Sirloin Steak
Famous for their flavor, these juicy steaks are perfect for the grill. The small size makes for a great meal for one. 5 oz.

One of America's Favorites - Pudding

Christmas pudding

Pudding most often refers to a dessert, but can also be a savory dish.
The word pudding is believed to come from the French boudin, originally from the Latin botellus, meaning "small sausage", referring to encased meats used in Medieval European puddings.

In the United Kingdom and some Commonwealth countries, pudding refers to both savory dishes such as Yorkshire pudding, black pudding, suet pudding and steak and kidney pudding, and rich, fairly homogeneous starch- or dairy-based desserts such as rice pudding and Christmas pudding. The word "pudding" is also used as a synonym for the dessert course.
In the United States and Canada, pudding characteristically denotes a sweet milk-based dessert similar in consistency to egg-based custards, instant custards, or a mousse, though it may also refer to other types such as bread and rice pudding.

Rice pudding, known as kheer, from India

The original pudding was formed by mixing various ingredients with a grain product or other binder such as butter, flour, cereal, eggs, suet, resulting in a solid mass. These puddings are baked, steamed or boiled.
Depending on its ingredients such a pudding may be served as a part of the main course or as a dessert.
Boiled pudding was a common main course aboard ships in the Royal Navy during the 18th and 19th centuries. Pudding was used as the primary dish in which daily rations of flour and suet were prepared.

Steamed pies consisting of a filling completely enclosed by suet pastry are also known as puddings. These may be sweet or savory and include such dishes as steak and kidney pudding.

Jello Pudding

The second and newer type of pudding consists of sugar, milk, and a thickening agent such as cornstarch, gelatin, eggs, rice or tapioca to create a sweet, creamy dessert. These puddings are made either by simmering on top of the stove in a saucepan or double boiler or by baking in an oven, often in a bain-marie. These puddings are easily scorched on the fire, which is why a double boiler is often used; microwave ovens are also now often used to avoid this problem and to reduce stirring.
Creamy puddings are typically served chilled, but a few, such as zabaglione and rice pudding, may be served warm. Instant puddings do not require boiling and can therefore be prepared more quickly. Kraft Foods, under its gelatin dessert brand Jell-O, is the primary producer of pudding mixes and prepared puddings in North America.
This pudding terminology is common in North America and some European countries such as the Netherlands, whilst in Britain egg-thickened puddings are considered custards and starch-thickened puddings called blancmange.
