Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears
Another Cloudy here ingood old West Chester. We had a high in the mid 30's with, from what we're hearing, much colder weather a day away. Did some laundry and some house cleaning for my day. For dinner tonight it's Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears!
I had the Chili freezer so I set the container in the fridge overnight to thaw. I had this batch a while back and always make enough to freeze. It stores great in the freezer and reheats perfectly. Below is the full recipe and directions. I also baked up some Cornbread Ears. I love this Chili!
I use Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.
Then the serious eats begin, comfort food with Chili! With the sweetness of the Buffalo combined with all those spices and beans, it’s just hard to beat! You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made the Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).
*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat-free sour cream, or serve with some home made cornbread.

It's been a rainy and cloudy morning, with a 100% chance of 3 Bean Buffalo Chili for the day! Started off with some Jennie - O Turkey Bacon, a Scrambled Egg, and Thomas Light English Muffins. Then an extended workout this morning, and it's off to a good day! Did a light load of laundry and that was about it. Got my Chili in the Crock Pot and ready for some NFL Football. Tonight I prepared some Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears.
I’ve been out of Chili for a while now, I usually have a couple of containers froze in the freezer. And I've been wanting some for a while now. It’s loaded with nothing but good things. Shrimp and Andouille Sausage Gumbo w/ Cornbread Ears
Dinner Tonight: Shrimp and Andouille Sausage Gumbo w/ Cornbread Ears
Beautiful day out today, started off cloudy but the sun came out and about 52 degrees. Went to Meijer early this morning, they had some good sales going on. I loaded up on Jennie - O Turkey Products and Seafood. I also grabbed a Tide Liquid Detergent for Mom and noticed something, the amount of Detergent in the bottle. It used to contain 100 ounces, now it's 92 ounces. Same bottle size, same price, but less for your money! Just another Product disappearing act. For dinner tonight I prepared Shrimp and Andouille Sausage Gumbo w/ Cornbread Ears.
I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base. It uses Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet,sliced Johnsonville Andouille Sausage and a few shakes of Frank’s Red Hot Sauce for 10-15 minutes. Then I added Extra Large Shrimp and simmered another 5-10 minutes. Said and done the Gumbo is ready to serve and It turned out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish.
I also made some Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a few Honeycrisp Apple Slices and a Dole Mini Banana.

YOU WILL NEED:

1 tablespoon oil
1 pound andouille or other cooked sausage, cut into 1/2-inch slices
2 3/4 cups water
DIRECTIONS:
1. HEAT oil in large skillet (12-inch) on medium-high heat. Add sausage; cook and stir 5 minutes or until lightly browned.
2. STIR in water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.
VARIATIONS
Chicken Gumbo: Prepare as directed, using 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes, in place of the sausage. Cook and stir 5 minutes or until chicken is no longer pink.
Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.
