It was scrambled Eggs and Toast for Breakfast this morning. I Scrambled 2 medium sized Eggs and
topped them with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Then I toasted 2 slices of Healthy Life Whole Grain Bread, lightly buttered with I Can't Believe It's Not Butter. Also the morning cup of Bigelow Decaf Green Tea. What a beautiful Summer morning! I went out about day break to get the morning papers and the East horizon was just bursting with dazzling colors - Blues, Pinks, Reds, and Orange had it lit up! Another nice day again also, sunny and 85 degrees and a bit more humid. A little warmer and more humid than the last 2 days. After Breakfast I went to Kroger for Mom for a few items. Did some quick cleaning and then headed up to the hospital to see dad. He's doing real good, nice color and strong voice. They are going to do more tests later this afternoon. Hopefully he'll be released by tomorrow, it's his Birthday he'll be 95! For Dinner tonight I prepared a Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans.
I love having Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing
me back! I had it in the freezer so I grabbed a fillet and let it thaw overnight in the fridge. It’s another one of those beautiful Grouper fillet! To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added Zatarain’s Seafood Breading Mix Seasoned. Shook until all it was well coated. Shook off the excess and pan fried it in Extra Virgin Olive Oil, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish, Love Seafood! Plus as you can tell as big as these fillets are there will be plenty of leftovers for lunch tomorrow!
While at Jungle Jim’s I picked up a package of the Little Potato Company Savory Herb Potatoes. I
had these once before and really enjoyed them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up. Then I also heated up a can of Del Monte Low Sodium Cut Green Beans. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream.

Microwave
In three easy steps, you have perfectly steamed and seasoned potatoes!
1. Simply remove the cardboard sleeve and seasoning pack. The plastic film stays on to aid in steaming the potatoes.
2. Place the convenience tray in the microwave. Cook on high for 5 minutes*.
3. Let the tray rest for 2 minutes then carefully remove plastic film and stir in seasoning pack. Caution – the contents will be very hot. If desired, add 1 tbsp. of butter or olive oil.
Serve and enjoy!
