Grilled Turkey and Fresh Salsa
INGREDIENTS
1 medium English cucumber, chopped
3 cups peeled and chopped peaches
1 cup chopped red onion
2 tablespoons chopped ginger
½ cup brown sugar
½ cup apple cider vinegar
1 teaspoon crushed red pepper flakes
1 (24-ounce) package JENNIE-O® Applewood Smoked Tenderloin, cut into six equal pieces
DIRECTIONS
1) For salsa in medium bowl combine, cucumber, peaches, onion, ginger, brown sugar, vinegar and pepper flakes; mix and set aside.
2) Grill tenderloins as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Cut into 6 equal pieces. Serve turkey topped with salsa.
* Always cook to an internal temperature of 165°F.
