Butternut Squash and Apple Soup
Ingredients
2 tablespoons olive oil
1 yellow onion, chopped
2 celery ribs, chopped
4 cups cubed butternut squash
1 Granny Smith apple, peeled and chopped
6 cups vegetable broth
2 teaspoons chopped fresh thyme leaves
½ teaspoon kosher salt
¼ teaspoon freshly ground pepper
Directions
In large Dutch oven over medium-high, heat oil. Sauté onion and celery 7 minutes or until translucent. Stir in butternut squash and apple and cook 5 minutes. Add broth, thyme, salt and pepper. Bring to a boil; reduce heat to medium-low.
Cover and simmer 30 minutes or until tender. Using stick blender, puree until smooth.
