Easy Turkey Cupcakes
Love lasagna but don’t love all the noodles? This kid-friendly Italian recipe is your noodle-free dream come true. Made with fresh basil, melted mozzarella and ground turkey, it’s under 300 calories per serving!
Ingredients
½ (16-ounce) package JENNIE-O® Lean Ground Turkey
1 cup pizza sauce
3 tablespoons chopped fresh basil
¼ teaspoon freshly ground pepper
18 wonton wrappers
1 cup shredded pizza cheese
½ cup grated Parmesan cheese
½ cup ricotta cheese
Directions
STEP 1: Heat oven to 350°F. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add pizza sauce, basil and pepper. Simmer for five to 10 minutes or until thickened.
STEP 2: Cut circles from wonton wrappers to fit muffin pan. Place round of wonton in the bottom of six muffin cups.
STEP 3: Combine cheeses in a small bowl. Spread cheese mixture on wonton wrapper and add turkey mixture. Repeat with layers twice. Cover with wonton wrapper. Sprinkle with cheese mixture.
STEP 4: Bake for 20 minutes or until edges are brown. Let cool for five minutes. Run knife around edge of each lasagna cupcake before removing.
* Always cook to an internal temperature of 165°F.
