Make-Ahead Cheesecake-Stuffed Baked Apples
Ingredients
5 Granny Smith apples
½ teaspoon ground cinnamon
8 ounces ricotta cheese
¼ cup sugar
2 eggs, lightly beaten
2 tablespoons flour
1 teaspoon vanilla extract
½ cup caramel sauce, warmed
¼ teaspoon kosher salt
5 cinnamon sticks, if desired
Directions
* Heat oven to 350°F.
* Cut tops off apples. Scoop out core and flesh, leaving ¼-inch border. Sprinkle with cinnamon.
* In medium bowl, stir together ricotta cheese, sugar, eggs, flour and vanilla. Spoon ricotta cheese mixture into apples. Place on baking sheet and bake 25 minutes. Let stand 10 minutes. Drizzle with warmed caramel sauce and sprinkle with kosher salt. Garnish with cinnamon sticks, if desired.
* To save time, the cheesecake mixture can be made up to one day ahead of time.
