Leftover Cranberry Relish Salad
Ingredients
6 cups torn bibb lettuce leaves
1 avocado, sliced
2 ounces goat cheese, crumbled
¾ cup cranberry relish
¼ cup toasted pistachios
salt and pepper, if desired
Directions
In large bowl add lettuce, avocado and goat cheese. Top with relish and pistachios. Season with salt and freshly ground pepper, if desired. Serve immediately.
