Turkey Goetta, Diced Potatoes, and Egg Breakfast Skillet
Breakfast Menu: Turkey Goetta, Diced Potatoes, and Egg Breakfast Skillet w/ Toast
Couldn't wait to try something new with the Glier's Turkey Goetta! I prepared a Turkey Goetta, Diced Potatoes, and Egg Breakfast Skillet w/ Whole Grain Toast. I knew after frying up the Goetta for Breakfast yesterday it would go great in a Skillet Breakfast or Hash. I was right the Breakfast Skillet turned out as one great Breakfast Dish!
I used Glier's Turkey Goetta, Simply Potatoes Seasoned Diced Potatoes, fresh grated Dutch Gouda Cheese, and 1 Egg (per person). I used a large skillet that I sprayed with Pam and used Canola Oil (1 Tbs) as my Oil and cooked on medium heat. I first added the Diced Potatoes to the skillet, they take the longest to cook. While they were beginning to cook in a separate small skillet I started to brown my Turkey Goetta. I cooked it till it just started to brown and turned the skillet off as it would finish cooking when I added to the Diced Potatoes. When the Potatoes were almost ready I added the Goetta and shredded Gouda Cheese. After adding everything together I gently folded everything twice. I didn't want to stir it because I didn't want to break down the Potatoes or Goetta too much. After plating I topped it with a fried Egg, a Poached Egg would go great with this also. I also had a side of toasted Aunt Millie's Whole Grain Light Bread. It came out delicious! The combination of Diced Potatoes and Turkey Goetta is a good one. I love how the Goetta browns up and gets crispy. I'm glad I finally got around to joining that Goetta Nation!

Lemon-Baked Cod w/ Red Potato Wedges, Seasoned Blackeye Peas, and...
Dinner Tonight: Lemon-Baked Cod w/ Red Potato Wedges, Seasoned Blackeye Peas, and Whole Grain Bread
Well we had one last day of nice weather around here today, about 42 degrees and sunny. Over night they say we have our coldest weather of the year moving in, an Artic Cold Front! Upcoming days with his in the teens, Brrrr. Well it is Winter. Keeping it warm and cozy on the inside with a delicious Baked Fish Dinner, Lemon-Baked Cod w/ Red Potato Wedges, Seasoned Blackeye Peas, and Whole Grain Bread.
This is the first time I've prepared the Lemon Baked Cod and it's a keeper recipe! Easy to prepare and delicious! To start mix I Can't Believe It's Not Butter and Lemon Juice. in another bowl, mix Flour, Light Salt and White Pepper. Dip fish into Butter mixture; coat Fish with Flour mixture. Then place Cod in ungreased square baking dish, 8x8x2 inches and pour remaining Butter mixture over Fish; sprinkle with Paprika. Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with Parsley Sprigs and Lemon Slices if desired. The Butter and Lemon Juice gives the Cod an incredible flavor! This would go good with any mild fish. I left the complete recipe at the end of the post.

For side dishes to go with the Cod I prepared Seasoned Blackeye Peas, Fried Red Potato Wedges, and Aunt Millie's Light Whole Grain Bread. The Seasoned Blackeye Peas are Margaret Holmes Brand, just heat and serve. I also used Simply Potatoes Red Potato Wedges that I skillet fried. Alight dessert tonight, one of my last Honey Bell Oranges with a couple of Honey Crisp Apple slices.

Lemon-Baked Cod
Ingredients
1 lb Cod Fish Fillets
1/4 cup I Can't Believe It's Not Butter, melted
2 tablespoons Lemon Juice
1/4 cup all-purpose Flour
1/2 teaspoon Morton's Light Salt
1/8 teaspoon White Pepper
Paprika
Directions
*If fish fillets are large, cut into serving pieces.
*Mix butter and lemon juice.
*In another bowl, mix flour, salt and white pepper.
*Dip fish into butter mixture; coat fish with flour mixture.
*Place fish in ungreased square baking dish, 8x8x2 inches.
*Pour remaining butter mixture over fish; sprinkle with paprika.

I am a Member of the Goetta Nation!!
I've got my member card and as of 7:20 am this morning I am a proud Member of the Goetta Nation! I had been wanting to try Goetta for quite sometime so while shopping the other morning I came across Glier's Turkey Goetta and i grabbed a couple of loaves of it, and am I glad I did!
I sliced some up into sausage like patties and pan fried them in Canola Oil. They fried up fantastic, crispy and delicious. Much like Sausage Patties but they fry up a bit more crispy and the seasoning and Steel Oats in them. But they are delicious and will be part of my Breakfast menus from now on! These would make a fantastic Hash!
For Breakfast I had 2 Goetta Turkey Patties, a serving of Hash Browns and buttered Toast. For my parents I prepared Eggs Sunnyside Up, Turkey Goetta Patties, Hash Browns, and Buttered Toast. My Dad had tried Goetta years ago but my Mom had never tried either. She is now a Goetta lover also! Love that Glier's Turkey Goetta!

Couldn't wait to have these Soft Tortillas again, Old El Paso Stand ‘n Stuff Soft Flour Tortillas. This is one of my favorite Taco Shells, these are great! Their a Flour Soft Stand Up Tortilla. Only 160 calories and 24 carbs per serving which is 2 Tortillas. Their formed into a soft bowl and keep their shape after warming them up and loading them up! Because of their shape you can really load them up with your fillers. If you come across these grab a box, you’ll love them!
Tonight's Dinner Fix'ins are; Jennie – O Extra Lean Ground Turkey – 99/1. I pan fried it in Canola Oil and seasoned it with Ground Cumin, Sea Salt, Cilantro Flakes, Diced Green Onions, and a 1/2 packet of Old El Paso Taco Seasoning. I also added Dole Chef's Cut Diced Pineapple and Mango, Del Monte Sweet Corn, Sliced Black Olives, Bush’s Low Sodium Dark Red Kidney Beans, Lettuce, fresh Shredded Dutch Gouda Cheese, and Taco Bell Creamy Chipotle Sauce. If you’ve never tried the Taco Bell Creamy Chipotle Sauce it’s another you have to try. It’s got a nice creamy thick sauce with just the right amount of Chipotle heat! A little high in calories and fat but it’s one of those that’s so good it’s worth it every now and then. The Dole Chef's Cut Diced Pineapple and Mango is another new item I came across at Walmart the other day. They come frozen and already diced, perfect for any recipe. Adding this to all the other ingredients was the right touch! Along with heat provided by different things the fruit gives that slightly sweet taste, great pairing! These could be the best Tacos I've ever prepared. My parents were going to have something else for their dinner till they seen how good they looked. They agreed with me delicious! For dessert later some Newman's Own Blackbean and Corn Salsa with Tostito's Baked Scoops.

Kitchen Hint of the Day!
If your gutsy enough to scale your own fish, rub white vinegar on the scales, let the fish sit for 10 minutes, and they'll rub right off. Put the fish in a large plastic bag first (hold by the tail) to keep the scales from flying all over your kitchen.

Bison Sirloin & Sauteed Mushrooms w/ Green Beans, Skillet Fried Red Potato Wedges,...
Today's Menu: Bison Sirloin & Sauteed Mushrooms w/ Green Beans, Skillet Fried Red Potato Wedges, and Baked Garlic Knot Bread
It's a beautiful and Sunny day out but really cold! But the days are getting longer so the change of season's is getting closer. For dinner i prepared Bison Sirloin & Sauteed Mushrooms w/ Green Beans, Skillet Fried Red Potato Wedges, and Baked Garlic Knot Bread. I was using my last Bison Sirloin that I had in the freezer and like clock work I received my order from Wild Idea Buffalo!
The Bison Sirloin was Great Range Brand Bison meat.I seasoned the Sirloin with McCormick Grinder Steakhouse Seasoning and pan fried it in Canola Oil, about 3 1/2 minutes per side to medium rare. It was a thinner Steak so it didn't take long to fry. I topped it with some Sauteed Baby Bella Mushrooms. I can eat saute Mushrooms with every meal, I love Mushrooms!
For sides with my Bison I prepared Green Beans, Red Potato Wedges, and garlic Knot Bread. The Green Beans were Del Monte Single Serving. First time I prepared the Red Potatoes, they were Simply Potatoes brand. They come packaged, cut, and seasoned. Just prepare them how you like, bake or fry, or in Potato Dishes. I'll have to get more of these they turned out delicious! I also baked some more of the Walmart Bakery Garlic Knot Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
