Butternut Squash and Apple Soup

Ingredients
2 tablespoons olive oil
1 yellow onion, chopped
2 celery ribs, chopped
4 cups cubed butternut squash
1 Granny Smith apple, peeled and chopped
6 cups vegetable broth
2 teaspoons chopped fresh thyme leaves
½ teaspoon kosher salt
¼ teaspoon freshly ground pepper



Directions
In large Dutch oven over medium-high, heat oil. Sauté onion and celery 7 minutes or until translucent. Stir in butternut squash and apple and cook 5 minutes. Add broth, thyme, salt and pepper. Bring to a boil; reduce heat to medium-low.

Cover and simmer 30 minutes or until tender. Using stick blender, puree until smooth.

The Kiwi.......

* Containing almost 20 vital nutrients, including five times the vitamin C of an orange in one serving, kiwis can legitimately be called a super fruit. This fuzzy brown powerhouse with the bright green flesh also is rich in vitamin A, K, E and B, potassium, copper, folate, and fiber.

* Eating 2-3 kiwis a day has been shown to reduce the potential of blood clotting by 18% and reduce triglycerides by 15%. Many individuals take aspirin to reduce blood clotting, but this causes many side effects including inflammation and intestinal bleeding.

* Kiwifruits can be left to ripen for a few days to a week at room temperature, away from exposure to sunlight or heat. Placing the fruits in a paper bag with an apple, banana or pear will help to speed their ripening process. Ripe kiwifruits can be stored either at room temperature or in the refrigerator.

Sweet Italian Turkey Sausage w/ Baked Crinkle Fries

Dinner Tonight: Sweet Italian Turkey Sausage w/ Baked Crinkle Fries




For Breakfast I had a couple of medium size Eggs that I scrambled along with 2 toasted slices of Healthy Life Whole Grain Bread, also had my morning cup of Bigelow Decaf Green Tea. Did a few things around the house and then outside got the leaf blower out and cleaned around the deck and driveway. After lunch headed out to go see Dad for the rest of the afternoon. For dinner tonight I prepared a Sweet Italian Turkey Sausage w/ Baked Crinkle Fries.








I used the healthy and delicious Jennie O Lean Sweet Italian Turkey Sausages. I pan fried it, using Pam w/ Olive Oil Cooking Spray and no oil needed. Heated the pan on medium and cooked a total of about 17 minutes, turning the Sausages occasionally. They fry up plump and brown, as always Jennie – O Products always have that fresh taste to them. The Sausages have 160 calories and 0 carbs per Sausage. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with French’s Spicy Brown Mustard. Love these, thank you Jennie – O!



For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. Also had a Diet Dr. Pepper to drink. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

* Cook covered, turning occasionally, 17 – 19 minutes.
* Always cook to well-done, 165º F. as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F.

The Saturday Evening Dessert - Blackberry and Raspberry Fritters with Mascarpone Sorbet

Blackberry and Raspberry Fritters with Mascarpone Sorbet

Simple deep-fried wonton fritters, filled with fresh berries, served with cocoa mascarpone sorbet in a pool of berry juice.

Recipe Ingredients:

Fritters:
6 (6 1/2-inch square) wonton wrappers, quartered
Several raspberries and blackberries
Vegetable oil for deep-frying
Powdered sugar

Sorbet:
1/2 cup water
2/3 cup granulated sugar
1 tablespoon cocoa
1 teaspoon lemon juice
20 ounces Wisconsin Mascarpone cheese

Berry Juice:
1 cup raspberries
1 cup blackberries
1/4 cup granulated sugar

Cooking Directions:

1 - For Fritters: Brush wonton edges with water. Place 1 to 2 raspberries and/or blackberries in middle of one square. Top with another wonton square to enclose fruit. Press edges together to seal.
2 - Deep-fry at 350°F (175°C) for 30 to 60 seconds. Drain on paper toweling. Dust with powdered sugar.
3 - For Sorbet: In small pan over medium heat, bring water, sugar and cocoa to boil. Add lemon juice. Cool completely. Add mixture to Mascarpone. Mix thoroughly. Process in ice cream maker. Freeze until serving.
4 - For Berry Juice: In small pan over medium-low heat, bring berries and sugar to boil. Reduce heat. Simmer 10 minutes. Press through fine sieve.
5 - To Serve: Spoon berry juice onto plates. Place scoop of sorbet onto juice. Top with 2 fritters. Decorate plate edge with cocoa if desired.
