Crock Pot Pork Back Ribs w/ Mashed Potatoes, Green Beans, and Texas Toast (Light)

Dinner Tonight: Crock Pot Pork Back Ribs w/ Mashed Potatoes, Green Beans, and Texas Toast (Light)





For Breakfast this morning I Scrambled a Couple of Eggs, heated up a couple of Johnsonville Turkey Sausage Patties, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Sunny and 50 degrees outside! Not bad weather for January. After Breakfast went McDonald’s to pick up Breakfast for Mom. I’m preparing Crock Pot Ribs for Dinner so I got those on early today. Then it house cleaning today. Dusted, Vacuumed, and did a load of laundry. Tonight its Crock Pot Pork Back Ribs w/ Mashed Potatoes, Cut Green Beans, and Texas Toast (Light).



Last night before I went to bed I put half racks in a Hefty Gallon Plastic Bag then seasoned it JB’s Fat Boy All Purpose Rub and then covered it in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray and added a 1/4 cup of water. Got the Ribs out of the fridge, discarded the Hefty Bags, and put the racks in the Crock Pot where I let it cook and simmer, on low, for about 7 hours. Long up in the afternoon the aroma of the Ribs and BBQ Sauce start to fill the air!


After 7 hours the ribs are ready and now for the hard part of cooking them, getting them out whole without breaking them up! They’re that tender, when eating them you need no knife, the bones just
slide out. Tender, moist and just full of flavor! For us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time. And as always I would like to send out a big thank who ever invented the Crock Pot Liners! I always use them when using the Crock Pot.



For a side dish I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Next I heated up a can of Del Monte Cut Green Beans. Then I also baked some slices of New York Bakery Light Texas Toast, It’s fewer calories, carbs, and fat than normal Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.











Pork Back Ribs – Pork ribs are a cut of pork popular in North American and Asian cuisines. The
ribcage of a domestic pig, meat and bones together, is cut into usable pieces, prepared by smoking, grilling, or baking – usually with a sauce, often barbecue – and then served.


Baby back ribs (also back ribs or loin ribs) are taken from the top of the rib cage between the spine and the spare ribs, below the loin muscle. They have meat between the bones and on top of the bones, and are shorter, curved, and sometimes meatier than spare ribs. The rack is shorter at one end, due to the natural tapering of a pig’s rib cage. Chicken Parmigiana and Texas Toast (Light)

Dinner Tonight: Chicken Parmigiana and Texas Toast (Light)





To start this July 5th morning off I prepared some Simply Potatoes Garlic and Herb Hash Browns, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie's
Light Whole Grain Bread (lightly buttered), and had my morning cup of Bigelow Decaf Green Tea. I've had the Garlic and Herb Hash Browns a few times now and really like them. After eating and doing the dishes I went to McDonald's and picked up Breakfast for Mom. Later on finished touching up a couple of the shutters outside. Then a high school Friend of mine that owns a Land Scaping Business came over and gave me an estimate on some new land scaping for our front yard. I'm wanting to take out all the old Knockout Roses in the front flower bed and the side bed. Replace them with some type of bushes. Still thinking it over but he gave us an estimate so we'll see. For Dinner tonight I prepared Chicken Parmigiana and Texas Toast (Light).



Well I'm trying something new I cam across at Meijer yesterday, Michael Angelo's Chicken
Parmigiana. I was browsing through the Meijer Frozen Foods Department, looking for something new. And I came across the Michael Angelo's Chicken Parmigiana. The picture on the box along with the description of the dish had me sold!









To prepare it you either bake it or microwave it, as most times I'm baking it. To start I preheat the
oven to 400°F. Removed the tray from the carton. Placed the tray on a cookie sheet. Cooked with the film on for 50 minutes. Removed it from the oven and removed the film, let it stand for 5 minutes before serving.










It's surprising just how delicious this is! The Breaded Chicken is fantastic, the Seasoning is spot on, and Spaghetti cam tender. Put all that together and you have one delicious Chicken Parmigiana! They have 13 different Family Dinners and I'm looking forward to trying them!











To go with the Chicken Parmigiana and baked us some slices of New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

COOKING INSTRUCTIONS
* DO NOT THAW. KEEP FROZEN UNTIL READY TO USE.

ONE - PREHEAT OVEN TO 400°F.
REMOVE ENTRÉE FROM CARTON.
TWO - PLACE TRAY ON COOKIE SHEET ON CENTER RACK OF OVEN (6-8" FROM HEATING ELEMENT). COOK WITH FILM ON FOR 45-50 MINUTES.
THREE - CAREFULLY REMOVE ENTRÉE FROM OVEN.
REMOVE FILM, AND LET STAND FOR 5 MINUTES BEFORE SERVING.

The day didn't start off so good for me. About 6:00 this morning as I started to get out of bed my walker tipped over as I was getting up. I didn't fall but as I braced myself to prevent falling my left
arm got caught in the walker and twisted it. At first I thought it broke. After examing it I could tell it wasn't broke but I was in a lot of pain. So I went on to the Emergency Room at a local Hospital. They took X-Rays, which all came back negative. They said my arm was twisted a bit with some inflammation and to just take it easy on my exercise for a day or so and it should be fine. With Dad's Funeral coming Tuesday the last thing I needed was something serious happening. We are waiting till Tuesday for Dad's Funeral. We waited so some family could get into town. I don't know if it's sunk in yet that Dad is gone. So for Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes and Gravy, Cut Green Beans, and Baked Texas Toast.


I love the Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that  easy to prepare meal! I had not had these in a about a month or so. I switched over to Perdue Chicken Strips
for a while so I wanted to change it back to Pilgrim’s. Preheat the oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.





To go with the Chicken I reheated the leftover Bob Evan’s Mashed Potatoes. Just heated it up in the microwave for 1:30 minutes and serve, always just as good as homemade. Next I made a packet of the Pioneer Peppered White Gravy to top the Mashed Potatoes.











Then I reheated up the leftover Del Monte Cut Green Beans. Just reheated those leftovers in the
microwave also. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Coke Zero to drink.

For Breakfast this morning I Scrambled a Couple of Eggs, heated up a couple of Johnsonville Turkey
Sausage Links, toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Humid, rain showers late, and a high of 88 degrees outside. Plus we have a high Pollen count out so that tells me its a good day to stay in as much as possible. Idid have to go to local Kroger for a few items. Then stopped by McDonald's to pick up Breakfast for Mom. I'm preparing Crock Pot Ribs for Dinner so I got those on early today. Then it house cleaning today. Dusted and Vacuumed. Then later repotted a couple of Herb Plants I got the other day. Tonight its Crock Pot Pork Back Ribs w/ Mashed Potatoes, Cut Green Beans, and Texas Toast (Lite).

For Breakfast; Poached an Egg, fried up a couple of Jennie – O Turkey Breakfast Sausage Patties,
toasted a Aunt Millie’s Whole Grain English Muffin (lightly buttered), and a cup of Bigelow Decaf Green Tea. A beautiful morning turned into a beautiful day, 56 degrees and sunny! After Breakfast I headed off to Meijer to do some grocery shopping. On the way home I stopped by the Golden Arches of McDonald's and picked up Breakfast for Mom and Dad. Mom went on to Church and I stayed with Dad. After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. Afterward kicked back and watched the NCAA Basketball Tournament Games. For Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes/Gravy, Cut Green Beans, and Baked Texas Toast.

Crock Pot Pork Back Ribs w/ Mashed Potatoes, Green Beans, and Texas Toast (Lite)

To start my morning off I made my favorite Breakfast. I prepared some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento
Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. I'm ready to start my day! Our beautiful streak of weather continues. A bit warmer out today, 75 degrees and sunny! I got my cart out and continued with some yard work this afternoon. I borrowed the neighbors power sprayer and power washed the deck and driveway. Then swept out the shed and straightened it up. Later on just rode around the neighborhood on my cart. I purchased a couple of packages of 1/2 Rack of Pork Loin Back Ribs from Meijer Wednesday  and having them for Dinner tonight. Mom and Dad love Ribs, as do I! Whole Wheat Spaghetti and Turkey Meatballs

Dinner Tonight: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Multi Grain Bread






To start my morning off I made a Poached Egg, prepared some al fresco Apple Maple Chicken
Sausage Breakfast Patties, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Great way to start the day! 75 degrees and sunny out today, another beautful late Summer day. Did a couple of loads of laundry for Mom. Then it was cleaning the house after Lunch, dusted and ran the vacuum. With everything done I went up to see Dad for a bit this afternoon. Doing good but he's having a problen retaining water and his ankles and feet swell then. They get one problem solved and another one pops up on him. So much for those Golden Years, not so Golden! For Dinner tonight its Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Multi Grain Bread.



To make everything thing I’ll need; Ronzoni Healthy Harvest Whole Wheat Spaghetti, Farm Rich Turkey Meatballs, Ragu Mushroom Sauce, Kraft Reduced Fat Grated Parmesan Cheese, Morton’s Lite Salt, and a slice of New York Bakery Lite Texas Toast.










As always I’m using Ronzoni Healthy Harvest Whole Wheat Spaghetti. I always try use Ronzoni
Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. Ronzoni Healthy Harvest Pastas is another product that I can find around here anymore. Meijer is the only one that has it consistently. Walmart will carry the Spaghetti from time to time. To prepare the Spaghetti; Just boil your water and add the Spaghetti. Stir it often and cook it for 8 minutes. Drained it and put the Spaghetti into a medium size bowl. Seasoned it and set aside.






As the Spaghetti was cooking I started the Sauce and Meatballs cooking. To prepare the Farm Rich
Turkey Meatballs; I used a medium size sauce pan and sprayed it with Pam Cooking Spray. Added my Ragu sauce and started to heating it on medium heat. I then added the Meatballs, stirring well. Stirred it frequently, cooking for about 11 minutes. as usual the Ragu Sauce is spot on! The Farm Rich Turkey Meatballs came out great also! They have good flavor and they are only 140 calories and 3 net carbs per serving, 5 Meatballs per serving.







To put the meal together I grabbed a bowl and made a of Spaghetti in it. Topped it with the Turkey Meatballs and Sauce and the Kraft Reduced Fat Grated Parmesan Cheese.  I also baked a slice of New York Bakery Lite Texas Toast. Really enjoyed tonight’s Dinner! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Keep frozen until ready to prepare. Due to differences in appliances, cooking times may vary and require adjustment. Microwave instructions developed using an 1100 watt microwave oven.

Conventional Oven:Conventional oven
* Preheat oven to 350°F.
* Arrange Turkey Meatballs in a single layer on baking sheet and place on middle rack of oven.
* Bake half bag for 22-23 minutes or full bag for 28-29 minutes.

Microwave:Toaster oven
* Arrange Turkey Meatballs in the center of a microwave-safe dish.
* Add 1 TBSP water and cover with a paper towel.
* Microwave 1 serving (5 pieces) on HIGH for 1 minute 30 seconds.
Stove Top:Microwave
* Place Turkey Meatballs in a saucepan and cover with your favorite sauce.
* Set to MEDIUM heat, cover, and heat for 25-30 minutes (full bag), stirring often.
Slow Cooker:Microwave
* Place Turkey Meatballs in the slow cooker and cover with your favorite sauce.
* Set to HIGH, covered, and heat for 3-4 hours (full bag)
