Dinner Tonight: Baked Battered Cod Sandwich w/ Baked Crinkle Fries





For Breakfast this morning I Scrambled a couple of Eggs, lightly fried some of the leftover Baked
Ham, toasted a Healthy Life Whole Grain English Muffin, and had a cup of Bigelow Decaf Green Tea. Rain, Thunderstorms, and a high of 70 degrees. Real Spring time weather! After Lunch we went over to spend some time with Dad. He seems to going down hill quickly now, talks out of his head a lot. Sure hate to him suffer and go through this. Not much else going on. For Dinner tonight I prepared a Baked Battered Cod Sandwich w/ Baked Crinkle Fries.





I used Trident PubHouse Battered Cod. I always buy a couple of boxes of this when I’m at Jungle
Jim’s International Market and now Kroger carries them also. They have all different types and breading of Fish fillets. I like the Battered Cod because it’s a little lower in calories and carbs than the others. I baked the Cod at 425 degrees for 16 minutes, turning once. This is the best tasting frozen fish I’ve found, nice size Fillets with an excellent Beer Batter Breading! Served it on a Aunt Millie’s Reduced Calorie Hamburger Bun.





To go with our Sandwiches I baked some of my favorite Fries – Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Preparation and Cooking Instructions
Keep frozen until ready to use. Cook product to 160 degrees F internal temperature. Cooking times vary with equipment, adjust as needed.

Conventional oven – preheat to 425 degrees F. Place product on baking sheet and cook for 16 to 18 minutes or until product is crisp. Turn product halfway through bake time for best results.

Convection oven – preheat to 400 degrees F. Place product on baking sheet and cook for 10 to 12 minutes or until product is crisp. Turn product halfway through bake time for best results.
Deep fryer – preheat oil to 350 degrees F. Fry for 3½ to 4½ minutes until product is golden brown.
