Dinner Tonight: Baked Ham and Swiss Sub w/ Baked Fries
For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just
cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. A little better day out there than yesterday, high of 32 degrees and partly sunny. After Lunch I headed up to a local rehab center to see a friend of mine's father. He had lost part of his foot to Diabetes and was having a rough time. It was good seeing everyone, just under better circumstances next time! For my Sub I'll need; Aunt Millie’s Deli Style Whole Grain Mini Sub Buns, Boar's Head Sweet
Sliced Ham, al fresco Uncured Chicken Bacon, 2 slices of Sargento Ultra Thin Swiss Cheese, Kraft Light Mayo w/ Olive Oil, and Kraft Fat Free Zesty Italian Dressing.
I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. If you’ve never tried this Bacon you need to give it a try. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! Sit the Bacon aside until ready to use.
To make the Sub I took the bottom half of the Bun and layered it the Mayo and a slice of Swiss
Cheese. Then layered it with the Ham, 2 slices of Swiss Cheese, Chicken Bacon, a drizzle of the Italian Dressing, and topped it with the top half of the Sub Bun. Last, I drizzled more of the Italian Dressing over to of it.
I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and
baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Baked Ham and Swiss Subs!
I also baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later, while watching the Super Bowl, a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.
Aunt Millie's Whole Grain Mini Sub Buns
Baked with whole grain flour for added nutrition or both kids and adults, this mini sub buns is smaller version of the classic sub bun. Each bun is 5" long and has a split top, and are hinge sliced, fully baked and ready to eat.
