Baked Ham and Swiss Sub w/ Baked Fries

Dinner Tonight: Baked Ham and Swiss Sub w/ Baked Fries





For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just
cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham.  I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. A little better day out there than yesterday, high of 32 degrees and partly sunny. After Lunch I headed up to a local rehab center to see a friend of mine's father. He had lost part of his foot to Diabetes and was having a rough time. It was good seeing everyone, just under better circumstances next time! For Dinner tonight, a  Baked Ham and Swiss Sub w/ Baked Fries




For my Sub I'll need; Aunt Millie’s Deli Style Whole Grain Mini Sub Buns, Boar's Head Sweet
Sliced Ham, al fresco Uncured Chicken Bacon, 2 slices of Sargento Ultra Thin Swiss Cheese, Kraft Light Mayo w/ Olive Oil, and Kraft Fat Free Zesty Italian Dressing.












I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. If you’ve never tried this Bacon you need to give it a try. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! Sit the Bacon aside until ready to use.





To make the Sub I took the bottom half of the Bun and layered it the Mayo and a slice of Swiss
Cheese. Then layered it with the Ham, 2 slices of Swiss Cheese, Chicken Bacon, a drizzle of the Italian Dressing, and topped it with the top half of the Sub Bun. Last, I drizzled more of the Italian Dressing over to of it.












I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and
baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Baked Ham and Swiss Subs!














I also baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later, while watching the Super Bowl, a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.












Aunt Millie's Whole Grain Mini Sub Buns

Baked with whole grain flour for added nutrition or both kids and adults, this mini sub buns is smaller version of the classic sub bun.  Each bun is 5" long and has a split top, and are hinge sliced, fully baked and ready to eat.

A light Breakfast this morning. I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker's Sugar Free Blackberry Jam. And as usual I had my morning cup of Bigelow Decaf Green Tea. Outside it's mostly cloudy and a high in the mid 60's. So after Breakfast I headed over to the hospital to see Dad. He seemed to be doing better today. They have run a series of tests on him and they all keep coming back negative. Really worried about him. Back home, I had the carpets all cleaned yesterday. So today I moved the furniture back in place. For Dinner tonight I prepared a Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup.








It’s a Comfort Food Dinner tonight, Grilled Ham and Swiss Cheese Sandwich w/ Creamy Potato
Soup. To make my Grilled Ham Cheese I’ll be using; Kraft Reduced Fat Mayo, French's Yellow Mustard,  Boar's Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread.






To prepare it I started by buttering the outside half of a slice of bread. Next spread the Mayo on the bottom slice of Bread, next layered the Ham, spread the Mustard, and added the slice of the Sharp Cheddar. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Love these Grilled Ham and Cheese Sandwiches.





For the Soup I'm using a new favorite of mine, Bear Creek Creamy Potato Soup Mix. To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

Well they are wanting to release Dad from the Hospital but he's too weak to come home and all the Rehab and Recovery Centers are full. So I spent most of the day on the phone scrambling to find a place for Dad to go. The Case worker was calling around as I was and we finally got Dad into a unit in neighboring Fairfield, Ohio. So stressful today! Went on up to see Dad later in the afternoon. One long day today, ready to eat! Tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.





I was running late the other day and made a Ham and Swiss Sandwich for a quick Dinner. I enjoyed it
so much I'm having it again tonight for Dinner but I'm Grilling it! To prepare the Sandwich I'll need; Boar's Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French's Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Kroger Bakery Sour Dough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees.




While the griddle was heating I prepared the Sandwich. Took a slice of the Sour Dough Bread and
topped it with some of the Kraft Mayo, the Boar's Head Ham, the Sargento Swiss, French's Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Sour Dough Bread just makes everything that much better! I'll have to buy another loaf of it sometime soon. Love the combo of Ham and Swiss!




I had already preheated the oven, so as the griddle was heating I baked my fries, I'm using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Weight Watcher's Snack Size Peanut and Caramel Ice Cream candy Bar.

Kitchen Closed!

Dinner Tonight: Kitchen Closed today


We had to call 911 and have Dad taken back to the Hospital. He was so weak he couldn't even get up
from chair. It looks as though they are going to keep him there for 1-2 days and then move him to a Rehab and Assisted Living Center to see if they can build his strength back up, hopefully it's not a permanent move. So its been a very long day for all of us. I picked up a Salad at the Hospital Cafeteria for a late Lunch. I returned home about 5:00 this afternoon. Too tired to cook! I just made a Ham Sandwich with a few Potato Chips for Dinner. I used Boar's Head Sweet Sliced Ham, French's Yellow Mustard, Kroger Bakery Sour Dough Bread, Ruffle's Reduced Fat Potato Chips, Helluva French Onion Dip. Not a bad last-minute Dinner! Kitchen will reopen tomorrow!
