Kitchen Hint of the Day!

If you only have a few carrots to peel, a standard vegetable peeler will get the skins off. But what if you have a whole bunch? To slip the skin off carrots in one giant batch, drop them in boiling water, let them blanch for 5 minutes, then place them in cold water for a few seconds. The skins should slide off easily.
