Dinner Tonight: Fried Ocean Perch w/ Potato Pancakes




For Breakfast this morning it was just a cup of Bigelow Green Decaf Green Tea and an Eggo
Waffle.After Breakfast started a load of laundry for Mom. Got that started and then me and Mom headed over to a Medical Store here in the area. We are going to buy Dad one of the chairs that lifts you up out of the chair. He has trouble getting up from a sitting position so this will really help him. We wanted to get one before he returns home. After that we went down and picked up my car at the mechanics, up and running again! So for Dinner tonight its Fried Ocean Perch w/ Potato Pancakes



I picked up the Ocean Perch at Meijer a couple of weeks ago. I had used half and had the other half in the freezer. I laid a bag of Perch in the fridge overnight to thaw. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Virgin Olive, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them for 6 minutes. 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!




For a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I
didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). For dessert later a Healthy Life Dark Fudge Swirl Frozen Greek Yogurt.







Manischewitz Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Red Beans Turkey and Rice

This recipe is the epitome of classic Cajun comfort food. Fill your house with the aroma of thyme, lean turkey and stewed tomatoes. This low-fat recipe is ready to eat in under 60 minutes!

Ingredients
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 cup finely chopped onion
1 green pepper, finely chopped
½ cup sliced celery
2 teaspoons minced garlic
1½ teaspoons thyme
1 teaspoon hot pepper sauce
½ teaspoon salt
1 (14½-ounce) can cajun-style stewed tomatoes
1 (15-ounce) can red kidney beans, rinsed and drained
¼ cup tomato paste
4 cups cooked white or brown rice
¼ cup chopped fresh parsley

Directions
STEP 1: Cook ground turkey in a large, deep skillet, as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

STEP 2: Add onion, green pepper, celery and garlic. Cook for five minutes or until slightly softened; stirring occasionally.

STEP 3: Sprinkle with thyme, hot pepper sauce and salt. Cook for five minutes, stirring occasionally.

STEP 4: Add Cajun-style stewed tomatoes, kidney beans and tomato paste. Cook uncovered for ten minutes or until hot with flavors blended, stirring occasionally.

STEP 5: Serve over cooked rice. Sprinkle with fresh parsley and serve with additional hot sauce if desired.
Always cook to an internal temperature of 165°F.

Leftovers - Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight: Leftovers - Shrimp and Smoked Turkey Sausage Gumbo w/ Baked Italian Loaf Bread





Just a cup of Bigelow Decaf Green Tea for Breakfast. Then about 7:30 Mom drove me over to pick my car up at the shop. Everything good to go again! From there we went to a Med Store and picked out a lift chair for Dad, it will be delivered Monday afternoon. Dad is doing better and slowly getting back on his feet. He's having 2 a day therapy sessions.



Went to Kroger late this afternoon for a few items and got caught in one of the hardest rains I've ever
been caught in! I was in a electric shopping cart bringing my groceries out, it was just a light sprinkle. As I was unlocking the car the monsoon came out of no where! In seconds I was drenched. It was coming down so hard cars were pulling off because they couldn't see. I finally managed to get my groceries in the car and grabbed my walker and got in the car. I had a towel laying in the back seat so I was a few minutes attempting to dry off some. I live about 1 1/2 miles from Kroger and about a 1/4 mile from home the rain stopped and at the house it hadn't rained a drop! I had to take my shirt, hat, shoes and socks off before going in the house. Threw everything in the washing machine and went ahead and did the laundry. Now are whole county is under a flood warning and still no rain here at the house, amazing! Anyway it's leftovers for dinner tonight. I reheated the Shrimp and Smoked Turkey Sausage Gumbo for my Dinner tonight. I've left the original post from last night below. Later and stay dry!




What is not to like with this meal of; Gumbo, Shrimp, and Smoked Turkey Sausage! To make it I
used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp (that I precooked before adding to the Gumbo), and Frank’s Red Hot Sauce.







The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. Very easy to prepare, takes about
25-30 minutes. I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Condiment of the Week - Sambal

ingredients such as shrimp paste, fish sauce, garlic, ginger, shallot, scallion, palm sugar, lime juice, and rice vinegar or other vinegars. Sambal is an Indonesian loan-word of Javanese origin (sambel).

Various recipes of sambals usually are served as hot and spicy condiments for dishes such as lalab (raw vegetables), ikan bakar (grilled fish), ikan goreng (fried fish), ayam goreng (fried chicken), ayam penyet (smashed chicken), iga penyet (ribs) and various soto soup.



Traditional sambals are freshly made using traditional tools, such as a stone pestle and mortar. Sambal can be served raw or cooked. The chili pepper, garlic, shallot and tomato are often freshly ground using a mortar, while the terasi or belacan (shrimp paste) is fried or burned first to kill its pungent smell as well as to release its aroma. Sambal might be prepared in bulk, as it can be easily stored in a well-sealed glass jar in the refrigerator for a week to be served with meals as a condiment. However, some households and restaurants insist on making freshly-prepared sambal just a few moments prior to consuming in order to ensure its freshness and flavor; this is known as sambal dadak (lit. "impromptu sambal" or "freshly made sambal"). Nevertheless, in most warung and restaurants, most sambal is prepared daily in bulk and offered as a hot and spicy condiment.

Today some brands of prepared, prepacked, instant, or ready-to-use sambal are available in warung, traditional markets, supermarkets and convenience stores. Most are bottled sambal, with a few brands available in plastic or aluminum sachet packaging. Compared to traditional sambal, bottled instant sambals often have a finer texture, more homogenous content, and thicker consistency, like tomato ketchup, due to the machine-driven manufacturing process. Traditionally made sambals ground in a pestle and mortar usually have a coarse texture and consistency.


The most common kinds of peppers used in sambal are:

* Adyuma, also known as habanero: a very spicy, yellow, and block-shaped pepper.
Fresh chilis are the main ingredient for a sambal
* Cayenne pepper: a shiny, red, and elongated pepper.
* Madame Jeanette: a yellow–light green, elongated, irregularly-shaped pepper.
* Bird's eye chili, also known as cabe rawit in Javanese: a very spicy, green–red, elongated pepper approximately 10 millimetres (0.39 in) wide and 50 millimetres (2.0 in) long.
* Chili peppers known as lombok in Javanese: a mild, green–red, elongated pepper. Green chili peppers are milder than red ones.
* Cabe taliwang: a pepper spicier than the Bird's eye chili, similar in spiciness to the naga jolokia, its name is supposedly the origin from which Lombok Island, or "the Island of the Chili", derives its name.


Due to the increasing popularity of Asian food within the United States, sambal can be found in many larger grocery stores in the ethnic foods section.
