Kitchen Hint of the Day!

When making a Meatloaf keep this in mind - The higher the grade of ground meat, the less fat and shrinkage will result. However, keep in mind that less fat means less flavor and moistness.

Muenster Cheese Turkey Burger w/ Baked Potato

Dinner Tonight: Muenster Cheese Turkey Burger w/ Baked Potato

Cloudy and cool out today, a high in the low 60's. Had a Poached Egg, and 2 Eckrich Smoked Turkey Sausage Links, on a Healthy Life Whole Grain Muffin. Love those Poached Eggs! Had the morning work out and cleaned up around the house a bit. Then later ran a couple of errands for Mom and back home. For dinner tonight I prepared a Muenster Cheese Turkey Burger w/ Baked Potato.

I’m using the Jennie – O Turkey Burger Patties. Picked up a package at Meijer a while back and have
them in the freezer. I sat one pattie in the fridge overnight to thaw. They’re already pre-made Patties and come fresh or frozen so all I did was season it with Sea Salt and Ground Black Pepper and fry! I fried them in Extra Virgin Olive Oil about 7 minutes per side. Always cook to 165°F as measured by a meat thermometer. As always the Burger came out moist, flavorful, and delicious! Served it on a Kroger Lite Wheat Hamburger Bun and topped with a slice of Simple Truth Muenster Cheese.

For a side with my Burger I had a Baked Potato seasoned with Sea Salt and Ground Black Pepper and I Can’t Believe It’s Not Butter. For dessert later a Healthy Life Dark Fudge Swirl Frozen Greek Yogurt.

One of America's Favorites - Pepperoni

Pepperoni, also known as pepperoni sausage, is an American variety of salami, usually made from
Packaged pepperoni
cured pork and beef mashed together. Pepperoni is characteristically soft, slightly smoky, and bright red in color. Thinly sliced pepperoni is a popular pizza topping in American-style pizzerias and is used as filling in the West Virginia pepperoni roll. It is also used to make some varieties of submarine sandwiches.

The term pepperoni is a corruption of peperoni, the plural of peperone, the Italian word for bell pepper. The first reference using pepperoni to refer to a sausage dates to 1919.

Even if in Italian the word is plural (like the Italian word "salami", plural of "salame"), the English word pepperoni is used as a singular uncountable noun.

In Italian, the word "peperoncino" (diminutive of peperone) only refers to hot and spicy peppers, or sometimes to small, sweet kinds, while "peperoni" refers only to sweet peppers, such as bell peppers.

Pepperoni is a cured sausage similar to the spicy salamis of southern Italy, such as salsiccia Napoletana piccante, a spicy dry sausage from Naples, or the soppressata from Calabria. The main differences are that pepperoni has a finer grain (akin to salami of Milan, a spiceless regional variant of salami), is usually softer, and is produced with the use of an artificial casing (instead Italian salami are produced using natural gut for casing). Pepperoni is mass-produced to meet the demand for the sausage.

Pepperoni is usually made from a mixture of pork and beef. Turkey is also commonly used as a substitute, but the use of poultry in pepperoni must be appropriately labeled in the United States. In the Caribbean Islands and other parts of the world, donkey and horse meat is a common ingredient. Sodium nitrite (or sometimes saltpeter), usually a part of modern curing agents, protects against botulism and other forms of microbiological decay. Sodium nitrite itself is white, but reacts to give pepperoni its reddish color. The use of paprika and cayenne also contribute to its reddish color.

Pepperoni sausages are commonly sold in two sizes: an inch in diameter for pizza and two to three inches in diameter for sandwiches. Pepperoni is sold whole, chopped, or in slices, and is commonly found in American deli counters.

Ingredients like peppers, garlic, fennel, or mustard seeds can be included in the production of
Slices of New York-style pizza topped with pepperoni
pepperoni to provide different flavors and levels of spiciness. Likewise, the type of meat used to produce pepperoni can vary. Pepperoni may be substituted by similar cured meats like Genoa salami, soppressata, or chorizo.

Pepperoni has a tendency to curl up from the edges in the heat of a pizza oven. Some pepperoni is produced in thicker slices, so that the edges curl intentionally.

According to Convenience Store Decisions, Americans annually consume 251.7 million pounds of pepperoni on 36% of all pizzas produced nationally.

"Meatless Monday" Recipe of the Week - Zesty Mushroom Tofu Stir Fry with Spring Greens

For this week's "Meatless Monday" Recipe of the Week I have a Zesty Mushroom Tofu Stir Fry with Spring Greens. Combine shimeji mushrooms, medium soft tofu, spring greens, and tamari sauce for a zesty stir-fry recipe. It's all from the PBS website, one of my favorite recipe sites!    http://www.pbs.org/food/recipes/

Zesty Mushroom Tofu Stir Fry with Spring Greens

Ingredients
2 Tbsp olive oil
5 large cloves garlic
1 pound mushrooms (any kind)
1 pound block of firm organic tofu (not silken tofu)
1/2 pound of spring greens (young kale, spinach, dandelion greens, bok choi, etc)
Juice of 1 lemon (about 3 Tbsp)
2 Tbsp tamari sauce (or 3 Tbsp shoyu soy sauce)
Optional: 1 Tbsp each chopped chives and sesame seeds, for garnish

Directions
1 - Slice the tofu into cubes (about half an inch in size). Place the cubes into a medium-sized bowl and add the lemon juice and tamari, mixing gently to cover the tofu. Allow the cubes to marinate for about 10 minutes while you prepare the other ingredients.
2 - Slice the mushrooms and finely chop the garlic. Place both in a skillet with the olive oil. Sauté gently over medium heat, until the mushrooms begin to release their juices and soften a bit. Add the marinated tofu, cooking for another 4 or 5 minutes. Meanwhile, roughly chop the greens and add them to the stir fry. Cook for a minute or so, until the greens have wilted but are still vibrant green in color. Taste and add a bit more tamari or lemon juice if it needs it, to suit your taste. Remove from heat.
3 - Serve over rice, or your favorite cooked grain, or if you prefer, with toast. Sprinkle chopped chives and sesame for garnish.
