Diabetic Dish of the Week - PARMESAN-CRUSTED HALIBUT WITH SPICY BRUSSELS SPROUTS
This week's Diabetic Dish of the Week is, PARMESAN-CRUSTED HALIBUT WITH SPICY BRUSSELS SPROUTS. A Corn Flake Crusted Halibut along with Seasoned Brussels Sprouts, Dinner is served! PARMESAN-CRUSTED HALIBUT WITH SPICY BRUSSELS SPROUTS
Ingredients
Halibut:
canola oil cooking spray
1/4 cup all-purpose gluten-free flour
2 egg whites
1 Tbsp fat-free milk
1 1/2 cup corn flakes, lightly crushed
1/4 fresh parsley, rinsed and chopped
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
4 Pacific/Alaskan halibut fillets (4 oz/125 g each), rinsed and pat dry
1/4 cup grated Parmesan cheese
1 lemon, cut into wedges
Brussels Sprouts:
2 packages (10 oz/300g) Brussels sprouts, rinsed and sliced in half
1 Tbsp canola oil
1/8 tsp red pepper flakes
1/4 tsp garlic powder
1/8 tsp salt
1 tsp Parmesan cheese
Directions
1 - Preheat oven to 425F (220C) and place oven rack in upper third of oven.
2 - Coat baking sheet with canola oil cooking spray and set aside.
3 - In shallow bowl, place flour. In another shallow bowl, combine egg whites and milk. In third shallow bowl, combine corn flakes and parsley. Sprinkle halibut with pinch of salt, pepper and garlic powder. Lightly dust each fish fillet with flour, dip in egg mixture, then coat with corn flake-parsley mixture. Place on baking sheet. Sprinkle each fillet with 1 Tbsp Parmesan cheese and bake for 15 to 17 minutes until fish is opaque and flakes when pulled apart with fork. Set aside and keep warm.
4 - In large bowl, toss Brussels sprouts with 1 Tbsp canola oil, red pepper flakes, garlic powder, salt and Parmesan cheese. Transfer to baking sheet that has been coated with canola oil cooking spray and roast for 10 minutes until tender, turning every 2-3 minutes.
5 - Serve alongside halibut with fresh lemon wedge.

Halibut Enchiladas
Dinner Tonight: Halibut Enchiladas
Cloudy and rain all day, high in the 60's though. Good day to stay in and get some house cleaning out of the way, and a couple of loads of laundry. Glad I had that to do because there's not much else going on. For dinner tonight a new recipe and another Enchilada, Halibut Enchiladas.
I found this recipe on a Kraft Daily Recipe email I receive daily. Just another one that sounded too good not to try, Halibut Enchiladas. Why a Fish Enchiladas you ask, just for the Halibut! That was bad, sorry. Anyway to make this dish I'll be needing; Halibut Fillets, Sargento Reduced Fat 4 Cheese Mexican Shredded Cheese, Daisy Reduced Sour Cream, Kraft Mayo w/ Olive Oil (Reduced Fat), Chopped Red Onions, Sliced Black and Green Olives, Chopped Green Chiles, Old El Paso Reduced Sodium Taco Seasoning Mix, Mission Flour Tortillas (6 inch), Old El Paso Enchilada Sauce (1-2 10 oz. Cans), and Shredded Lettuce. A big blend of goodness!
To prepare them; I preheated the oven to 350ºF. Placed the Halibut in single layer in shallow baking
dish. Baked for 25 minutes, until the Fish flaked easily with a fork. Flaked the fish and placed it in a medium bowl. Stirred in 1 cup Cheese, Sour Cream, Mayo, Red Onions, Black and Green Olives, green Chilies and Taco Seasoning mix. Then spooned down the centers of Tortillas; roll up. Pour half the Enchilada Sauce onto bottom of 13x9-inch pan. Top with Enchiladas, seam-sides down. Cover with remaining Sauce and Cheese. Baked 25 to 35 min., until heated through. Top with Lettuce, Olives, and Cheese. My first Halibut Enchiladas and definitely not my last! I love Fish but I wasn't real sure on how it would do as an Enchilada, but the Halibut works out perfect! I've left the original Kraft Recipe along with it's link at the bottom of the post. Got me another Keeper Recipe! For dessert later a Jello Sugar Free Dark Cheery Jello.

1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup MIRACLE WHIP Dressing
1/2 cup chopped onions
1 can (2.25 oz.) sliced black olives, drained, divided
1 can (4 oz.) chopped green chiles, drained
1 pkg. (1-1/4 oz.) TACO BELL® Taco Seasoning Mix
12 flour tortillas (6 inch)
1 can (19 oz.) enchilada sauce, divided
1 cup shredded lettuce
1 tomato, chopped make it

Baked Battered Halibut Sandwich w/ Baked Herbed Fingerling Potato Wedges
Dinner Tonight: Baked Battered Halibut Sandwich w/ Baked Herbed Fingerling Potato Wedges
60 degrees around here and in this part of March, We'll take it! Rain is coming but it beats cold and snow. While at Jungle Jim's Market i picked up a box of one my favorite frozen Fish, Trident PubHouse ® Oven Ready Battered Halibut. They have about 3 or 4 of different kinds of frozen Fish and they are all excellent! It's tough finding Trident Brand though, Jungle Jim's Market is the only one I've found that carries it.
So for dinner tonight I prepared a Baked Battered Halibut Sandwich w/ Baked Herbed Fingerling Potato Wedges. As I said the Fish is frozen, I just baked it at 425 degrees for 15 minutes, turning it once. The Fish came out moist and delicious and the batter makes a delicious crust on it. I think it's on of the better frozen Fish on the market. I served it on an Aunt Millie's Light Whole Grain Bun and topped it with a bit of Heinz Premium Tarter Sauce.
I cut the Fingerling Potatoes into wedges and seasoned them with a bit of Extra Virgin Olive Oil, McCormick Grinder Sea Salt and Black Peppercorn, Basil, and Thyme. I then baked them at 400 degrees until they were fork tender, about 25 minutes. I love fresh Potato dishes and the combination of the Herbs and Sea Salt made these a winner! For a dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.
Trident PubHouse ® Oven Ready Battered Halibut
PubHouse battered seafood combines the traditional appeal of English style fish 'n chips with the convenience of individually frozen, ready to serve product. PubHouse fillets are hand cut natural fillets dipped in our exclusive beer flavored batter.
Preparation and Cooking Instructions
Keep frozen until ready to use. Cook product to 145 degrees F internal temperature. Cooking times vary with equipment, adjust as needed.
Deep fryer – preheat oil to 350 degrees F. Fry for 3½ to 5 minutes or until product is golden brown. Shake baskets occasionally to prevent from adhering.
Convection oven – preheat to 400 degrees F. Place product on baking sheet and cook for 14 to 16 minutes or until product is crisp. Turn product halfway through bake time for best results.
Conventional oven – preheat to 425 degrees F. Place product on baking sheet and cook for 15 to 18 minutes or until product is crisp. Turn product halfway through bake time for best results.
