Dinner Tonight: Fried Walleye w/ Cheesy HashBrown Potatoe's and Seasoned Pinto Beans
For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a
bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. One delicious Breakfast! Outside passing thunderstorms and only a high of 60 degrees! We are getting part of Hurricane Harvey today and tomorrow. Well we had hoped Dad might be coming home but that's been put on hold as he has pneumonia! They caught it early though and they'll go ahead and treat it at the rehab center. So he'll be there longer than what we hoped. For Dinner tonight I prepared Fried Walleye w/ Cheesy HashBrown Potatoe's and Seasoned Pinto Beans
While at Meijer yesterday I seen they had some beautiful looking Walleye Fillets they had just got in
and just couldn’t pass them up. I rinsed it off in cold water, sliced into smaller pieces, and put them in a sealed plastic bag in the fridge until ready to use today. To prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!
For one side I prepared some Idahoan Cheesy Hash Brown Potatoes. I love all the Idahoan products and this one no different. As the others its baked in a casserole dish. To make the dish I’ll need 1 box of the Idahoan Premium Steakhouse Cheesy Hashbrown Potatoes, 2 Tbsp Blue Bonnet Light Butter, 1 3/4 cups boiling water, and 1/2 cup 2% Milk.
To prepare it; Preheat the oven on 450°F . Then in a 1 1/2 qt casserole dish, combine potatoes,
contents of sauce pouch, 2 Tbsp butter, and 1 3/4 cups boiling water. Add the 1/2 cup milk and stir to combine. Bake uncovered at 450°F for 25 minutes. Sprinkle crunchy onion topping on top of potatoes. Let stand 5 minutes, then serve. Well seasoned and Cheesy.
For another side an item I haven’t had in a while, Margaret Holmes Seasoned Pinto Beans. I
purchased a couple of cans of this at a nearby Walmart, they carry a good selection of a lot of the Margaret Holmes Products. To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. And I have delicious side dish! I love Beans of all kinds and these Seasoned Pinto Beans are delicious, love the Seasoning. For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.
