When grilling those burgers.....

Poke a hole in the middle of the hamburger patties while shaping them. The burgers will cook faster and the holes will disappear when done.

Fried Gulf Coast Grouper w/ Smashed Potatoes and Green Beans

Dinner Tonight: Fried Gulf Coast Grouper w/ Smashed Potatoes and Green Beans




Had to fast overnight for my 4 month checkup at the Family Doctor; checking Sugar, Cholesterol, and such. Glad it's over, I don't like going to a doctor and especially a Family Doctor. After that I had to take Dad for a Doctor appointment later in the morning. Back home did the usual, cleaned up the house and cleaned up around the house a bit. Have one of my favorites for dinner tonight, fresh Florida Gulf Coast Grouper! Tonight I prepared a Fried Gulf Coast Grouper w/ Smashed Potatoes and Green Beans.






A good friend of mine gave me a call early last evening and said he just came in from Florida and he was coming by to drop off some Gulf Coast Grouper off to me! And this was fresh caught Grouper, never frozen. He came home Monday and it was caught on early Sunday evening off the Gulf Coast of Florida. They filleted what they had and put them on ice, then straight to my fridge! Now that's fresh! A big “thank you” to Jim for the Grouper! Wow I’ve got some beautiful fillets of Grouper. I coated the fillets in seasoned flour that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn Medley. I fried the fillets in Extra Virgin Olive Oil on medium heat until they were a  golden brown, flipping them over one time. What fantastic tasting fillets! So fresh and meaty, love these Groupers. I'll have leftover Grouper for lunch tomorrow.


For sides I had Smashed Potatoes, Green Beans, and a slice of Klosterman Wheat Bread. To make the Smashed Potatoes I used Petite Gourmet Potatoes. I cut each Potato in half. Then after putting them in a bowl I added a tablespoon of Extra Virgin Olive Oil and then McCormick Grinder Sea Salt and Black Peppercorn Medley, Dried Dill, and Parsley and mixed until all were coated. I then boiled them for 20 minutes. Then put them in a serving bowl and with a fork smashed them up. Added I Can’t Believe It’s Not Butter and continued to smash and mix. The Green Beans were Del Monte Cut Green Beans. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Diabetic Dish of the Week - Turkey Vegetable Chili Mac

This week's Diabetic Dish of the Week is Turkey Vegetable Chili Mac. Using the Jennie - O Extra Lean Ground Turkey Breast makes this dish even healthier.

 Turkey Vegetable Chili Mac

Ingredients
3/4 lb Jennie - O Extra Lean Ground Turkey Breast
1 (15 ounce) can Reduced Sodium Black Beans, rinsed and drained
1 (14 ounce) can Mexican-Style Tomatoes, undrained
1 (14 ounce) can Diced Tomatoes, undrained
1 cup Frozen Corn
1/2 cup onion, chopped
2 Garlic Cloves, minced
1 teaspoon Mexican Seasoning
1/2 cup Whole Grain Elbow Macaroni, uncooked
1/3 cup Reduced-Fat Sour Cream


Directions
1 - Spray large skillet with nonstick cooking spray. Add turkey; cook until no longer pink. Combine cooked turkey, beans, tomatoes, corn, onion, garlic and seasoning in slow cooker. Cover and cook on low 4 to 5 hours.
2 - Stir in macaroni. Cover and cook 10 minutes; stir. Cover and cook 20 to 30 minutes or until pasta is tender.

* Serve with sour cream.

No More Tears Onions....

You can make the onions tear-free by cutting the upper and lower ends before putting them in the microwave. Heat them on full power for 30 seconds and the juices will dry. The taste is still there but the teary enzymes are taken away, making the onion easy to slice.

Turkey Burger w/ Baked Potato

Dinner Tonight: Turkey Burger w/ Baked Potato




Whew, we got one muggy day out there today! Started off with a light Breakfast and my morning workout. Kitchen cleaning today; cleaned the stove and oven, pulled everything out of the fridge and cleaned it also. Then later in the afternoon ran errand for Mom and came back and worked at the computer, deleted a few unused programs and ran scans and such. For dinner tonight it's Turkey Burger. I prepared a Jennie - O 1/3 lb.Turkey Burger w/ Baked Potato






I finally got around to breaking out the box of Jennie - O - 1/3 lb. Turkey Burgers. Jennie - O  had sent me the free box as part of the Switch Club in which I was invited to join by Jennie - O. I had the box in the freezer and it's time to break these Burgers out! They come frozen, to grill or fry from frozen. I pan fried these using Extra Virgin Olive Oil and seasoned with McCormick Grinder Sea Salt and Black Peppercorn. In a preheated, medium heat, large skillet I cooked the Burger for about 8 minutes per side, 165 degrees internal Burger temperature. And what a Burger! Meaty, juicy, and flavorful. First time I've tried the 1/3 lb. Ground Turkey Burger and will keep them in stock from here out! Another excellent Jennie - O Turkey Product.




For a side I had a Baked Potato, actually a 1/2 of a Baked Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. The McCormick Grinder Peppercorn Medley is a new one I came across at Meijer. The Medley consists of Black Peppercorns, Coriander, Pink Peppercorns, White Peppercorns, All Spice, and Green Peppercorns. Then I topped the Potato with I Can't Believe It's Not Butter. For dessert later a bowl of Del Monte No Sugar Added Sliced Peaches.
