Sunday’s Chicken Dinner Recipe – Roasted Chicken with Apple Stuffing

Roasted Chicken with Apple Stuffing

Recipe Ingredients:
1 whole (3 to 4-pound) chicken, trimmed of excess fat

Garlic Butter Rub:
2 cloves garlic, minced
2 tablespoons butter or margarine, softened
1/2 teaspoon lemon juice
Salt and freshly ground pepper to taste

Apple Stuffing:
2 cups firm white bread, cubed
1/2 to 3/4 cup chicken broth
1 large tart Michigan apple, peeled and chopped
1/4 cup dried cherries
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
Salt and ground black pepper to taste
3 tablespoons butter
1/2 cup minced onion
1/2 cup sliced celery
1/2 cup dry white wine
1 large tart Michigan apple, cored and cut into wedges
1 large sweet onion, cut into wedges

Cooking Directions:
1 - Preheat oven to 400°F (205°C).
2 - Rinse chicken with cold water and pat dry with paper towels inside and out. Place in roasting pan.
3 - In small bowl, combine garlic, butter, lemon juice, salt and pepper.
4 - Loosen skin of chicken wherever possible, and spread half of the butter/garlic mixture under skin. Sprinkle additional salt and pepper over skin. Put remaining butter in roasting pan.
5 - Place bread cubes in mixing bowl. Toss with apples, cherries, thyme, sage, salt and pepper. Moisten with chicken broth.
6 - Melt butter in large skillet; add onion and celery and sauté until softened, 3 to 4 minutes. Add to stuffing and toss. Stuff chicken loosely with mixture. Tie legs together and roast 40 minutes.
7 - Add white wine, to deglaze the pan along with apples and onions to pan and continue roasting about 40 minutes, until thermometer inserted into thickest part of thigh registers 160°F (71.1°C) to 165°F (73.8°C). Remove bird to platter and let rest 5 minutes before carving.

Makes 4 servings.

Note: Drippings from pan may be used as an excellent base for gravy.

Grilled Turkey Kabobs with Cherry Chipotle Sauce

This saucy number will get double takes on the barbeque! Enjoy charbroiled skewers in a rich crimson glaze of liquefied cherries and chipotle peppers. Smokey, sweet and sure to be a backyard favorite.

INGREDIENTS

2 teaspoons butter
1 medium yellow onion, thinly sliced
2 cloves garlic, minced
3 cups cherries, pitted
⅓ cup orange juice
2 teaspoons apple cider vinegar
¼ cup molasses
2 teaspoons tomato paste
1½ teaspoons canned chipotle peppers in adobo sauce
1 teaspoon fresh lemon zest
2 teaspoons salt, if desired
3-pounds JENNIE-O® All Natural Turkey Breast
2 yellow peppers, cut into pieces
16 small button mushrooms, cleaned

DIRECTIONS

1) To small sauce pan, add butter and onions. Simmer on low heat until the onions soften, add garlic and cook 2 minutes before adding cherries, orange juice and vinegar. Simmer 5 minutes or until cherries start to soften. Add molasses, tomato paste, pepper, lemon zest and salt, if desired; stirring until blended. Allow to gently simmer 20 minutes before using your immersion blender to liquefy sauce. Allow sauce to cool before storing in a jar or applying to your turkey and vegetables.
2) Place bamboo skewers in a bowl of water until ready to use.
3) Preheat grill to medium-high heat. Place turkey on hot grill and cook until internal temperature reaches well-done, 165°F as measured by a meat thermometer. Remove turkey from grill and cut into large cubes, leaving grill on. Cut yellow peppers into large pieces. Thread turkey, yellow peppers, and mushrooms on to skewers. Cover generously with sauce. Place on hot grill and cook until peppers and mushrooms have been warmed through.

* Always cook to an internal temperature of 165°F.

Diabetic Dish of the Week - Grilled Chicken with Cherry Apple Chutney

Grilled Chicken with Cherry Apple Chutney

Brining is the secret to marvelously tender and delicious chicken pieces. Grill them up and serve with a sweet and tangy chutney made from cherries and tart apples.

Recipe Ingredients:

Chicken:
1/4 cup Splenda® Sugar Blend
1/2 cup kosher salt
1 cup hot tap water
3 cups cold water
1 pound boneless, skinless chicken breasts
1 pound boneless, skinless chicken thighs
1/2 teaspoon ground black pepper
1 tablespoon canola oil

Cherry Apple Chutney:
1 cup pitted tart cherries (thawed, if frozen)
1/2 Granny Smith apple, unpeeled, cored, and chopped
1/2 cup finely chopped red onions
1/4 cup Splenda® Brown Sugar Blend
1/4 cup dried cherries
1 tablespoon brewed strong coffee
1 tablespoon red wine vinegar
1 grated peel of 1/2 lemon
1/3 teaspoon ground cayenne pepper
1 1/2 tablespoons apple juice concentrate
1 tablespoon chopped fresh mint

Cooking Directions:

1 - For Chicken: Combine Splenda® Sugar Blend, salt, and hot water in 1-gallon zipper-lock plastic bag and shake to dissolve Splenda® Sugar Blend and salt. Add cold water and chicken. Press air out of bag, seal, and refrigerate 1 1/2 to 2 hours.
2 - For Cherry Apple Chutney: In medium steel saucepan, combine tart cherries, apples, onions, Splenda® Brown Sugar Blend, dried cherries, coffee, vinegar, lemon peel, and cayenne. Bring to a simmer over medium heat. Reduce heat to low and simmer gently 15 to 20 minutes, or until apples are soft and most of liquid evaporates. Remove from heat and stir in juice concentrate and mint. Set aside.
3 - Remove chicken from brine and discard brine. Refrigerate chicken until ready to serve (up to 1 day). Pat chicken dry with paper towels and sprinkle all over with pepper. Let rest at room temperature 20 minutes.
4 - Heat grill to medium-high. Brush grill grate and coat with oil.
5 - Put chicken on grill, cover, and cook 5 to 7 minutes per side, or until chicken is no longer pink and juices run clear (about 170°F / 80°C on an instant-read thermometer). Brush with oil during last 5 minutes. Serve with chutney.

One of America's Favorites - Sundae

The sundae (pronunciation: /ˈsʌndeɪ, ˈsʌndi/) is a sweet ice cream dessert. It typically consists of one
A strawberry sundae
or more scoops of ice cream topped with sauce or syrup, and in some cases other toppings including sprinkles, whipped cream, peanuts, maraschino cherries, or other fruits (e.g., bananas and pineapple in a banana split.).

According to the Oxford English Dictionary, the origin of the term sundae is obscure; however, it is generally accepted that the spelling "sundae" derives from the English word "Sunday".













Among the many stories about the invention of the sundae, a frequent theme is that the ice cream sundae was a variation of the popular ice cream soda. According to documentation published by the Evanston Public Library (Illinois), the drinking of soda was outlawed on Sundays in Illinois.

Other origin stories for the sundae focus on the novelty or inventiveness of the treat or the name of the originator, and make no mention of legal pressures.

Ice cream sundae soon became the weekend semi-official soda fountain confection in the beginning of 1900s and quickly gained popularity. The Ice Cream Trade Journal for 1909 along with plain, or French sundae, listed such exotic varieties as Robin Hood sundae, Cocoa Caramel sundae, Black Hawk sundae, Angel Cake sundae, Cherry Dip sundae, Cinnamon Peak sundae, Opera sundae, Fleur D'Orange sundae, Knickerbocker sundae, Tally-Ho Sundae, Bismarck and George Washington sundaes, to name a few.



Various localities have claimed to be the birthplace of the ice cream sundae, including Two Rivers,
A chocolate sundae
Wisconsin; Plainfield, Illinois; Evanston, Illinois; New York City; New Orleans, Louisiana; Ithaca, New York; Cleveland, Ohio; and Buffalo, New York.


Two Rivers, Wisconsin in 1881
Two Rivers' claim is based on the story of George Hallauer asking Edward C. Berners, the owner of Berners' Soda Fountain, to drizzle chocolate syrup over ice cream in 1881. Berners eventually did and wound up selling the treat for a nickel, originally only on Sundays, but later every day. According to this story, the spelling changed when a glass salesman ordered canoe-shaped dishes. When Berners died in 1939, the Chicago Tribune headlined his obituary "Man Who Made First Ice Cream Sundae Is Dead". Two Ithaca High School students, however, claim that Berners would have only been 16 or 17 in 1881, so it is therefore "improbable" that he would have owned an ice cream shop in that year. They also state that the obituary dates Berners' first sundae to 1899 rather than 1881.

Residents of Two Rivers have contested the claims of other cities to the right to claim the title "birthplace of the ice cream sundae". When Ithaca, New York, mayor Carolyn K. Peterson proclaimed a day to celebrate her city as the birthplace of the sundae, she received postcards from Two Rivers' citizens reiterating that town's claim.

Evanston was one of the first locations to pass a blue law against selling ice cream sodas in 1890. "Some ingenious confectioners and drug store operators [in Evanston]... obeying the law, served ice cream with the syrup of your choice without the soda [on Sundays]. Thereby complying with the law… This sodaless soda was the Sunday soda." As sales of the dessert continued on Mondays, local Methodist leaders then objected to naming the dish after the Sabbath, so the spelling of the name was changed to sundae.

Supporting Ithaca's claim to be "the birthplace of the ice cream sundae", researchers at The History Center in Tompkins County, New York, provide an account of how the sundae came to be: On Sunday, April 3, 1892, in Ithaca, John M. Scott, a Unitarian Church minister, and Chester Platt, co-owner of Platt & Colt Pharmacy, created the first historically documented sundae. Platt covered dishes of ice cream with cherry syrup and candied cherries on a whim. The men named the dish "Cherry Sunday" in honor of the day it was created. The oldest-known written evidence of a sundae is Platt & Colt's newspaper ad for a "Cherry Sunday" placed in the Ithaca Daily Journal on April 5, 1892. By May 1892, the Platt & Colt soda fountain also served "Strawberry Sundays" and later, "Chocolate Sundays".

Platt & Colt's "Sundays" grew so popular that by 1894, Chester Platt attempted to trademark the term ice cream "Sunday".


Plainfield, Illinois
Plainfield, Illinois has also claimed to be the home of the very first ice cream sundae. A local belief is that a Plainfield druggist named Mr. Sonntag created the dish "after the urgings of patrons to serve something different." He named it the "sonntag" after himself, and since Sonntag means Sunday in German, the name was translated to Sunday, and later was spelled sundae. Charles Sonntag established himself as a pharmacist after graduating from pharmacy school in 1890. He worked for several years under the employ of two local druggists, Dr. David W. Jump and F. R. Tobias. Sonntag established his own pharmacy (as early as 1893 and no later than 1895) in a building constructed in the months following a December 1891 fire that devastated one side of the town's business district. His store advertised "Sonntag's Famous Soda" and was, likely, the first soda fountain in the Village of Plainfield.



The original sundae consists of vanilla ice cream topped with a flavored sauce or syrup, whipped
cream, and a maraschino cherry. Classic sundaes are typically named after the canned or bottled flavored syrup employed in the recipe: cherry sundae, chocolate sundae, strawberry sundae, raspberry
sundae, etc. The classic sundae is traditionally served in a tulip-shaped, footed glass vase. Due to the long association between the shape of the glass and the dessert, this style of serving dish is generally now known as a sundae glass.

"Meatless Monday" Recipe of the Week - Sour Cherry Chocolate Scones

Sour Cherry Chocolate Scones
Bake Sour Cherry Chocolate Scones for a tart and rich baked treat.

Ingredients
3 cups all-purpose flour
3 tablespoons white granulated sugar
1 teaspoon baking soda
1/2 teaspoon sea salt
4 tablespoons unsalted butter, frozen
1/2 pound sour cherries or regular cherries, pitted and halved
6 ounces chocolate chunks or chips or morsels
1 cup buttermilk, plus about 2 tablespoons more for topping
1 tablespoon turbinado sugar, as topping

Directions
1 - Line a baking sheet with parchment and set aside.
2 -In a large mixing bowl, mix together the flour, sugar, baking soda and salt.
3 - Using a box grater, grate the butter into the dry ingredients and mix quickly, breaking up the butter so it resembles the size of small peas.
4 - Add the cherries and toss so they’re evenly distributed throughout the flour. Next, do the same with the chocolate chunks or chips.
5 - Create a well in the center of the flour mixture and in one batch, add the buttermilk. Using a wooden spoon or spatula, mix it together until it forms a shaggy ball. Drop the dough onto a lightly floured counter and knead a few times, being sure to not over handle it, which will result in tough scones. Form the dough into 1 1/2-inch thick disk. Using a knife, cut the scones into 8 equal triangles. Transfer the scones to the baking sheet and put in the freezer to chill for 15 minutes. At this time, preheat the oven to 425 degrees F.
6 - Brush the tops with the buttermilk and sprinkle with a bit of turbinado sugar. Transfer the scones to the oven to bake for 25 to 30 minutes, until a skewer inserted into the centers comes out clean and the scones are golden brown.

The cobbler takes its name from the biscuit dough crust on top - it is rough looking or 'cobbled.'   It originated in the U.S. sometime in the early to mid 19th century.
A Cobbler is also a drink, which probably predates the fruit cobbler pie.
A cobbler usually consisted of whiskey or rum with fruit juice and/or sugar, garnished with mint and/or citrus.

Two Diabetic Recipes for the Fruit of the Week - Cherry

Cherry Pie and Whipped Topping-Diabetic

PREBAKED SINGLE PIE CRUST
1 tb CORNSTARCH
2 cn 16 OZ UNSWEETNED RED CHERRYS
1/4 ts ALMOND FLAVORING
1 c LIQUID FROM THE CHERRIES
1 c SUGAR SUBSTITUTE
1/2 c INSTANT DRY MILK
2 tb SUGAR
1/2 c COLD WATER
1/4 c DRY SUGAR SUBSTITUTE (OPT)
2 tb LEMON JUICE
1/2 ts VANILLA

1. Pie: Drain cherries well, reserving 1 cup liquid. Set cherries aside and combine 1 cup liquid and cornstarch. Cook and stir over moderate heat until thickened and transparent and the starchy taste is gone. 2. Remove from heat and add sugar substitute, almond flavoring and cherries. Taste and add more sweetener, if desired. Cool to room temperature.

3. Spread filling evenly in crust. Let set at least 15 minutes. Topping: Combine dry milk and water and refrigerate for 30 minutes.Beat at high speed for 4 minutes. Add lemon juice to whipped milk and beat at high speed for 4 minutes. Stir in the sugar and sugar substitute while it is being beaten. Add vanilla to whipped topping and refrigerate until use. Duck Breast with Cinnamon-Cherry Sauce

Ingredients:

1 pound fresh cherries, pitted and halved

2 cinnamon sticks

2 cups water

2 duck breasts

Salt

Freshly ground black pepper

Preparation:

To make the cinnamon-cherry sauce, combine the cherries, cinnamon sticks and water in a medium-sized saucepan.  Bring to a simmer and reduce the heat to medium-low.  Simmer until the cherries begin to break down and form a sauce, about 40 minutes. Add additional water, if needed. Remove cinnamon sticks.

Preheat oven to 400 degrees.

Score the fat on the breasts by drawing a very sharp knife across the skin in a diagonal crisscross pattern, at least 4 or 5 lines in each direction. Be careful to cut only into the fat and not into the flesh. This helps render the fat quickly when the breasts are cooked.  Season flesh side with salt and pepper.

Heat a large oven-proof sauté pan over medium heat.  When hot, add the duck breasts, skin side down.  Slowly render the fat and brown the skin, pouring the fat out of the pan fairly frequently, about 15 minutes.  This will prevent the duck from tasting oily.  When the majority of the fat has cooked away and the skin is browned and crispy, turn the breasts over and quickly brown the flesh side.  Transfer sauté pan to the oven and roast for about 6 minutes, or until medium-rare.  Remove from oven and let rest for 5 minutes.  Slice duck breasts width-wise into ½-inch thick slices.  Top with the warmed cherry sauce.

Serves: 2

Make ahead: The cinnamon-cherry sauce can be made up to one week in advance.  Cool completely and keep refrigerated until ready to use.  Reheat gently.
