Grilled Buffalo Steaks
Our meals become pretty simple in the summer. In addition to what we eat, how we eat is minimized too. Frequently dinner consist of a grilled buffalo cut, and grilled vegetables on salad greens. The complete meal is served on the cutting board that the vegetables were prepped on. Other than cutting the steak, silverware is optional. Somehow the food just tastes better, you’ll just have to try it. Below is my simple way of “how to grill a steak”. Although this may be easy for many of you, it is a question that I get a lot. I hope it is helpful. Enjoy! Jill
1 – Rinse Wild Idea Bison steaks, and pat dry with a paper towel.
2 – Drizzle olive oil on steak and season generously with salt & pepper.
3 – Loosely cover and let steak rest at room temperature for 2 hours.
4 – For Gas Grill: Insure grill grids are clean. Turn all burners on high and close grill cover. Allow gas grill heat to come to 550*.
5 – Place steak on grill, close lid and cook for 3 minutes.
6 – Turn steak and cook for an additional 2.5 minutes, for medium rare.
7 – Remove steak from grill and place on serving plate and cover for 5 minutes.
Serve grilled steaks with grilled vegetables, salad greens and bread. Vegetables can be added to grill at the same time as the steak, turn as above. Simply delicious!

BBQ Pork Shoulder Roast Sandwich w/ Baked Fries
Dinner Tonight: BBQ Pork Shoulder Roast Sandwich w/ Baked Fries
I toasted a Healthy Life Whole Grain English Muffin topped with Smucker's Sugar Free Blackberry
Jam for Breakfast. Also had the morning cup of Bigelow Decaf Green Tea. After Breakfast I went Meijer for some items I needed. I've been noticing the price of Tea just keeps going up and up! I was at Walmart last week and it's now $2.36 a box up from $2.18 a box about a year ago and at Meijer its up to $2.68 a box. Of course Kroger has the highest price at $3.12 a box! And its not just Tea that's rising in cost its everything practically. Having to really watch for sales and coupons. Outside today we were near a record high out today, 81 degrees! Highs back in the 60's by the weekend though. Raked what leaves I could with the help of my neighbor. Still a lot of leaves left in some of the bigger trees herein the neighborhood but the smaller ones are almost bare now. For Dinner tonight I prepared a BBQ Pork Shoulder Roast Sandwich w/ Baked Fries.
A while back I tried the Swift Premium Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast , which turned out so good! I had purchased 2 of them a while back and still had one left in the freezer. So I sat it in the fridge overnight to thaw for use for tonight's Dinner, BBQ Pork Shoulder Roast Sandwich w/ Baked Fries.
For the BBQ Pork Shoulder Roast Sandwiches I’ll be using the Swift Premium Dry Rubbed Carnitas
Boneless Petite Pork Shoulder Roast again! And preparing it one of my favorite ways, the Slow Cooker. It’s a super easy recipe to make. Start by lining my Slow Cooker with a Reynolds Slow Cooker Liner. Using the liner makes for little or no clean up. Next, removing meat from package. Place the Roast in slow cooker with 1 inch of water in bottom. Then across the top I added a thin coat of Jack Daniel’s Honey SmokeHouse BBQ Sauce. Cover and cook on HIGH for 4 hours or until fork tender. Then remove from slow cooker and allow to cool slightly. Next shred the meat with two forks, or a pair of Bear Claws which is what I used, in a large bowl and add the BBQ Sauce. You can add the BBQ Sauce now or you can add the Sauce on to your Sandwich instead. I used Jack Daniel’s Honey SmokeHouse BBQ Sauce, you can always use your favorite. I served the sandwich on a Healthy Life Whole Grain Sandwich Bun The Pork comes out incredible! As the other Swift Premium product it came out moist, juicy, and delicious! These products are so easy to prepare and top quality. Another great product to have handy in the frig or freezer.
To go with the BBQ Pulled Pork sandwiches I baked some Alexia Organic Yukon Select Fries. I
seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Moisten hands with a little vegetable oil or water, pick up about 1/4 cup of mixture, and form into burgers.
3 - Heat remaining 2 tablespoons olive oil in a skillet over medium heat and pan-fry burgers until browned and cooked through, 5 to 6 minutes.
