Leftover: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

Dinner Tonight Leftover BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Just a cup of Bigelow Decaf Green Tea for Breakfast, not much of an appetite this morning. More rain and 50 degrees outside today. There is flooding all over this area, the Ohio River is up over its
banks. They say no rain tomorrow and I hope they are right we need to dry out around here. Cleaned the house today and did a couple of loads of laundry. Today is Mom's Birthday, she turns 91! I hope that if I reach her age that I'm as in good as health as her! People see her and how she gets around and they can't believe she's 91. Happy Birthday Mom, I love you! For Dinner tonight I heated up the leftover BBQ Pulled Buffalo Chuck Roast . Tonight its BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

I've left the original post from the other night for description and recipe. Enjoy!

I'm using the Wild Idea Buffalo Chuck Roast. This is so tender and incredibly flavorful. It comes
already cooked and seasoned, so just heat and serve! Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.

I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and
heated it on medium low until heated through. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it.

For my Fries I’m using Ore Ida Crinkle Cut Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

Dinner Tonight: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

For Breakfast on this Sunday Morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast anytime of the week! Its a Wintery Morning out today. We've had Rain, Sleet, Snow Flurries, and Freezing Rain. Snowing or raining most of the day. Sort of down and out today, still dealing with my Sinuses. Rested most of the day. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

I'm using the Wild Idea Buffalo Chuck Roast. This is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Fries

Dinner Tonight: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Fries

For Breakfast on this Saturday Morning Mom prepared some French Toast. For our Syrup for the French Toast we used Log Cabin Sugar Free Maple Syrup, only 20 calories per serving! Then I
heated up some Johnsonville Turkey Breakfast Sausage Links. And as always I had my morning cup of Bigelow Decaf Green Tea. Mom makes the French Toast around! Love a good Breakfast! Partly cloudy and 57 degrees out, I actually seen some sunshine! Finally drying out after 2 days of heavy rain, but more showers on the way Sunday. Got the cart out of the shed along with the rake and leaf blower. Leaves and limbs everywhere after the wind and rain of two days. Got the front yard and deck all raked and clean. The backyard and side yards were to  wet for me to get my cart on. Watched some College Football for the rest of the afternoon. For Dinner tonight its a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Fries.

So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Fries. I had been wanting the Pulled Buffalo Chuck Roast for a while. I went to the freezer to find a package and thought I was out of it but then found a 1/2 pack of it in bottom pull out drawer of the freezer. I laid the package in the fridge overnight to thaw. Wild Idea Buffalo Chuck Roast, this is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper.

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast this morning I poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. Big change in the weather out there. 24 degrees, snow flurries, and windy, which makes it feel a lot colder out there! Had a high of 40 degrees but it sure felt colder. Had a good nights sleep last night, no Phantom Pains! Did some house cleaning and that was about it. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies). Comfort Food tonight!

Been a while since I've prepared Sausage and Beans. So tonight it’s Beans and Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush’s Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients
except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let it simmer. Another set it and forget recipe! After I got the Beans started I fried up 1 1/2 Butterball Hardwood Smoked Turkey Sausages. I first sliced them up into bite size pieces then fried them on medium until they started to brown and removed them from the heat and put them in a small bowl and set aside.

Then using the same skillet I fried the Sausage in I fried 3 slices of Applegate No Sugar Added Uncured Bacon, actually I fried 5 slices.  Always remember when preparing Bacon to always add 2 extra slices. Because you know you’ll grab a couple of slices, it’s called the Bacon Factor or Bacon Math. First time I've tried the Applegate Bacon. I normaly use Turkey or Chicken Bacon but this looked like an excellent Bacon. It fried up perfect and very good flavor to it. Plus it's only 60 calories for 2 slices. As I said it fried up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

I love dishes that you can set and let them simmer, to me it seems to give food a much richer and deeper flavor. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages to
the Beans. Kept the heat on low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food favorite! Another plus is the cleanup, just one dutch Oven and 1 skillet to clean. Also reheated the leftover Bakehouse Multigrain Bread. For Dessert later a So Delicious Coconut Milk Ice Cream Sandwich.

Crock Pot - Boneless Pork Loin Roast w/ Roasted Butternut Squash and Cut Italian Green Beans

Dinner Tonight: Crock Pot - Boneless Pork Loin Roast w/ Roasted Butternut Squash and Cut Italian Green Beans

I just had a cup of Bigelow Decaf Green Tea for Breakfast. I wanted to go to Walmart, so when going there the earlier the better. If you don't go early and you rely on the mobility electric carts you won't get one or it will not be charged up. They have very few. Our Church is helping some low - income families and I purchased some plate settings, cutlery trays with the  cutlery, dish towels, pot holders, and 3 piece skillet sets. I love helping others if I'm able to! Another reason I went early was I wanted to beat the rains moving in for the afternoon. For Dinner tonight Crock Pot - Boneless Pork Loin Roast w/ Roasted Butternut Squash and Cut Italian Green Beans

I purchased the Pork Loin Roast from Kroger yesterday and had it in the fridge. This morning got it out of the fridge and Seasoned it with Morton's Lite Salt and Fat Boy All Natural BBQ Steak Rub. Rubbed the Seasoning on all sides of the Roast and let it sit for 10 minutes.

As the Roast sat I got the Crock Pot ready. I lined the Crock Pot with a Crock Pot Liner. Then sprayed it with Pam Non Stick Cooking Spray and then added a 1/3 of a cup of Water. I then turned the Crock Pot on low to heat up. After 10 minutes I added the Roast to the Crock Pot. That's when I added the Jack Daniel's Honey Smokehouse BBQ Sauce. I added about a 1/2 bottle of it across the top of the Roast. Cover and cooked on low for 7 hours. Always check the temperature of the roast before removing. An instant-read thermometer should register at least 145 F. If overcooked, the pork can become dry and could be difficult to slice or shred.

At the end of 7 hours the Roast was ready. Just by opening the lid I could tell right away this was going to be a good one! Removed it from the Crock Pot and it was already falling apart, very good sign. I started shredding it and it was just falling apart. The Roast was so tender and flavorful! This turned out to be the best Roast I think I have ever prepared. Mom agreed, she loved it! I served it on Aunt Millie's Reduced Calorie Whole Grain Hamburger Buns. We topped it with a bit more BBQ Sauce. One DELICIOUS Sandwich!

I made a couple of sides Roasted Butternut Squash and Allens Cut Italian Green Beans. For the
Butternut Squash;  I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Crumbled Bacon Bits, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the
Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash.

Next I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a
small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans of any kind every day and never get tired of having them. For Dessert later a Jello Sugar Free dark Chocolate Pudding.

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast this morning I had a another of the delicious SayersBrook Bison Ranch Filet Mignon! I love these they're so tender and fry up so easy. So I had Steak and Egg. I had Bison Filet Mignon in
the freezer, I laid it in the fridge overnight to thaw. I fried it like last time. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. And like last time it came out a perfect medium rare! It was so tender and juicy. Then I also fried up a Sunny Side Egg and toasted a couple of slices of Aunt Millie's Light Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast Combo! Also had my morning cup of Bigelow Decaf Green Tea.

We had snow showers on and off all night, none of it stuck to the ground though. Another cool day out, a high of 33 degrees and sunny out. After I had Breakfast I prepared Breakfast for Mom and Dad. I prepared Scrambled Eggs, sausage Patties, Buttery Grits, Toast, and made a pot of Coffee. Gave Mom a hand with a couple of loads of laundry. Then cleaned the house, dusted and vacuumed. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies). Comfort Food tonight!

Pulled Chicken BBQ Sandwich w/ Baked Fries

Dinner Tonight: Pulled Chicken BBQ Sandwich w/ Baked Fries

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese.
Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Love this Breakfast! It's bitter cold this morning! It's 4 degrees and the wind makes it feel like minus 8 degrees.Plus the high was only 18 degrees. Bitter Cold! It looks as though this weather is going to stick around for at least a week so we might as well adjust to it. Around noon I ventured out and went to the local Kroger up the road from us. Mom needed a few things so I went for her. That was it for being outside today! For Dinner tonight I prepared a Pulled Chicken BBQ Sandwich w/ Baked Fries.

While at Kroger earlier today I purchased a Simple Truth Rotisserie Chicken at the Deli. I love these
Birds, there is so much meat on them and seasoned just right. So anyway I pulled all the Chicken Meat from it and cut off the Chicken Legs and Wings for Mom and Dad.

To make the Sandwich I took some of the Pulled Chicken and heated it up in a skillet on medium
heat. Next I grabbed a Aunt Millie's Reduced Calorie Whole Grain Hamburger Bun and the bottle of Jack Daniel's Honey Smokehouse BBQ Sauce. Piled my Chicken on the Bun and topped it with the BBQ Sauce. Easily made and delicious! The Jack Daniel's Honey Smokehouse BBQ Sauce is perfect with Chicken. Just gives it an incredible flavor!

To go with my Sandwich I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Rotisserie Chicken
Rotisserie chicken is a chicken dish that is cooked on a rotisserie, using direct heat in which the chicken is placed next to the heat source. Electric- or gas-powered heating elements may be used, which use adjustable infrared heat. These types of rotisseries have proven quite functional for cooking rotisserie-style chicken.
Leftover rotisserie chicken may be used in a variety of dishes, such as soup, chicken salad and sandwiches. (Wiki)

Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/..

Dinner Tonight: Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Slow Cooked Yukon Gold Potatoes and Carrots

Ham and Cheese on English Muffin
For Breakfast I had the Smithfield Anytime Favorites Sliced Ham again. This made such a delicious Breakfast Sandwich yesterday I couldn't wait to have it again! To prepare it just heat up the Ham for 1 minute in a skillet and it's ready! I then toasted a Healthy Life Whole Grain English Muffin. I topped the Ham with a slice of Sargento Reduced Calorie Swiss Cheese and served it on the Muffin. Made a delicious Breakfast sandwich. I also had a cup of Bigelow Decaf Green Tea. Hot and muggy with a passing shower outside today, as it was yesterday. After Breakfast I went to Meijer for a few items I needed and back home. After Lunch I got the leaf blower out of the shed and cleaned off the deck and driveway areas. Then got the clippers out and trimmed back the vines along the driveway. For Dinner tonight I prepared a Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Slow Cooked Yukon Gold Potatoes and Carrots.

I got the Crock Pot out and lined it with a Plastic Liner and then sprayed that with Pam Cooking
Spray. Added 3/4 cup of Water to the Pot and turned it on high to warm up. I began by slicing up my Yukon Gold Gourmet Potatoes and Whole Carrots. Put them into a large bowl and seasoned them with Extra Light Olive Oil, McCormick Grinder Italian Herb Seasoning, and McCormick Grinder. Tossed them in the bowl making sure they were well seasoned on all sides. I then added them to a large Pot of boiling Water and cooked them for about 12 minutes. I then added them to the Crock Pot and closed the lid. Potatoes and Carrots both take a while to get tender so that's why I first boiled them for 12 minutes.

I had picked up a Swift Premium Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast at Kroger the other day and preparing it for Dinner tonight. The Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast comes packaged already seasoned. You can roast this in the oven or use the Slow Cooker as I am today. I removed the Shoulder Roast from the package and place in slow cooker on top of the Potatoes and Carrots. Put the lid on and cook on high for 4 hours or until everything was fork tender. A special “Thank You” goes out to whomever invented the Crock Pot Liners! You’ve made cooking so much easier!

Removed the Roast from slow cooker and allow to cool slightly. Then shred meat with two forks for my Sandwiches. The Roast came out mouth-watering delicious! Tender, moist, and well seasoned. So tender it broke apart while taking it out of the Slow Cooker. I’m serving it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped with some Jack Daniels Honey Smokehouse BBQ Sauce. Love this Sandwich! I’ll use the leftovers for Sandwiches for Lunch the next few days. The added Potatoes and Carrots worked great, giving it added flavor. Both came out fork tender and delicious! Later tonight I'll have a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
