Swiss and Chicken Sandwich w/ Baked Potato Puffs

Dinner Tonight: Swiss and Chicken Sandwich w/ Baked Potato Puffs






I toasted a couple of Eggo's and my morning cup of Bigelow Decaf Green Tea for Breakfast this
morning. After Breakfast I did a couple of loads of laundry for Mom. Then outside did the daily sweeping of the wooden deck and driveway. This morning it was 58 degrees, a little taste of Fall there! Another nice day out. A little warmer but still low humidity but the warmer temps and high humidity are on the way back. Had everything done for the day so I got the cart out and rode around the neighborhood for a while. For Dinner tonight it's a Swiss and Chicken Sandwich w/ Baked Potato Puffs.





It just felt like a Swiss/Chicken kind of day. I used the PERDUE® Crispy Chicken Strips, which I
just had the night before. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious!






I served them on an Aunt Millie's Reduced Calorie Hamburger Bun and topped the Chicken with a slice of Sargento Ultra Thin Swiss Cheese and some Hidden Valley Ranch/Buffalo Dressing.












Then for a side dish for my Sandwich I prepared some Alexia Potato Puffs. To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. And we have another Keeper Potato Product! Browned up perfect with excellent seasoning. Perfect Potato side dish. For dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

PRODUCT HANDLING
COOKING & PREP
Conventional/Toaster Oven (Preferred Methods) Preheat Oven to 425°F. Spray baking sheet with cooking spray. Place frozen strips in single layer on baking sheet. Bake on middle oven rack for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn patties halfway through heating time. Microwave Oven Place 4-6 frozen strips in single layer on a microwave safe plate lined with paper towel. Heat, uncovered, on high for 2 to 3 minutes, turning halfway through heating time. Let stand for 1 to 2 minutes before serving.

Dinner Tonight: Blackened Gulf Coast Grouper w/ Baked Potato Puffs




To start my day I just had a cup of Bigelow Decaf Green Tea, not real hungry this morning. It's
another hot and humid day out there with showers on and off. Today was clean and straighten the freezer, fridge, and pantry day. So this took up my day for the most part. It took dad all of 24 hours to break the new lift chair we had bought him. So now its going to cost a little over $200 to repair it. The damage he caused is not covered under warranty. He kept moving the chair back as far as he could and it burnt the motor out. Nothing we can do but pay it! Anyway for Dinner tonight I prepared Blackened Gulf Coast Grouper w/ Baked Potato Puffs.
 




Just can't get enough of Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back! I had it in the freezer so I grabbed a fillet and let it thaw overnight in the fridge.It’s another one of those beautiful Grouper fillet! To prepare it I rinsed the fillet off in cold water and patted it dry with paper towel. I then seasoned them it with a bit of Sea Salt. Then I melted 1 tablespoon of Blue Bonnet Lite Butter and rolled the fillet in the Butter. I then added the Zatarain’s Blackening Seasoning, coating both sides of the fillet.



I prepared it in a preheated Cast Iron Skillet that I sprayed with Pam Cooking Spray. When the pan
was fully heated, on medium heat, I added my Grouper. At this point turn on your Stove Overhead Exhaust Fan on, because it will start smoking from the seasoning. Cooked it about 4 minutes per side, and it was ready! Cast Iron Skillets are perfect to use for any cooking but especially when you Blacken something. The Skillet heats up and holds it heat and the heat evenly distributes across the Skillet, perfect for Blackening Meats. This is one delicious Grouper! The fresh taste of the Grouper, so meaty, along with the Blackening Season are a perfect combo. Love Fish, Love Seafood! Plus as you can tell as big as this fillet was I only had half of it for dinner. The other half for lunch tomorrow!


Then for a side dish I prepared some Alexia Potato Puffs. Second time I’ve had these and really like them! To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. And we have another Keeper Potato Product! Browned up perfect with excellent seasoning. For dessert later a bowl of Breyer’s Low Carb Vanilla Ice Cream.







Zatarain’s Blackened Seasoning

This spicy seasoning blend is rubbed on the outside of fish (or chicken, steak or other meats) for
blackening. Also great as a seasoning rub for the grill or broiler.
Ingredients:
SALT, PAPRIKA, CAYENNE PEPPER, BLACK PEPPER, WHITE PEPPER, CHILI POWDER, MONOSODIUM GLUTAMATE, ONION, GARLIC, SPICES.

Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs




For Breakfast I had a toasted Healthy Life Whole Grain English Muffin that I topped with I Can't Believe It's Not Butter and a cup of Bigelow Decaf Green Tea. Then about 11:00 Dad finally made it back home! It's been a struggle for him since the collapsed lung, he was in rehab over 2 months. But at almost 95 years old it's tough to come back. Good to have him home. Not as hot and a lot less humid out today. Sunny and 84 degrees out. Did some cleaning on the outside of the house and got the cart out for a spin around the neighborhood. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.



I had the Cod in the freezer. So I laid a package of it in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick
Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.

Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Dinner Tonight: Bluegrass Lean Bratwurst w/ Baked Potato Puffs



For Breakfast it was a couple of Jennie - O Turkey Breakfast Sausage links and a toasted Healthy
Life Whole Grain English Muffin. Along with my morning cup of Bigelow Decaf Green Tea, I was set to start my day. After Breakfast I headed up to the local Kroger, I needed a few items and Mom needed a couple of things. Back home got everything put away and did some light cleaning. I spent the afternoon yesterday over seeing Dad at the rehab center. He's finally getting stronger and walking with a walker on his own. He'll be home Tuesday! So anyway I didn't get a whole lot of sleep last night, Phantom Pains started a little after midnight. Hate dealing with those, so painful and aggravating! For dinner tonight I prepared a Bluegrass Lean Bratwurst w/ Baked Potato Puffs.




While digging in the freezer I found a couple of packages of Bluegrass Deliciously Lean Bratwurst.These are so hard to find in this area, I had to write Blue Grass Meats last year because no local stores had any of them in stock. Finally Kroger started to carry them for a while so I had bought a couple of packages of them and forgot I had them, until yesterday!







Love the Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat. To prepare them;
Just add the Brats to a large  skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy char and finish. Love this method, if you can’t grill them. Delicious, plump, and they cook up great! Served it on a Kroger Lite Wheat Bun topped with French’s Spicy Brown Mustard.



Then for a side dish I prepared something new, Alexia Potato Puffs. To prepare them; Preheat the oven to 425 degrees F.  Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. And Bam, got another Keeper Potato Product! Browned up perfect with excellent seasoning. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
