Dinner Tonight: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip




I had a Jimmy Dean Simple Scrambler Cup - Turkey Sausage Crumbles, Egg Whites, and Cheddar Cheese for Breakfast. I also had my morning cup of Bigelow Decaf Green Tea. It is freezing cold outside this morning, minus 9 degrees below zero! We ended up with about 7 inches of snow overnight also with a high of just 16 degrees. So it's cold , windy, and icy outside but warm and snug inside. We had about an inch of snow on the ramp leading outside. I had to wait for my neighbor to come over to dig me out before I ventured outside to try to clean up a bit. The same neighbor used his snow blower to get some of it off the driveway, so very cold out. Cleaned the house today and then watched the NFL Playoffs the rest of the afternoon. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

Just seemed like a good day for a Sandwich for Dinner! For my Sandwich I’ll be using the always delicious Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain
Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack  later a bowl of Skinny Pop - Pop Corn with a Diet Peach Snapple to drink.

For Breakfast this morning it was Ham and Eggs. I had purchased a small Meijer Sliced Pepper Ham. So I sliced several pieces up and fried them in a small skillet until heated through. Then in another
skillet I fried a Sunny Side Up Egg. Then I toasted 2 slices of Aunt Millie's Light Whole Grain Bread
that I lightly Buttered with I Can't Believe It's Not Butter. Also had a cup of Bigelow Decaf Green Tea. Good Breakfast to start an Icy and Cold morning. We got freezing rain overnight and snow on top of it, about 1/2 an itch. It all made for some slick roads out there, a lot of wrecks. It got to 40 degrees later and cloudy for the afternoon. I'm usually up by 6:00 am. or so but I slept in till 8:00 this morning! It felt good to get that extra sleep. Not much going on outside today so I did things around the house today. Cleaned the house and then some repairs. I replaced some of the lower wall trim around the house. I run into it sometimes in my Hoveround Mobility Chair and damage it. So a while back I bought a long strip of the wood trim at Home Depot. That way I have it on hand to replace it from time to time. So I stayed busy inside all day. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.


Just seemed like a good day for a Sandwich for Dinner! For my Sandwich I’ll be using the Boar’s
Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Dean’s Ranch Dressing Dip. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip

Dinner Tonight: Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip





To start my Sunday morning off I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to
prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. After Breakfast I headed up to the local Kroger for a few items and picked up Breakfast for Mom at McDonald's. Outside it's mostly Sunny, humid, and 88 degrees. I got the cart out and did some yard work this afternoon.I had a few things to do in the front yard. The Landscaper is coming tomorrow to redo our front flower bed for us. More detail on that tomorrow. For Dinner tonight I prepared a Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip.





I've been wanting a Pastrami Sandwich so when I went to Kroger this morning I purchased some
Boar's Head Cap-Off Top Round Pastrami and Boar's Head Imported Switzerland Swiss Cheese. Besides the Pastrami and Swiss Cheese I'll need; Aunt Millie's Light Whole Grain Bread, French's Spicy Brown Mustard, and Blue Bonnet Light Butter.







To prepare it I used my flat top griddle. I gave it a light spray of Pam Non Stick Cooking Spray and a 1/2 tablespoon of the Blue Bonnet Butter. Heated the griddle on medium heat. Next I got 2 slices of the Aunt Millie's Bread and spread the Brown Mustard on the inside of 1 slice. Added a slice of the Swiss Cheese and then the Pastrami. Top with another slice of bread. Finally I spread the Blue Bonnet Butter on the outside of both slices of Bread.






  1. With the griddle heated and ready I grilled my Sandwich. Grilled each side until The Bread is toasted and the Cheese melted. Grilled and Ready! The Sandwich was delicious. The Pastrami and Swiss was so good, with the Spicy Brown Mustard adding all kinds of flavor. Swiss Cheese provides such great flavor, especially when it starts to melt. So Good!









To go with the Sandwich I had some Ruffle's Reduced Fat Ruffle’s Potato Chips. I don't Potato Chips that often but with any Sandwich they go great! I also had a tablespoon of Lay's Ranch Chip Dip. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn along with a Mango Diet Snapple to drink.

It was a very long evening and morning for me. As I battled Phantom Pains throughout that time. I didn't get much sleep if any overnight as the pains were very intense. Why can't they come up with something to control them. But for now all I can do is grit my teeth and hope they pass. When they finally slowed and stopped I didn't do a whole lot of anything today but try to catch up on some sleep and relaxation. For Dinner I wanted something that didn't take a lot of effort to prepare so I went with a Roast Beef and Vermont Cheddar on Whole Grain with a Tossed Salad.




On our visit to Jungle Jim's International Market I picked up a few Boar's Head items from the Deli, Boar's Head, Deluxe Roast Beef, Honey Smoked Turkey, Sweet Sliced Ham, and Vermont Cheddar Cheese (Yellow). I'm using the Roast Beef and Vermont Cheddar. I served it on Aunt Millie's Light Whole Grain Bread, topped it with some French's Yellow Mustard. I also had a small side of Ruffle's Reduced Fat Potato Chips.










I also had a Tossed Salad. I had a bag of Dole Greener Selection Salad. For the Salad Dressing I used Kraft Fat Free Classic Catalina Dressing along with a sprinkle of Oscar Mayer Real Bacon Pieces. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Diet Peach Snapple to drink.

To start the morning off I toasted a Healthy Life Whole Grain English Muffin and Poached an Egg. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I started a load of laundry for Mom and then it was on to house cleaning, vacuumed and dusted. Later on got the hand vacuum out and vacuumed my car and Mom's car, both needed it! This morning it was about 32 degrees with a mix of rain and snow! Our first sign of the white 4 letter word! Only had a high today of 44 degrees. Did a few chores around the house and watched some College Football later in the afternoon. I'm shutting down the Kitchen today So with the Kitchen closed tonight it was Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Chips.



I would put Izzy’s Corned Beef up against any other. Plus with their “Lean’ version of the Corned Beef it makes it healthier also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full, as usual, along with a serving of Ruffle’s Reduced Fat Potato Chips. Then to go along with it all I had an ice-cold Diet Dr. Pepper, 0 calories and 0 carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast this morning i prepared a Poached Egg that I served on a toasted Healthy Life Whole Grain English Muffin. Topped it off with my morning cup of Bigelow Decaf Green Tea. Good light and healthy Breakfast! I enjoy Poached Eggs more and more. It was 86 degrees yesterday and 64 degrees today, a bit cooler and it really got windy as the day went on. It was laundry and house cleaning today, all day. For Dinner tonight an Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Chips. I shut the kitchen down for tonight!





I got lazy and didn't feel like cooking so I went to Izzy's and got me and Mom a Sandwich for Dinner
Tonight. I had a Izzy’s famous corned beef, 96% lean cut, on whole wheat bread. I also had some Ruffle’s Reduced Fat Chips along with a Diet Peach Snapple. There’s 360 calories and 32 carbs for a full sandwich. I had half of it and saved the other half for lunch tomorrow, half sandwich 170 calories and 16 carbs. Not only does it look delicious, it is delicious! Izzy’s by far has the best and most tender Corned Beef there is! I bought Mom a Reuben and Potato Pancake. For dessert later a Weight watcher's Cookies and Cream Ice Cream Bar. The Kitchen will reopen tomorrow!
