Butternut Squash Gnocchi with Turkey Bacon
Here’s a side dish that’ll have guests fighting for the leftovers. Fresh butternut squash roasted with rosemary blends with pillowy gnocchi and crispy turkey bacon. Under 500 calories per serving!

INGREDIENTS
6 slices JENNIE-O® Turkey Bacon
3 cups cubed butternut squash
2 sprigs rosemary
1 teaspoon olive oil
1 tablespoon maple syrup
1 (1-pound) package prepared gnocchi, cooked according to package directions
½ cup basil pesto
grated Parmesan cheese, if desired

DIRECTIONS
1) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
2) Toss squash, rosemary, oil and syrup on baking sheet. Roast 45 minutes or until squash is golden and tender, stirring occasionally.
3) In large bowl, toss roasted squash, gnocchi, bacon and pesto until combined. Sprinkle with cheese, if desired.
* Always cook to an internal temperature of 165°F.

Slow Cooker Italian Vegetable Gnocchi Soup
Soup's on! Enjoy a hearty mix of seasonal veggies, gnocchi, and hardwood smoked turkey kielbasa in a savory broth! All you have to do is throw the ingredients into the slow cooker and the rest is magic. Thaw yourself out from the cold outside with a steamy cup or - who are we kidding - bowl!

INGREDIENTS

1 yellow onion, chopped
3 celery stalks, chopped
2 carrots, peeled and chopped
1 medium fennel bulb, stalks removed and chopped
3 garlic cloves, thinly sliced
2 tablespoons tomato paste
1 (28-ounce) can whole peeled tomatoes
1 (15-ounce) can garbanzo beans, rinsed and drained
1 (32-ounce) box vegetable broth
3 cups kale leaves, chopped
2 teaspoons chopped fresh oregano leaves
2 teaspoons chopped fresh thyme leaves
½ (16-ounce) package gnocchi
1 cup chopped fresh basil leaves
½ (14-ounce) package JENNIE-O® Fully Cooked Hardwood Smoked Turkey Kielbasa

DIRECTIONS
1) In slow cooker place, onion, celery, carrots, fennel, garlic, tomatoes, beans, vegetable broth, kale, oregano and thyme. Cook on HIGH 4 hours or LOW 6 to 8 hours.

2) Add gnocchi, basil and kielbasa and cook 30 minutes or until gnocchi is tender.

"Meatless Monday" Recipe of the Week - Potato Gnocchi with Tomatoes and Fresh Mozzarella

Potato Gnocchi with Tomatoes and Fresh Mozzarella

This is Italian comfort food—homemade potato gnocchi served with a tomato sauce and fresh mozzarella. Recipe created by Chef Thomas Catherall, C.M.C.

Recipe Ingredients:

Gnocchi:*
2 pounds russet baking potatoes, peeled and quartered
2 to 2 1/2 cups all-purpose flour
1 large egg, lightly beaten

Sauce:
2 tablespoons extra-virgin olive oil
10 medium tomatoes, peeled, seeded, and diced (or 1 1/2 [28 ounces each] cans Italian plum tomatoes, drained and chopped)
1/2 teaspoon dried oregano leaves
Large pinch crushed red pepper
2 tablespoons balsamic vinegar
1 tablespoon tomato paste
1/4 cup dry red wine
1 teaspoon granulated sugar
Salt, to taste
Freshly ground pepper, to taste
1 to 2 teaspoons red wine vinegar

6 ounces fresh mozzarella cheese, cut in 1/4-inch cubes
3/4 cup freshly grated Parmesan or Romano cheese

Cooking Directions:

1 - For Gnocchi: Place the potatoes in a saucepan and add water just to the level of the potatoes. Salt the water. Bring to a boil and cook until very soft, 25 minutes. Drain well; let stand in the colander for 10 minutes.
2 - Spread the flour on your work surface. With a potato ricer or food mill fit with a medium disk, rice the warm potatoes evenly over the entire top of the the flour. Toss together lightly with your fingers to distribute the potatoes and flour evenly. Make a well in the center and add the egg. Knead to form a ball. Knead 1 minute to gather up all of the bits of flour and potato on the work surface. Cover with an inverted bowl and let the dough rest for 5 minutes.
3 - Divide the dough into 4 equal pieces. On a floured surface, roll each piece into a 1/2-inch-thick rope, approximately 12 inches long. Working with one rope at a time (keeping the others covered with towel), with floured hands, cut through the dough with the curved edge of a fork, every 1/2 inch. On the back edge of the fork, roll each piece forward and back, making fork indentations and shell shapes. Toss with the flour. Place on a floured baking sheet. Repeat with the remaining dough.
4 - Heat salted water in large Dutch oven.
5 - For Sauce: Heat the olive oil in large skillet over medium-high heat. Add the tomatoes, oregano, crushed red pepper, balsamic vinegar, tomato paste, wine, sugar, salt, and pepper. Cook for 3 to 4 minutes, until the liquid begins to evaporate and the sauce thickens slightly. Remove from the heat. Puree in a blender or food processor. Season to taste with salt, pepper, and red wine vinegar. Return to skillet.
6 - To complete the recipe, bring salted water to a boil. Cook about half of the gnocchi until tender, 2 to 3 minutes. Remove with a slotted spoon. Repeat with the remaining gnocchi.
7 - Add the cooked gnocchi to the sauce. Heat thoroughly. Toss in the mozzarella cheese. Sprinkle with grated cheese; serve immediately.

Parmesan Gnocchi and Baked French Bread

Dinner Tonight: Parmesan Gnocchi and Baked French Bread





I just had a cup of Bigelow Decaf Green Tea for Breakfast. I guess I'm kind of burned out on
Breakfast this morning. 68 degrees and mostly sunny today. Good day to finish up some yard work. I got the cart out and started on the yard work. I love getting out and do what I can from the cart. Really miss getting out and doing all the yard work. I had worked for a lawn service many years ago out of high school. But I do what I can from the wheelchair or cart. Had everything done so I took the cart for a ride around the neighborhood. For Dinner tonight I prepared Parmesan Gnocchi and Baked French Bread.







I prepared the Three Bridges Parmesan Gnocchi. I came across this at Meijer a while back. It had
turned out so good I purchased another package of it. Its fresh Potato Gnocchi blended with aged Parmesan Cheese. It comes in a sealed plastic box already seasoned with the Parmesan Cheese.








To prepare I used a medium size pot, sprayed it with Pam Cooking Spray. Filled it half way with
water and heated it on high till it started to boil and reduced the heat to gentle boil and added the Gnocchi. Cooking it for 3 minutes, stirring often. Removed it from the heat and drained the water. Put it in a large bowl and added a 1/2 tablespoon of Light Olive Oil and added a shake of Kraft Reduced Fat Grated Parmesan Cheese and tossed it in the bowl. A Pesto Sauce would be good but Pestos are high in calories and carbs so I stuck with Olive Oil and Kraft Reduced Fat Grated Parmesan Cheese. I’ll be buying more of this. I also baked a loaf of Pillsbury French Bread. For Dessert later a Weight Watchers Cookies and Cream Ice Cream Bar.

"Meatless Monday" Recipe - Basil Gnocchi With Mushroom Ragu

Basil Gnocchi With Mushroom Ragu


INGREDIENTS
2 large russet potatoes, baked, skins removed
3 egg yolks
1/2 teaspoon  salt plus additional to taste
1/2 cup  fresh basil, cut into thin strips
1 1/4 cups  flour plus more for dusting
2 tablespoons  olive oil
1 yellow onion, diced
2 cups  cremini mushrooms, thinly sliced
1/4 cup  freshly grated Parmesan


DIRECTIONS
1. Heat a large pot of salted water over high heat. In a large bowl, mash the potatoes until there are no lumps. Fold in the egg yolks and 1/2 teaspoon of the salt and 1/4 cup of the basil. Sift in 1 cup of the flour; knead gently until dough forms. Add remaining flour; knead until dough is soft, not sticky. (Don't overwork dough.) Form into a disk.
2. Transfer dough to a floured work surface and divide into 6 equal pieces. Roll pieces lengthwise until they are 3/4 inch in diameter. Sprinkle with flour and cut crosswise into 1/2-inch pieces. Spread gnocchi on a floured baking sheet and let sit 5 minutes.
3. Heat 1 tablespoon of the olive oil in a large pan over medium heat. Add the onion and saute until soft, 5 minutes. Add the mushrooms and cook 10 minutes.
4. Meanwhile, add gnocchi to boiling water. Cook 3 to 4 minutes, until all the dumplings rise to the surface. Using a slotted spoon (to allow all excess water to drain off), transfer to a bowl and toss with remaining olive oil and salt to taste. Divide among four plates and top with mushroom ragu. Garnish with the remaining basil and Parmesan.

Rotisserie Chicken w/ Potato Gnocchi in Sockarooni Sauce & Mushrooms, and Whole Grain Bread


Dinner Tonight: Rotisserie Chicken w/ Potato Gnocchi in Sockarooni Sauce & Mushrooms, and Whole Grain Bread


Chicken on a bed of Italian Dumplings (Gnocchi ) topped with Mushrooms and Sockarooni Sauce! More about the Sockarooni Sauce later. I purchased a Kroger Rotisserie Chicken earlier this afternoon and took off all the skin and pulled the meat from the bones. Added just a bit of Sea Salt and Ground Black Pepper to it to liven it up a bit.

Now the Sockarooni. Sockarooni is a Pasta Sauce made by Newman's Own. It's a fantastic sauce with great seasoning with Red and Green Bell Peppers and Mushrooms. First time I've used it and I'll be stocking up on this! I sliced up 4 Baby Bella Mushrooms and added those to the sauce.

I used Borelli Gourmet Foods Gnocchi Patate Italian Potato Dumplings. It's the first time I used these also and will not be the last! Great tasting Gnocchi and it's only 144 calories and 34 carbs, not bad for Gnocchi. To assemble all this I made a bed of Gnocchi and topped with my pulled Chicken and then topped that with the Sockarooni Sauce and then topped that with fresh grated some Dutch Gouda. We have a winner! It was delicious and the seasoning and flavor was outstanding. For dessert later a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.
