Corn Cakes with Turkey Salad


Ingredients
TURKEY SALAD
¼ cup fat-free mayonnaise
1 cup chopped JENNIE-O® DELI FAVORITES® Oven Roasted Turkey Breast
2 tablespoons chopped green pepper
2 tablespoons chopped red pepper
¼ cup thinly sliced green onion
¼ cup diced celery
CORN CAKES
2 cups frozen corn kernels, thawed
½ cup thinly sliced green onion
⅓ cup flour
½ teaspoon baking powder
½ teaspoon baking soda
2 teaspoons milk


Directions
To make the turkey salad, in bowl combine, mayonnaise, turkey, green and red pepper, onion and celery; cover and refrigerate until ready to use.

To make the corn cakes, in bowl combine, corn, onion, flour, baking powder, baking soda and milk. Heat a non-stick skillet over medium heat. Drop 1 tablespoon of corn cake mixture about 1½-inches apart in hot skillet. Spread mixture to make corn cakes round. Cook about 2 minutes per side until golden brown.

Place corn cakes on a serving platter. Top with turkey salad mixture.
