Panko Crusted Baked Shrimp w/ Mac and Cheese

Dinner Tonight: Panko Crusted Baked Shrimp w/ Mac and Cheese






Started with a Breakfast of Turkey Goetta and Hash Brown Skillet! I love using Goetta in any Breakfast Dish. It was a little bit hotter and more humid out today. Still working on cleaning out the shed and worked on the computer today. Had to purchase a new mouse for the computer, the old one kept conking out on me. For dinner tonight I prepared Panko Crusted Baked Shrimp w/ Mac and Cheese.






I found the Shrimp recipe on the back of a box of Shake and Bake Panko Bread Crumbs. I'm a Shrimp lover so why not make as healthy as you can. Baking over frying, to save on those calories and carbs. I needed the following to prepare the Shrimp; 16 oz jumbo shrimp (peeled and deveined), sea salt and pepper to taste, 1/4 cup egg substitute (Egg Beaters), 1 packet of Shake and Bake Panko Bread Crumbs, 1 tbsp Kraft Reduced Fat Grated Parmesan Cheese, and Pam Cooking Spray. The original recipe didn't call for the Parm Cheese, I added that.





To prepare start by preheating the oven to 400°. Spray a baking sheet with cooking spray. Put the egg beaters in one bowl, and the breadcrumbs, panko and Parmesan cheese in another bowl. Wash and dry the shrimp. Season shrimp with salt and pepper, then put a few at a time in the bowl with the egg beaters to coat. Put a few pieces of shrimp at a time into the breadcrumb mixture to coat, then on a baking sheet. Spray the top of the shrimp with baking spray then bake in the middle rack for about 6-7 minutes. Turn shrimp over then cook another 3 minutes or until cooked though. Remove from oven and serve right away. These Shrimp are the bomb! You have that delicious taste of the Shrimp, the tangy sharpness of the Parm Cheese and the crunch of the Panko. Another one of those keeper recipes! For a side I prepared a Microwavable Bowl of Kraft Cheese and Shells, made with 2% Milk. For dessert later a bowl of Breyer's Carb  Chocolate Ice Cream.






Panko Crusted Baked Shrimp

Ingredients:

16 oz jumbo shrimp, peeled and deveined
sea salt and pepper to taste
1/4 cup egg substitute (egg beaters)
1 packet Shake and Bake Panko Bread Crumbs
1 tbsp Kraft Reduced Fat Grated Parmesan Cheese
Pam Cooking Spray



Directions:

Preheat oven to 450°. Spray a baking sheet with cooking spray.

Put the egg beaters in one bowl, and the breadcrumbs, panko and parmesan cheese in another.

Wash and dry the shrimp. Season shrimp with salt and pepper, then put a few at a time in the egg beaters to coat. Put a few pieces of shrimp at a time into the breadcrumb mixture to coat, then on a baking sheet.

Spray the top of the shrimp generously with baking spray then bake in the middle rack for about 6-7 minutes. Turn shrimp over then cook another 3 minutes or until cooked though. Remove from oven and serve right away.

Ingredients

Directions
Quick Prep! Heat oven to 400 degrees F. Moisten 2 lb boneless skinless chicken breasts (6 to 8 breasts) with water. 1. Shake chicken, 1 or 2 pieces at a time, in shaker bag with 1 pkt. coating mix. Discard bag and any remaining coating mix. 2. Bake in ungreased or foil-lined 15x10x1-inch pan 20 minutes or until done (minimum internal temperature of 165 degrees F when tested with meat thermometer). Do not cover or turn chicken while baking.

Bread Crumb Crusted Tilapia w/ Shells and Cheese, Green Beans, and…


Today’s Menu: Bread Crumb Crusted Tilapia w/ Shells and Cheese, Green Beans, and Whole Grain Bread




I prepared a Bread Crumb Crusted Tilapia w/ Velveeta Shells and Cheese, Green Beans, and Whole Grain Bread for dinner tonight. The Tilapia are the ones I purchased from Costco a while back. They come preseasoned and already breaded. I fried them on a flat top grill pan. I really like using the grill pans. No oil needed just spray it with Pam Spray and it's ready. I fried them about 4 minutes per side, until golden brown.

Then for a sides I prepared a single serving of Del Monte Cut Green Beans and I also microwaved a single serving of Velveeta/Kraft Shells & Cheese (made with 2% milk). For Bread i used Aunt Millie's Light Whole Grain Bread. Later tonight for dessert a 4 Slice Package of Dole Banana Dippers (Covered in Dark Chocolate).




Tilapia

Tilapia (pron.: /tɨˈlɑːpiə/ ti-la-pee-ə) is the common name for nearly a hundred species of cichlid fish from the tilapiine cichlid tribe. Tilapia are mainly freshwater fish, inhabiting shallow streams, ponds, rivers and lakes, and less commonly found living in brackish water. Historically, they have been of major importance in artisan fishing in Africa and the Levant, and are of increasing importance in aquaculture. Tilapia can become problematic invasive species in new warm-water habitats, whether deliberately or accidentally introduced, but generally not in temperate climates due to their inability to survive in cooler waters below about 21 °C (70 °F).


Whole tilapia fish can be processed into skinless, boneless (PBO) fillets: the yield is from 30 percent to 37 percent, depending on fillet size and final trim. The use of tilapia in the commercial food industry has led to the virtual extinction of genetically pure bloodlines. Most wild tilapia today are hybrids of several species.
Tilapia have very low levels of mercury, as they are fast-growing, lean and short-lived, with a primarily vegetarian diet, so do not accumulate mercury found in prey. Feral tilapia, however, may accumulate substantial quantities of mercury. Tilapia is low in saturated fat, calories, carbohydrates and sodium, and is a good protein source. It also contains the micronutrients phosphorus, niacin, selenium, vitamin B12 and potassium.

However, typical farm-raised tilapia (the least expensive and most popular source) have low levels of omega-3 fatty acids (the essential nutrient that is an important reason that dieticians recommend eating fish), and a relatively high proportion of omega-6. "Ratios of long-chain omega-6 to long-chain omega-3, AA to EPA, respectively, in tilapia averaged about 11:1, compared to much less than 1:1 (indicating more EPA than AA) in both salmon and trout," reported a study published in July 2008. The report suggests the nutritional value of farm-raised tilapia may be compromised by the amount of corn included in the feed. The corn contains short-chain omega-6 fatty acids that contribute to the buildup of these materials in the fish.
The lower amounts of omega-3 and the higher ratios of omega-6 fats in US-farmed tilapia raised questions about the health benefits of consuming farmed tilapia fish. Some media reports even controversially suggested that farm-raised tilapia may be worse for the heart than eating bacon or a hamburger. This prompted the release of an open letter, signed by 16 science and health experts from around the world, that stated that both oily (i.e. high in omega-3 fatty acids) fish and lean fish like tilapia are an important part of the diet and concluded that "replacing tilapia or catfish with 'bacon, hamburgers or doughnuts' is absolutely not recommended."


Velveeta Shells and Cheese - 2% Milk Cheese

Shells and Cheese - 2% Milk Cheese. Microwaveable shell pasta and cheese sauce. Made with 2% milk cheese; 1/2 the fat of regular microwaveable shell and cheese. Ready in 3-1/2 minutes. Fat per serving: Regular Microwaveable Shells and Cheese: 8 g.

Dinner Tonight: Fried Catfish Nuggets w/ Hash Browns and Velveeta Shells and Cheese


It was Catfish Nuggets for dinner tonight. I used 2 pie pans to prepare the nuggets filling one with EggBeater’s seasoned with Paprika and in the other Italian Style Bread Crumbs. I seasoned the Catfish with McCormick Grinder Sea Salt and Black Peppercorn and then dipped each one in the Egg Beater’s, making sure each was well coated. Shaking off the excess Egg Beater I then rolled them in the Progresso Italian Style Bread Crumbs. I fried them in Canola Oil on medium heat about 4 – 5 minutes, turning once. They came up golden brown and delicious! Catfish fries up so good. Baking Fish is a lot healthier but Catfish is a Fish that tastes better fried. I also made a Remoulade Sauce. Made with Reduced Fat Mayo, Chili Sauce, and Horseradish Sauce along with some spices. I left the full recipe at the end of the post.



For sides I had Simply Potatoes Hash Browns and I also prepared an individual serving of Velveeta 2% Shells and Cheese. Easy to prepare, microwave 3 1/2 minutes, and just as good as fixing it from a box. For dessert later a Skinny Cow Frozen Ice cream Truffle Bar.



Remoulade Sauce

Ingredients

1 Cup Light Mayonnaise
2 tbsp Chili Sauce
1 tsp Garlic Salt
tsp Curry Powder, or to taste
1 Tbsp Hot Prepared Horseradish
1 tsp Dry Mustard

*Add all ingredients to jar or container
*Mix until well blended
*Refrigerate overnight or at least 4 hours before serving.

Fried Yellow Lake Perch w/ Mac & Cheese, Green Beans, and...


Dinner Tonight: Fried Yellow Lake Perch w/ Mac & Cheese, Green Beans and Cornbread



I'm using the last of my Yellow Lake Perch I had frozen. It's time to make another trip to  Meijer to stock up on the Yellow Lake Perch. I love Fish and all Sea Food. I washed the Perch and patted them dry then seasoned them with Sea Salt and Ground Black Pepper. The fillets are small and I cut them in half. I then took a Ziplock Bag and put a 1/2 cup of Progresso Italian Style Breadcrumbs in it and added my fillets and shook the bag until the fillets were coated. I pan fried the fillets in Extra Virgin Olive Oil, about 2 1/2 minutes per side. As I said earlier the fillets were small and not very thick so they fried up real quick. They came out golden and delicious!

For side dishes I had Mac & Cheese, Green Beans and Cornbread.I microwaved a single serving of Velveeta/Kraft Shells & Cheese (made with 2% milk). I also heated a single serving of Del Monte Cut Green Beans and made a small cast iron skillet of Cornbread! Cornbread is the perfect bread with fish.  I used Martha White Corn Meal Mix. It’s easy to fix, the instructions are on the bag. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. For dessert later a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.

Dinner Tonight: Fried Walleye Fillet w/ Mac & Cheese, Sugar Snap Peas, and Whole Grain Bread




Fall was in the air around here today.They say we are in for a beautiful stretch of weather coming up for the next 4 - 5 days, 70 and Sunny! I had a beautiful Walleye fillet, thank you Meijer Seafood Dept., for dinner tonight. I washed the fillet off and patted it dry. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then rolled the fillet in a Flour and Bread Crumb mix and skillet fried in Extra Virgin Olive Oil, about 4 minutes per side. I just love the taste of Walleye and it browns perfectly when fried.

For side dishes I had Velveeta 2% Shells & Cheese, Sugar Snap Peas, and Healthy Life Whole Grain Bread. The Velveeta Shells and Cheese is the easy way to have Mac and Cheese. It comes in a microwavable container. Just add water and microwave for 3 1/2 minutes and it's ready. The Sugar Snap Peas are from Walmart Produce. I've been buying the Snap Peas for the past month or so. Their fresh, crisp, and full of flavor! For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

One delicious meal tonight! While at Meijer yesterday they had Yellow Lake Perch on sale and I couldn't pass them by. I love Fish and all Sea Food. I washed the Perch and patted them dry then seasoned them with Sea Salt and Ground Black Pepper. The fillets are small and I cut them in half. I then took a Ziplock Bag and put a 1/2 cup of Progresso Italian Style Breadcrumbs in it and added my fillets and shook the bag until the fillets were coated. I pan fried the fillets in Extra Virgin Olive Oil, about 2 1/2 minutes per side. As I said earlier the fillets were small and not very thick so they fried up real quick. They came out golden and delicious!

For side dishes I had Potato Pancakes, Mac & Cheese, and Cornbread. I used MANISCHEWITZ Potato Pancake Mix. Very easy to make and one great tasting Potato Pancake! Just mix with Water, Extra Virgin Olive Oil, Egg Beaters, Sea Salt, and Pepper. Fry until golden and your ready! I left the product info and directions at the end of the post. I also microwaved a single serving of Velveeta/Kraft Shells & Cheese (made with 2% milk). I also warmed a piece of Cornbread that I leftover from an earlier meal in the week. For dessert a slice of Pillsbury Nut Quick Bread. Have a great and safe weekend everyone!




MANISCHEWITZ Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.
