Fried Walleye w/ Whole Grain Brown Rice and Whole Baby Carrots

Dinner Tonight: Fried Walleye w/ Whole Grain Brown Rice and Whole Baby Carrots







For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with
Smucker’s Sugar Free Blackberry Jam. Then I prepared some Simply Potatoes Shredded Hash Browns along with frying up a couple of Jennie – O Turkey Breakfast Sausage Links. Also had a cup of Bigelow Decaf Green Tea. Lot of rain overnight, a couple of thunderstorms had the night lit up. Mostly cloudy today high in the 70's. After Breakfast did a load of laundry for Mom. Then after Lunch went up to see Dad for a while at rehab. He's been doing a lot better of late. Back home not a lot going on so I caught up on some shows I had recorded. For Dinner tonight its Fried Walleye w/ Whole Grain Brown Rice and Whole Baby Carrots.


I had purchased a couple of small Walleye Fillets at Meijer yesterday and had them in the fridge. To
prepare them I rinsed them off in cold water and patted them dry with a paper towel. Seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!










To go with the Walleye I prepared some Uncle Ben’s Ready Rice – Whole Grain Brown Rice. To
prepare it just microwave. It comes in a microwavable Pouch. Just heat for 90 seconds and serve! Rice comes out perfect, steaming hot and fluffy.








Then I also heated up a can of Kroger Brand Whole Baby Carrots. These are so much easier to
prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. I also baked a loaf of Pillsbury French Bread. Then for Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Sweet BBQ Chicken Kabobs w/ Whole Grain Brown Rice

Went outside last night about 10:00 and was able to watch several Fireworks Shows around the area. A lot of the Firework Shows were moved up because of heavy rain prediction for the 4th of July (Monday). Mom went to Church this morning and I stayed home to keep an eye on Dad and it was house cleaning day today. I made some Pancakes for Breakfast this morning. Made them with Bisquick Heart Smart. Also fried up 3 slices of Jennie - O Turkey Bacon. After Lunch went over to see a friend of mine, he had bought a new car and he wanted me to stop by and check it out. Amazing what the new cars are equipped with now! For dinner tonight staying with the Chicken. So last night it Chicken and Fries and tonight It's Chicken in a different way, tonight it's Sweet BBQ Chicken Kabobs w/ Whole Grain Brown Rice.





Came across a new item at Meijer yesterday and couldn't wait to give it a try! Tonight I'm trying the new Johnsonville Sweet BBQ Chicken Kabobs. Meijer had 3 different kinds but I wanted to give the Sweet BBQ Chicken Kabobs first. You can grill them or bake them, so I'm baking mine. Our grill died and I haven't replaced it. So the Kabobs come fresh and in a sealed package of 4 seasoned and skewered Kabobs.




To prepare them I preheated the oven to 425°F. Placed the Kabobs on foil-lined backing pan coated with Pam Cooking Spray. Baked for 15 minutes, turning once. And done! How easy is this, a one pan cleanup. Johnsonville has it's self another winning dish! The Chicken is moist and tender with nice seasoning. These would be great for parties or grilling out for the family. Looking forward to trying the other types.






To go with the Kabobs I prepared some Uncle Ben's Ready Rice - Whole Grain Brown Rice. To
prepare it just microwave. It comes in a icrowavable Pouch. Just heat for 90 seconds and serve! Rice comes out perfect, steaming hot and fluffy.










I wanted something else to go with everything, something light and fresh. So I went with a Fruit Medley. So out of the pantry I grabbed a can of Del Monte Diced Mangos and a can of Dole
Pineapple Chunks. I then I chopped up some Cilantro. I opened the cans of Mango and  Pineapples up and drained the Juice from each one in separate bowl. I'm going to use juices to flavor the dish. Place the Mango, Pineapple, and Cilantro in a mixing bowl. Stir in the Juice of 1 of the fruits or combinations of all the Juices, no certain amount just adjust it to your own tastes. Stir, and cover and refrigerate for at least an hour before serving. Turned out great, it hit the spot! Fresh and Fruity, nice side. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Black Bean Chicken with Rice Recipe w/ Baked Italian Loaf Bread

Dinner Tonight: Black Bean Chicken with Rice Recipe w/ Baked Italian Loaf Bread







I'll start off by wishing my Mom a "Happy Birthday", she turns 88 today! I just hope if I reach that age that I'm able to get around and do things as good as she does. Love you Mom!! I made Breakfast this morning for all of us. I prepared what is quickly becoming our favorite Breakfast dish, Ham and Diced Potato Skillet.









I used Simply Potatoes Diced Steakhouse Potatoes and a package of Meijer Diced Ham. Using a
Cast Iron Skillet I started by frying the Diced Potatoes. After about 9 minutes I then added the Diced
Ham and stirred. In about 14 minutes it was ready! As the Potato/Ham was finishing I grabbed a
small skillet and fried one Egg, Sunnyside Up. To serve made a bed of Potatoes and Ham and topped that with the Sunnyside Egg. Broke the Egg open and it just pulled the entire meal together! One hearty Breakfast and a favorite of Mom and Dad's! After Breakfast I gave Mom her Birthday Presents and Birthday Cake. Afterwards I went to Meijer for a few items, I'm using Meijer more and more. For dinner tonight I tried a new recipe, Black Bean Chicken with Rice Recipe w/ Baked Italian Loaf Bread.






I came across this recipe in an issue of Simply Delicious (Taste of Home). Black Beans, Chicken,
Rice and throw in Corn and Salsa I was sold For the Chicken I used Perdue Perfect Portions Chicken Breasts. I use the Perdue Perfect Portions Chicken Breasts quite often. They come in a package of 5 breasts and 2 types; Italian Seasoned and Plain Breasts. Anyway I grabbed 2 of the Breasts out of the freezer and let them thaw overnight in the fridge. To season the Chicken I'll need 2 teaspoons Extra Virgin Olive Oil, 3 teaspoons Chili Powder, 1 teaspoon Ground Cumin, 1 teaspoon Pepper, and 1/4 teaspoon Sea Salt. To make the dish I'll need; the Perdue Perfect Portions Chicken Breasts, 1 can Bush's Low Sodium Black Beans, Sliced Black Olives, 1 container of Uncle Ben's  Natural Whole Grain Brown Rice, 1 can Del Monte Summer Crisp Golden Sweet Corn, and Kroger Organic Medium Salsa.




To prepare the dish In a small bowl, mix the seasonings; sprinkle over both sides of chicken. In a
large nonstick skillet coated with Pam Cooking Spray, heat olive oil over medium heat. Brown the chicken on both sides. Add the beans, corn and salsa to skillet; cook, covered, 10-15 minutes or until a thermometer inserted in chicken reads 165°. Remove chicken from pan; cut into slices. Serve with bean mixture and rice. Wow, INCREDIBLE! Another delicious recipe from Taste of Home! Just a fantastic combination of ingredients! Beans, Chicken, Olives, Rice, Corn, and the Salsa just seems to bring it altogether. Another one of those "Keeper Recipes". Plus it's a one pot meal, which I love, and easy cleanup. I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a bowl of Breyer's Carb Smart Chocolate Ice Cream.








Black Bean Chicken with Rice Recipe

Ingredients
3 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon pepper
1/4 teaspoon salt
4 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons canola oil
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn
1 cup salsa
2 cups hot cooked brown rice

Directions
1 - In a small bowl, mix seasonings; sprinkle over both sides of chicken. In a large nonstick skillet coated with cooking spray, heat oil over medium heat. Brown chicken on both sides.
2 - Add beans, corn and salsa to skillet; cook, covered, 10-15 minutes or until a thermometer inserted in chicken reads 165°. Remove chicken from pan; cut into slices. Serve with bean mixture and rice. Yield: 4 servings.

Nutritional Facts
1 chicken breast half with 3/4 cup bean mixture and 1/2 cup rice equals 400 calories, 7 g fat (1 g saturated fat), 63 mg cholesterol, 670 mg sodium, 52 g carbohydrate, 8 g fiber, 32 g protein.

Dinner Tonight: Thai Chili Seasoned Baked Salmon w/ Sugar Snap Peas and Whole Grain Brown Rice




It's been a down day. Woke up with an upset stomach and just haven't felt up to par all day. Feel good or not had things around the house that had to get done. For breakfast just had a small bowl of Kashi 7-Grain Puffs Cereal  and my morning Bigelow Decaf Green Tea. Mom had to be somewhere at 11:00 this morning so I finished up a load of laundry for her. Then dusted and vacuumed the house and swept up outside. After getting everything done I took a nap for the rest of the afternoon. For dinner tonight; Thai Chili Seasoned Baked Salmon w/ Sugar Snap Peas and Whole Grain Brown Rice.





While at Kroger the other day I came across an item I had never seen, Rebel Fish. It was in the Seafood Department and it's a Salmon Fillet seasoned with a Thai Chili Rub. The rub has blend of sweet coconut milk, spicy chili and zesty lemongrass. Rebel Fish has 6 different Rubs, they only had the Thai in stock. So I grabbed a package to give it a try, and glad I did! You can prepare by the Microwave or by Oven, I opted to go with the oven prep.





To start preheat oven to 400°F. Cut away soft film from tray; remove salmon and place on a  foil-lined baking sheet. Discarded the extra liquid in pouch. Shake the seasoning pouch to make sure contents flow freely and sprinkle over salmon. Using the back of a spoon press to adhere seasonings to fish. Bake for 12-15 minutes, until salmon is cooked through (internal temperature of 145°), and flakes easily. Very little mess to clean up, easy to prepare, and it's delicious! Nice heat to it but not overpowering. I'll have to keep this in stock.






For one side I prepared some Sugar Snap Peas. To prepare them I heated 1/2 tablespoon of Extra Olive Oil in a medium saute pan over medium-high heat. Added the Sugar Snap Peas, tossing occasionally for 5 to 6 minutes, until the Sugar Snap Peas were crisp tender. I also prepared some Uncle Ben's Whole Grain Brown Ready Rice. Comes in a microwave ready pouch, just heat for 90 seconds and serve! For dessert later a Jello Sugar Free Dark Chocolate Pudding.
