Chicken and Wild Mushroom Ravioli

Dinner Tonight: Chicken and Wild Mushroom Ravioli

For Breakfast this morning I prepared a Poached Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had the morning cup of Bigelow Decaf Green Tea. Rain came in overnight and is here for the rest of the day, its in the 50's. Did some more cleaning today, cleaned the oven and stove. Then i had picked up some more furniture coasters the other day and put some underneath a table and the love seat. These coasters are so nice. All the furniture can be moved with ease when you need to clean. For Dinner tonight I prepared a new item, Three Bridges Wild Mushroom Ravioli. Tonight its Chicken and Wild Mushroom Ravioli.

For the Chicken I used Perdue Perfect Portions Skinless and Boneless Chicken Breasts. I had them in
the freezer so I let them thaw overnight in the fridge. I love the Perdue Perfect Portions Chicken Breasts. Always taste fresh and nice size. To prepare; removed them from the package and seasoned them with Sea Salt and Litehouse Freeze Dried Poultry Herb Blend. Then I sprinkled them with a light dusting of Flour. Cooked them in a medium size skillet that was sprayed with Pam Cooking Spray and a tablespoon of Extra Virgin Olive Oil. Fried them on medium high heat for about 11 minutes, flipping it over 3 times. Removed from the heat and set aside. As the Chicken was cooking I sliced up some Mushrooms and Sauteed them in the skillet also. Removed from the heat and set aside. After they had cooled I sliced the Chicken Breasts up.

As the Chicken was finishing I prepared the Three Bridges Wild Mushroom Ravioli. First time preparing this and its very easy to prepare. Bring a large pot of water to a gentle boil. Add ravioli and cook for 5 minutes. Remove the pot from heat and strain the Ravioli.

Then tossed with 1 tablespoon of Light Olive Oil and a small jar of Ragu Homemade Style Sauce. To
serve I made a bed of the Ravioli in a bowl and topped it with the sliced Chicken Breast, Sauteed Sliced Mushrooms, and a bit more of the remaining Sauce and a sprinkle of Kraft Reduced Fat Grated Parmesan Cheese. The Ravioli is very tender and a excellent Mushroom taste! The Chicken and sauce worked perfect with it. Another very good item I came across at Meijer. I've noticed more and more new items at Meijer lately, and that's a good thing! For dessert later a bowl of Dole Sliced Peaches.

Skillet Chicken Bacon Ranch Dinner w/ Baked Italian Loaf Bread

Dinner Tonight:  Skillet Chicken Bacon Ranch Dinner w/ Baked Italian Loaf Bread

It's the warmest morning we have had in a while, 61 degrees to start the day. For Breakfast I had a
Cheese Omelet. Made it with 2 medium size eggs, a splash of 2% milk, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Also had a slice of toasted Healthy Life Whole Grain Bread and my morning cup of Bigelow Decaf Green Tea. Did some house cleaning today; ran the vacuum, dusted, and cleaned the kitchen. Cloudy and windy all day, blowing in some heavy rain for the late afternoon and evening. For dinner to night tried something new, Velveeta Cheesy Skillets Chicken Bacon Ranch Dinner. Tonight it's  Skillet Chicken Bacon Ranch Dinner w/ Baked Italian Loaf Bread.

Came across a box of the Velveeta Cheesy Skillets Chicken Bacon Ranch Dinner while at Meijer a
while back and I'm finally getting around to using it. Just the name alone, Chicken Bacon Ranch Dinner, sounds delicious! The box contains; Pasta, Seasoning Packet, Velveeta Cheese Sauce Packet, and Bacon Bits. I'll be adding the Chicken and 2 Cups water, I also seasoned it with Morton's Lite Salt and topped with some a sprinkle of Shredded 3 Cheese Blend (Parmesan, Romano, and Aiago Cheese).

To prepare it I started by cooking the Chicken. I used 3 Perdue Perfect Portions Chicken Breasts that
I cut into bite size pieces. I heated up a large skillet that I sprayed with Pam Cooking Spray and added I tablespoon of Extra Virgin Olive Oil. Cooked it on medium heat until cooked through and the juices ran clear.

As the Chicken was finishing I added 2 cups of Water, the Pasta, and the Seasoning Packet. Stirred
and brought it to a boil. Reduced the heat and covered the skillet. Simmered for 12 minutes, stirred it frequently. Removed it from the heat. Next stirred in the Velveeta Cheese Sauce and sprinkled with the Crumbled Bacon. Served it in a bowl with a sprinkle of the 3 Cheese Blend. I have another item to keep handy in the Pantry! Really like this dish. The Chicken goes perfect with the Pasta and Creamy Cheese Sauce. Then the Crumbled Bacon gives it a nice crunch. Plus it's a 1 pot meal, which I love! Winner, Winner Skillet Dinner! I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert/snack later some Multi Gran Totistos Scoops with some Newman's Own Black Bean and Corn Salsa.

Black Bean Chicken with Rice Recipe w/ Baked Italian Loaf Bread

Dinner Tonight: Black Bean Chicken with Rice Recipe w/ Baked Italian Loaf Bread

I'll start off by wishing my Mom a "Happy Birthday", she turns 88 today! I just hope if I reach that age that I'm able to get around and do things as good as she does. Love you Mom!! I made Breakfast this morning for all of us. I prepared what is quickly becoming our favorite Breakfast dish, Ham and Diced Potato Skillet.

I used Simply Potatoes Diced Steakhouse Potatoes and a package of Meijer Diced Ham. Using a
Cast Iron Skillet I started by frying the Diced Potatoes. After about 9 minutes I then added the Diced
Ham and stirred. In about 14 minutes it was ready! As the Potato/Ham was finishing I grabbed a
small skillet and fried one Egg, Sunnyside Up. To serve made a bed of Potatoes and Ham and topped that with the Sunnyside Egg. Broke the Egg open and it just pulled the entire meal together! One hearty Breakfast and a favorite of Mom and Dad's! After Breakfast I gave Mom her Birthday Presents and Birthday Cake. Afterwards I went to Meijer for a few items, I'm using Meijer more and more. For dinner tonight I tried a new recipe, Black Bean Chicken with Rice Recipe w/ Baked Italian Loaf Bread.

I came across this recipe in an issue of Simply Delicious (Taste of Home). Black Beans, Chicken,
Rice and throw in Corn and Salsa I was sold For the Chicken I used Perdue Perfect Portions Chicken Breasts. I use the Perdue Perfect Portions Chicken Breasts quite often. They come in a package of 5 breasts and 2 types; Italian Seasoned and Plain Breasts. Anyway I grabbed 2 of the Breasts out of the freezer and let them thaw overnight in the fridge. To season the Chicken I'll need 2 teaspoons Extra Virgin Olive Oil, 3 teaspoons Chili Powder, 1 teaspoon Ground Cumin, 1 teaspoon Pepper, and 1/4 teaspoon Sea Salt. To make the dish I'll need; the Perdue Perfect Portions Chicken Breasts, 1 can Bush's Low Sodium Black Beans, Sliced Black Olives, 1 container of Uncle Ben's  Natural Whole Grain Brown Rice, 1 can Del Monte Summer Crisp Golden Sweet Corn, and Kroger Organic Medium Salsa.

To prepare the dish In a small bowl, mix the seasonings; sprinkle over both sides of chicken. In a
large nonstick skillet coated with Pam Cooking Spray, heat olive oil over medium heat. Brown the chicken on both sides. Add the beans, corn and salsa to skillet; cook, covered, 10-15 minutes or until a thermometer inserted in chicken reads 165°. Remove chicken from pan; cut into slices. Serve with bean mixture and rice. Wow, INCREDIBLE! Another delicious recipe from Taste of Home! Just a fantastic combination of ingredients! Beans, Chicken, Olives, Rice, Corn, and the Salsa just seems to bring it altogether. Another one of those "Keeper Recipes". Plus it's a one pot meal, which I love, and easy cleanup. The original recipe and web link is at the end of the post.

I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a bowl of Breyer's Carb Smart Chocolate Ice Cream.

Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta

Dinner Tonight: Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta

No rain and lots of sunshine, a beautiful Spring Day! Breakfast and my workout, then outside!
Well the "Freezer Meal Week" is over but I'm going to continue using freezer products until it gets somewhat empty. Plus it saves money on the grocery bill by using what I have. So tonight I'm using Perdue Perfect Portions Chicken Breasts, took 2 the Chicken Breasts out of the package and let them thaw overnight in the fridge. Dinner tonight it's, Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta

I've always enjoyed Hamburger Helpers - Betty Crocker Crispy Cheddar Bacon Chicken – Chicken
Helper. I’ve tried a few of them now but this is my favorite by far. This really turns out delicious and easy meal to prepare! The Rotini and Cheese Sauce is excellent and the Seasoned Crumb Coating with Natural Bacon Flavor for the Chicken is one of the better Crumb Coatings I’ve had for Chicken. To prepare it first go ahead and make the Pasta, by the box directions. Then prepare your Chicken, I used Perdue Perfect Portions Chicken Breasts. I cut each Breast into 3 pieces. Coated each piece with the provided Seasoned Crumbs and fried. The full instructions are at the end of the post. The Chicken Helper box contains Rotini Pasta with Naturally Flavored Cheesy Sauce Mix & Seasoned Crumb Coating with Natural Bacon Flavor. I added the Chicken, Water, 2% Milk, Extra Virgin Olive Oil, Sea Salt and Pepper. It all comes together for one easily made and delicious dinner. I also had a slice of Klosterman Wheat Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Chicken ‘n’ Noodles w/ Sliced Carrots and Sour Dough Mini Boule

Dinner Tonight: Chicken ‘n’ Noodles w/ Sliced Carrots and Sour Dough Mini Boule

Still not at full strength after my bout with the flu. Made a light Breakfast and then headed out to Kroger and to run a couple of errands for Mom. Mom's somewhat better but still not feeling good at all. Dad will be in the hospital another 2-3 days, has some fluid around his lungs that they want cleared up. For dinner tonight I prepared Chicken ‘n’ Noodles w/ Sliced Carrots and a Sour Dough Mini Boule.

I used Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Another of my favorite Comfort Foods! I used to buy this at Walmart all the time but Margaret Holmes no longer makes it, lack of sales they say. So now I purchase it on-line from different sites, last of their stock. Anyway it comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Perdue Perfect Portions Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right.

I also had of side of boiled Baby Carrots and baked a Sour Dough Mini Boule. This dinner was just what the doctor ordered, Mom had 2 bowls of it! Most she's had to eat in quite a while! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Leftovers: Chicken ‘n’ Noodles w/ Green Beans

Today's Menu: Leftovers: Chicken ‘n’ Noodles w/ Green Beans

A beautiful morning turned into one beautiful day here today! It was about 54 this morning and had a high of about 70 degrees and sunny. Caught up on some laundry and got the cart out and went down to the neighborhood lake and did some fishing. Caught some Bluegill and a couple of small Bass, I released all of them back. Dad is getting a little stronger, Mom took him out to eat tonight at Richard's. They love the Steak Hogies. For me it was Leftovers, Chicken ‘n’ Noodles w/ Green Beans.

The Chicken ‘n’ Noodles were so good I couldn't see them going to waste so it was Leftovers for me tonight! I reheated the Chicken ‘n’ Noodles and Mom had made some Green Beans the other night so I reheated those also. Here's how to make my Chicken ‘n’ Noodles.

I used Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Another of my favorite Comfort Foods! I used to buy this at Walmart all the time but they no longer make it, lack of sales they say. Rich and thick and seasoned just right. Leftovers are a good thing! For dessert later more Leftovers; Mom had made some Fried Apples for Breakfast so I reheated those for dessert tonight.

Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread

Dinner Tonight: Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread

Had plenty of rain overnight, but no big storms as they predicted. After the rains passed through it took the high humidity and high temps with it. As our day went on the temperature kept dropping to about 71 degrees, love that! Dad finally got to come home today, about time! He's doing a lot better, he'll still have to take therapy here at the house for a while. But it beats staying at those rehab centers. For dinner tonight I prepared Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread.

Rich and thick and seasoned just right.

I also had of side of Boiled Sliced Carrots leftover that I warmed up and a slice of Healthy Life Whole Grain Bread, that I buttered with I Can’t Believe It’s Not Butter. Then for dessert later tonight a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Roasted BBQ Chicken Breasts w/ Jalapeno Cheddar Fried Potatoes and Green Beans

Dinner Tonight: Roasted BBQ Chicken Breasts w/ Jalapeno Cheddar Fried Potatoes and Green Beans

I guess I hurt my wrist more than I had though. It was really aching throughout the night, but as the day wore on it eased up. Ran a friend to the Cincinnati Airport, he was off to New York. Went to the store for a few items and back home. For dinner a new Potato recipe along with Chicken. Tonight its Roasted BBQ Chicken Breasts w/ Jalapeno Cheddar Fried Potatoes and Green Beans.

I used Perdue Perfect Portions Boneless and Skinless Chicken Breasts. Preheated the oven on 350 degrees. Took a small cookie sheet and lined it with Reynolds Wrap and sprayed it with Pam w/ Olive Oil Cooking Spray. Seasoned the Chicken with McCormick Grinder Sea Salt and Black Peppercorn and baked it for 23 minutes, turning once midway through the time. With about 6 minutes of baking time left I took them out of the oven and basted them with JB's Fat Boy Sticky Stuff BBQ Sauce, JB's is my favorite sauce. Removed from the oven after the final 6 minutes and they were done. Tender, Moist, and full of flavor!

While my Chicken was baking I prepared one of the side dishes, Jalapeno Cheddar Fried Potatoes. Came across this earlier in the week in the latest issue of Cuisine at Home Magazine. Made some changes from the original recipe. I used Simply Potatoes Steakhouse Seasoned Diced Potatoes, Canola Oil instead of Peanut Oil, Scallions, 1 Jalapeno (sliced), Sea Salt and Ground Pepper, Sargento Reduced Fat Mexican Style Shredded Cheese, and added some diced Red Onion. To prepare it heat oil in cast iron skillet.  Add the Scallions and Jalapeno; saute 1 minute, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese. And we add another keeper Potato Dish! This turned out delicious, just a fantastic combination of ingredients. You got to try this one!

We also had some fresh Green Beans. My Mom purchased them Thursday and she prepared them. I also baked some Corn Muffins for Mom and Dad, I had a slice of Klosterman Wheat Bread. For dessert/snack later tonight I had some Ritz Whole Grain Crackers topped with some Philadelphia Fat Free Cream Cheese.

Jalapeno Cheddar Fried Potatoes

1 -Package Simply Potatoes Steakhouse Seasoned Diced Potatoes
2 T. Canola Oil
1/4 cup chopped Scallions
1 Jalapeno, sliced
1/2 Medium sized Red Onion, diced
Sea Salt & Pepper to taste
1/2 cup Sargento Reduced Fat Mexican Style Shredded Cheese

First, cook potatoes in sauce pan with salted water for 10 minutes; drain. Heat oil in cast iron skillet (this was key in our opinion). Add scallions and jalapeno; saute 1 minute, then season with salt & pepper. Off heat sprinkle with cheese.

Cajun Chicken Breast w/ Smoked Turkey Sausage Red Beans and Rice

Dinner Tonight: Cajun Chicken Breast w/ Smoked Turkey Sausage Red Beans and Rice

Another beautiful day out to be Dec. 28th, 50 degrees and sunny! Got the Hoveround Chair out and went around the street for a bit, good to get outdoors. My Mom is back at full strength and was able to get out herself for a while. For dinner tonight I prepared a Cajun Chicken Breast w/ Smoked Turkey Sausage Red Beans and Rice.

I used Perdue Perfect Portions Boneless, Skinless Chicken Breasts. I seasoned them with Sea Salt and Zatarain's Creole Seasoning, also sprinkled a light coat of flour on them. I pan fried them in Canola Oil about a total of 10 minutes, turning them twice. The Creole Seasoning gave the Chicken a great flavor, spicy but not overpowering hot.

While the Chicken was frying I cut up 1 Butterball Smoked Turkey Sausage and lightly fried it in Extra Virgin Olive Oil. I didn't fully get the Sausage done, I let them finish in the Zatarain's Reduced Sodium Red Beans and Rice. To prepare the Red Beans and Rice I just used a 2 quart saucepan combined 3 1/4 cups water, 1 tablespoon of Blue Bonnet Light Stick Butter and Zatarain's Red Beans and Rice. Stirred thoroughly and brought back to a boil. Kept stirring, reduced the heat, and added the Smoked Turkey Sausage covered and simmer over low heat for about 25 minutes. stirred occasionally to prevent sticking. Removed from the heat, let it stand for 5 minutes. stir and served. I made a bed of it on my plate and topped it with a sprinkle of fresh grated Parmesan Cheese and the Cajun Chicken Breast. Made one fine hearty dish! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Italian Chicken Breast w/ Whole Wheat 3 Cheese Tortellini

Dinner Tonight: Italian Chicken Breast w/ Whole Wheat 3 Cheese Tortellini

A cool and sunny morning quickly turned to hot and humid afternoon. Got out early in the mobility cart and rode around the neighborhood, it was our community yard Sale today. It's amazing how many people show up for yard sales! As my next door neighbor said "I have enough junk of my own without buying someone else's." For dinner tonight I prepared an Italian Chicken Breast w/ Whole Wheat 3 Cheese Tortellini.

I used a Perdue Perfect Portions Italian Style Chicken Breast, which I love using. Their individually wrapped and you can keep them in the fridge or freeze them and just grab one when your ready to use it. I baked a couple of them, one for dinner and one for lunch tomorrow. I preheated the oven to 350 degrees and baked the breasts for about 24 minutes.   Easy to fix and they always turns out perfect as these did!

I then used Buitoni Whole Wheat 3 Cheese Tortellini. It had been awhile since I prepared this, very good Tortellini and always fresh. To prepare it, just boil your water and add a 1/2 tablespoon of Extra Virgin Olive Oil to it. When it comes to a full boil add the Pasta and reduce heat to a gentle boil and boil for 6-8 minutes until done. When done I made of the Pasta and added my Italian Chicken Breast on top. I then added some fresh shredded Parmesan Cheese and 2 tablespoons of Ragu Original Pasta Sauce to top everything off! I also had a slice of buttered Healthy Life Whole Grain Bread. For dessert a Del Monte No Sugar Added Diced Peach Cup.

Baked Italian Chicken Breast Mini Sub Sandwich w/ Baked Fries

Dinner Tonight: Baked Italian Chicken Breast Mini Sub Sandwich w/ Baked Fries

Today went a lot better than yesterday, thank goodness! In fact it was right down uneventful and sometimes that's a good thing. Went to the store early before it got humid out and the rains came back in. I went to Walmart and while there compared a few items from my receipt from when I went to Meijer. Walmart is still cheaper on a lot of items but there's not a huge difference like there is at Kroger where everything is more expensive. On to dinner, I prepared a Baked Italian Chicken Breast Mini Sub Sandwich w/ Baked Fries.

I used the Perdue Italian Chicken Breasts again, which I love using. Their individually wrapped and you can keep them in the fridge or freeze them and just grab one when your ready to use it. I baked a couple of them, one for dinner and one for lunch tomorrow. i preheated the oven to 350 degrees and baked the breasts for about 23 minutes, till the chicken was at 170 degrees internal. As I said I love using these, easy to fix and always turns out perfect as this one did!

I served it on a Aunt Millie's Deli Style Mini Sub. I normally use the Whole Grain version of this but this morning they had none in stock. Still taste great but a bit more calories and carbs. I topped the breast with Ragu Psata Sauce, 1 slice of Oscar Mayer Low Sodium Turkey Bacon (leftover from breakfast), sliced Black Olives, and a slice of Sargento Reduced Fat Provolone Cheese. To go with my Mini Sub I baked some Ore Ida Crinkle Fries. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte Sugarless Diced Peaches.

Baked Chicken Breast Hogie w/ Baked Potato

Dinner Tonight: Baked Chicken Breast Hogie w/ Baked Potato

Well a Happy Father's Day to all the Fathers out there! A very special Happy Father's Day to my Dad, who will be 92 later this year! It's been raining on and off all day so it sort of put a damper on grilling outdoors. So I made dinner indoors preparing a Baked Chicken Breast Hogie w/ a Baked Potato

I used PERDUE PERFECT PORTIONS Boneless, Skinless Chicken Breasts. Their fresh boneless, skinless individually wrapped chicken breast fillets, you can store them in the fridge or freeze them and just grab one from the freezer when your ready. They have a few different kinds, I've tried the Italian Style and the Plain, which is what I'm having for dinner. I baked mine, baked it on 350 degrees for about 20 minutes. It came out perfect! Seasoned it with Sea salt and Ground Black Pepper and served on a Kroger Bakery Sub Bun and topped with a slice of Kroger Brand Private Selection Buffalo Monterey Jack Cheese, Monterey with a hint of Buffalo Heat. I also topped it with a bit of Hellman's Reduced Fat Mayo and Lettuce.

For a side I had a Baked Potato that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn along with I Can't Believe It's Not Butter. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.
