Fried Ocean Perch w/ Mac & Cheese

Dinner Tonight: Fried Ocean Perch w/ Mac & Cheese

We had our first frost of the Fall Season this morning! Went out to get the morning papers and it was a bit nippy, 31 degrees. Beautiful Fall Day out though, mostly sunny and a high in the 50's. After breakfast and the morning workout I cleaned up around the house and later in the day swept up the leaves on the deck and driveway. Not much else going on today. Spent the remainder of the afternoon watching College Football. For dinner tonight I prepared Fried Ocean Perch w/ Mac & Cheese.

I picked up the Ocean Perch at Kroger yesterday. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Virgin Olive, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them for 6 minutes. 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac
Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Fried Ocean Perch w/ Mac and Cheese

Dinner Tonight: Fried Ocean Perch w/ Mac and Cheese

I picked up the Ocean Perch at Jungle Jim's the other day, I had rinsed it and froze it right away. So last night I took it out of the freezer and sat in the fridge overnight to thaw. To prepare it I needed; McCormick Sea Salt and Peppercorn Medley, Zatarain’s Seasoned Fish Fri, and Extra Virgin Olive Oil (for frying).

Baked Parmesan Perch w/ Jalapeno Cheese Fried Potatoes

Dinner Tonight: Baked Parmesan Perch w/ Jalapeno Cheese Fried Potatoes

Our streak of beautiful days is still going, sunny and a high near 70. But rain on the way possibly by tomorrow. Had to have our ice maker in the fridge replaced today. Then did some house cleaning and on to the outside. I bought a miniature Blue Berry Bush and replanted it into a bigger pot, it's been doing okay I've only had it a few days. I also bought a few Herb plants that I replanted in bigger pots. Had the cart out for a while enjoying the day. For dinner tonight I prepared Baked Parmesan Perch w/ Jalapeno Cheese Fried Potatoes.

While at Jungle Jim's International Market yesterday I had picked up some Ocean Perch fillets and
wasted no time in using them. I'm trying a new recipe with them, Baked Parmesan Perch. I was looking for Perch recipes and came across this one on the Taste of Home website, a site I have found many a recipe on. it's an easily prepared and delicious recipe! I'll need the following to prepare it; 2 tablespoons dry Bread Crumbs (Progresso Italian Style Bread Crumbs), 1 tablespoon grated Parmesan Cheese (Kraft Reduced Fat Parmesan Grated Cheese), 1 tablespoon Paprika (Hungarian Paprika), 1 teaspoon dried Basil, 1 pound Perch or Fish fillets of your choice, and 1 tablespoon melted Butter (Blue Bonnet Light Butter). To prepare it; In a shallow bowl, combine the Bread Crumbs, Parmesan Cheese, Paprika and Basil. Brush Fish fillets with Butter, then dip into the Crumb Mixture. Place in a greased baking pan. Bake, uncovered, at 400° for 12 minutes or until fish flakes easily with a fork. The original recipe calls for a baking temperature of 500° but I opted for 400° instead and an extra 2 minutes of baking time. I just think Fish bakes up better at 400°. The Perch came out delicious! Fantastic flavor from all the ingredients and came out very moist. I have another "Keeper Recipe".

Then for a side dish I prepared Jalapeno Cheese Fried Potatoes. I had come across the Jalapeno
Cheese Fried Potatoes some time back in an issue of Cuisine at Home Magazine. Made some changes from the original recipe. I used Simply Steakhouse Seasoned Diced Potatoes, Canola Oil instead of Peanut Oil, Scallions, 1 Jalapeno (sliced), Sea Salt and Ground Pepper, Sargento Reduced Fat Mexican Style Shredded Cheese, and I also added some diced Red Onion. To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese. And presto another keeper Potato Dish! This has turned out to be one of my favorite Potato Side Dishes. Everything just comes together to make this dish the perfect Potato Dish! Quite a meal tonight. For dessert later a Jello No sugar Added Double Chocolate Pudding topped with Cool Whip Free.

Fried Yellow Lake Perch w/ Whole Grain Brown Rice and Green Beans

Dinner Tonight: Fried Yellow Lake Perch w/ Whole Grain Brown Rice and Green Beans

About three months ago I seen my family doctor and my sugar was up a bit so he wanted me to watch what I eat and try to lose a few pounds. Losing weight is hard enough but if your working with just a right leg it's a bit tougher. Being an left leg amputee I just get the normal exercise as a normal person. I'm a notorious snacker, nothing large but a pinch here and a bite there and it all adds up. So I've been snacking on Apples and Grapes and another change I made was cutting back on Breads, and I am Bread lover!! I take that after my Uncle who was huge Bread lover. Anyway I've started using Joseph's Pita Bread with Whole Grain and Flax Seed in place of Bread where I can. The adjustments seem to be working I've lost almost 15 pounds, I think the Doc will be pleased next week when I go for my check-up! For dinner tonight Fried Yellow Lake Perch Fillets w/ Whole Grain Brown Rice and Green Beans.

I picked up the Yellow Lake Perch at Meijer yesterday, on sale. I rinsed the fillets in cold water and patted dry with a paper towel. Seasoned them with a bit of Sea Salt and rolled them in Zatarain's Lemon Pepper Breading Mix. Fried them in Canola Oil about 3 minutes per side.Came out a perfect golden brown and delicious! As usual I live on Fish!

For side dishes I microwaved a bag of Uncle Ben's Whole Grain Brown Rice, almost always my brand of preferred Rice! I also heated up a can of Del Monte Green Beans. For dessert later, all fruit tonight a Dole Mini Banana and a couple of Apple Slices.

Fried Lake Perch w/ Rice A Roni and Sliced Carrots

Dinner Tonight: Fried Lake Perch w/ Rice A Roni and Sliced Carrots

Well were back to a cloudy and chilly day outside again. They say just for a day or so I just hope their right !
Busy all day just doing little things in the house and running errands. I had no clue on what to have for dinner right up to the time it was time to prepare it. I ended up preparing a Fried Lake Perch w/ Rice A Roni and Sliced Carrots.

The Lake Perch was from the Kroger Seafood Department that I had purchased yesterday. I seasoned them with Sea Salt and Ground Black Pepper and rolled them in Progresso Italian Style Bread Crumbs. I then skillet fried them in Canola Oil to a golden brown. Perch is just good eating! It's good baked but in my opinion you just can't beat golden brown fried fish.

For side dishes to go with the Perch I had Rice A Roni (Chicken Flavored), a small can of Sliced Carrots, and Healthy Life Whole Grain Bread. The Rice A Roni was in a microwavable cup. Just heat for 3 1/2 minutes and it's ready. For dessert/snack later tonight, while watching one of my favorite shows "Grimm", a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Rice A Roni Chicken

A family classic! Our Rice-A-Roni® Chicken flavor blends rice and vermicelli with chicken broth, onions, parsley, garlic and other natural flavors to create a delicious side dish that will delight your whole family. It's the perfect complement to your favorite chicken recipes.
